RUM BALLS
I wanted a good rum ball with a lot of kick, so I sat down and came up with this recipe. I didn't realize how good these were until one year I didn't make them for work. I just about got lynched! Needless to say, I've made them every year since (about 20 years). These are best if you use Meyers Original Dark Rum® chilled, and Nabisco® 'Nilla wafer cookies. They are at their peak if you make them 2 days in advance. Remove from fridge 30 minutes before serving.

Steps:
- Place vanilla cookies in a food processor and process into fine crumbs.
- Heat chocolate chips and corn syrup together in a saucepan over low heat. Cook, stirring often, until chocolate is melted and smooth, about 5 minutes. Remove from heat and stir in rum and confectioners' sugar until smooth. Fold in cookie crumbs; dough will be sticky.
- Place saucepan in the refrigerator until dough is firm and easy to roll, about 15 minutes. Cover 2 plates with waxed paper; dust with confectioners' sugar.
- Roll dough into 1-inch balls and place on the prepared plates. Dust rum balls with confectioners' sugar. Refrigerate until firm, about 30 minutes.
- Remove rum balls from refrigerator and transfer to a resealable bag, including the extra confectioners' sugar. Seal the bag and shake to coat the rum balls completely with confectioners' sugar.

GRANDMA'S RUM BALLS
Steps:
- Mix vanilla wafers and cocoa; mix well. Add rum and nuts and mix well.
- Roll into balls the size of walnuts, and then roll in confectioners' sugar to coat.
- Refrigerate or freeze (they freeze well) keep in airtight container.

GRANDMA'S SAUERKRAUT BALLS
This is a family recipe that's been made for family gatherings since I was a kid. They're delicious, and usually go in the first five minutes of a party, causing dinner to be delayed because everyone is full. The great thing is that they can be made ahead of time and frozen, then reheated as needed.

Steps:
- Heat a large saucepan over medium-high heat. Cook and sausage and onion in the hot skillet until sausage is browned and crumbly, 8 to 10 minutes. Drain and discard grease.
- Transfer to a large bowl and add sauerkraut, cream cheese, parsley, mustard, garlic powder, and pepper. Mix until well combined. Cover and place in the refrigerator to chill for about 1 hour.
- Place flour in a shallow dish. Whisk milk and eggs together in a separate dish. Place bread crumbs in a third dish.
- Remove sauerkraut and sausage mixture from the refrigerator and roll into 3/4 inch balls. Roll balls in flour, then in milk-egg mixture, then in bread crumbs.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Deep fry in batches until golden brown, about 3 minutes per batch. Drain on paper towels.

SCRUMPTIOUS RUM BALLS
These rum balls are the best thing since sliced bread. In this instance when people say that Grandma's recipes are the best, they're right.

Steps:
- Use a blender to grind up the packet of milk arrowroot biscuits. Pour crumbs into a mixing bowl when blended.
- Cut the glace cherries into quarters and add to mixing bowl.
- Add chocolate chips, chopped nuts, cocoa powder and 3/4 cup of coconut to mixing bowl. Mix everything together.
- Add the condensed milk and rum essence. Mix everything together really well. If need be get your hands into it.
- When mixed together, wet hands slightly. Depending on how big you want your rum balls, take mixture and roll into balls. Rub the balls in the extra cup of coconut until completely covered.
- place balls into an airtight container and put into fridge when complete. Rum balls can be frozen and will last a very long time.
- Enjoy.
