My husband made this up after we couldn't find a good enough one! This is delicious as a batter for anything from onions to fish.

BEER BATTERED CHICKEN

- Rinse chicken, and slice into 1 inch strips. In a medium bowl, stir together 1 cup flour, and baking powder. Mix in the eggs and beer.
- Heat oil in a deep heavy skillet to 375 degrees F (190 degrees C).
- Place remaining 1/2 cup flour in a small bowl. Coat chicken strips in flour, then dip floured strips into the batter. Fry a few at a time in hot oil, turning once, until coating is golden brown on both sides. Remove, and keep warm until serving.

As long as there is a beer in the house this is a quick and easy recipe without any fancy ingredients. You can find all the ingredients in a standard kitchen! This batter is great for deep frying white fish. Fresh lake perch and walleye are especially tasty in this beer batter.

BEER BATTER FOR DEEP FRIED VEGGIES 'N' THINGS
I developed this recipe in 1982 and published it in my cookbook in 1996. It has been a favorite with many who have tried it.

Steps:
- In a deep fryer, add oil as per directions for your deep fryer and heat to 375°F.
- In a large mixing bowl, add onion soup mix, flour, baking powder, eggs and mustard and whisk until smooth and well blended.
- Add beer and mix with a spoon to blend.
- Let batter rest for about 10 minutes before using.
- Prepare vegetables, rinse and pat dry with paper towels.
- Dip veggies into batter, drop into hot oil in batches and deep fry until golden brown, turning at least once.
- When done, remove and place on paper towelling to absorb excess oil.
- Serve hot with your favorite dipping sauce or Uncle Bill's Garden Dip.

Steps:
- Mix flour, salt, and baking powder in a bowl using a fork.
- Beat beer, egg and oil together in a separate bowl.
- Stir into flour mixture until well blended.
- Batter should be pretty smooth and moderately thick.
- Dip fish, shrimp, or onion slices in coating and deep-fry in hot oil that has been heated to 350 degrees, until it becomes golden.
- Drain, and serve while hot and crispy.
- This recipe also works well with chicken tenders and vegetable pieces; whatever you like to coat with beer batter.

My Grandmother was the wife of a chicken farmer. She was famous for her fried chicken....and her onion rings. I wish she had passed on more recipes. She was a wonderful cook!

- Combine Beer, flour, and salt. Batter will be stiff
- Beat egg whites to stiff peaks. Add a little egg white to the flour mix to thin - then gently fold in the rest of the beaten egg whites.
- Can be used for shrimp, fish and veggies (dredge in flour first then dip in batter) and Fry. Batter can be kept in fridge for 2-3 days
