PEANUT BUTTER NOODLES



Peanut Butter Noodles image

This is kid friendly with an Asian twist. Can also be made with spaghetti pasta.

Number Of Ingredients 10

½ cup chicken broth
1 ½ tablespoons minced fresh ginger root
3 tablespoons soy sauce
3 tablespoons peanut butter
1 ½ tablespoons honey
2 teaspoons hot chile paste
3 cloves garlic, minced
8 ounces Udon noodles
¼ cup chopped green onions
¼ cup chopped peanuts

Steps:

  • Bring a large pot of water to a boil. Add noodles and cook until tender according to package directions. Drain.
  • Meanwhile, combine chicken broth, ginger, soy sauce, peanut butter, honey, chili paste, and garlic in a small saucepan. Cook over medium heat until peanut butter melts and is heated through. Add noodles, and toss to coat. Garnish with green onions and peanuts.

A really easy recipe that tastes equally good served hot, warm, or cold. Good for a packed lunch. Fettuccini or spaghetti both work great!

8 ounces spaghetti
1 bunch green onions, sliced (white parts only)
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
⅓ cup peanut butter
¼ cup soy sauce
¼ cup hot water
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon crushed red pepper flakes

Steps:

  • Cook pasta in a large pot of boiling water until done. Drain.
  • Meanwhile, combine oil and onions in a small skillet. Saute over low heat until tender. Add ginger; cook and stir for 1 to 2 minutes. Mix in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes. Remove from heat.
  • Toss noodles with sauce, and serve.

I really enjoy eating pasta and peanut butter separately. This combo really grabs me. I do use quinoa noodles and tamari sauce as they are gluten-free.

12 ounces wide egg noodles (or any shape pasta)
1 teaspoon olive oil
1/3 cup onion, chopped
2 garlic cloves, minced
1/2 cup chicken broth
1/3 cup peanut butter
2 tablespoons soy sauce
2 tablespoons cider vinegar
1 tablespoon lemon juice
1 tablespoon brown sugar or 1 tablespoon honey
1 teaspoon ginger, powdered
1 cup chicken, precooked, diced
2 green onions, sliced
1/2 cup peanuts, chopped, as garnish

Steps:

  • Cook pasta according to package directions.
  • Heat oil,in a sauce pan, add onion, garlic and cook 2 minutes on medium.
  • Add chicken broth, peanut butter, soy sauce (or tamari) vinegar, lemon juice, sugar (or brown sugar or honey, one or the other) and ginger. Turn heat to low, simmering 5 minutes, stirring often.
  • Put chicken in a large serving bowl. Add chopped green onions.
  • Drain Cooked pasta,well. Add to serving bowl. Pour peanut butter sauce atop, combine,
