We loved the white BBQ sauce we sampled on vacations, but it's not available here, so this is our adaptation of it.

ALABAMA WHITE BBQ SAUCE
If you've lived in the South for more than a minute, you know that BBQ-and the sauce that's served with it-is a matter of regional pride. Texans love their brisket, Kentucky claims chipped mutton, and in North Carolina they'll take their pork with dip. Next time you're talking 'cue in Alabama memorize these three little words: Alabama white BBQ sauce.Bob Gibson of Decatur, Alabama is credited with creating this mayonnaise-based sauce all the way back in 1925. "We marinate with it, use it to baste, plus we use it as an all-purpose table sauce," says Chris Lilly, a world barbecue champion and current pitmaster at Big Bob Gibson Bar-B-Q. "It's the only sauce we know here, because it's what everyone grows up on." Most folks like to serve Alabama white sauce with smoked or grilled chicken, but this versatile condiment can jazz up just about any piece of meat. WHITE BBQ SAUCE
A friend of my mom's from Alabama gave her this recipe. It will keep in the refrigerator for several weeks. Remember to keep any sauce you use for brushing or basting meat separate from the rest, for food safety reasons!

- Whisk 1 cup mayonnaise, 2 tablespoons each cider vinegar and jarred horseradish, 2 teaspoons lemon juice, 1 teaspoon each spicy mustard and sugar and 1/2 teaspoon pepper. Season with salt.
BIG BOB GIBSON'S ALABAMA WHITE BBQ SAUCE
Steps:
- Place all ingredients in a very large blender or food processor. (It may be necessary to do this in 2 batches; just add 1/2 of each ingredient and then repeat.) Blend for 1 minute, or until thoroughly combined and mixture is smooth. Pour sauce into a large bowl.
- Use when grilling chicken; brush lightly over the chicken during the last few minutes of grilling. This sauce is also great for dipping; set some sauce aside for passing at the table.

ALABAMA WHITE BBQ SAUCE
My boys use to spend their summers with their grandmother in the South. She would treat them to a meal at a restaurant that served Alabama white sauce over chicken and my family thought it was wonderful. I started making it at home and it always brings back memories of those summers in Tuscaloosa.
