REBECCA'S TROPICAL GRANOLA GRABBERS

Made these as an alternative to chocolate chip cookies and the kids loved them! You can mix and match the nuts and dried fruits you prefer. Store tightly covered.

¾ cup shredded coconut
3 cups granola
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup dried banana chips
½ cup coarsely chopped macadamia nuts
½ cup coarsely chopped dried pineapple
½ cup coarsely chopped dried mango
1 ¾ sticks butter
¾ cup firmly packed brown sugar
½ cup white sugar
2 eggs
½ teaspoon coconut extract
½ teaspoon banana extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper; spread coconut on top.
  • Blend granola in a food processor until finely ground. Set aside in a bowl.
  • Toast coconut in the preheated oven until lightly browned, about 5 minutes. Let cool. Transfer to the food processor and pulse until finely chopped. Mix into granola. Add flour, baking soda, and salt; whisk until mixed evenly.
  • Blend banana chips in the food processor until finely chopped. Transfer to a bowl; add macadamia nuts, dried pineapple, and dried mango. Stir until mixed evenly.
  • Place butter, brown sugar, and white sugar in a large bowl. Beat with an electric mixer on medium speed until creamy. Add eggs, coconut extract, and banana extract; beat well. Add granola mixture and mix well. Fold in banana chip mixture.
  • Drop rounded teaspoonfuls of the cookie dough onto ungreased baking sheets.
  • Bake in the preheated oven until golden brown, 8 to 10 minutes. Cool on the baking sheets for a few minutes before removing to a wire rack. Let cool completely.

5 cups pecan halves
3 cups unsweetened coconut flakes
1 cup flax seeds
2 cups honey
2 cups white sugar
1 cup coconut oil
1 tablespoon sea salt
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a 13x17-inch baking dish with parchment paper.
  • Combine oats, pecan halves, coconut flakes, and flax seeds in the prepared baking dish; mix well.
  • Combine honey, white sugar, coconut oil, and salt in a large microwave-safe bowl. Microwave on high until mixture starts to bubble, 2 to 3 minutes. Whisk until honey and coconut oil are well-combined. Stir in vanilla extract.
  • Pour honey mixture over oat mixture in the baking dish; stir until evenly distributed.
  • Bake in the preheated oven, stirring every 15 minutes, until oats are a deep golden brown, about 1 hour 15 minutes. Allow to cool, about 1 hour. Break oat clusters apart before serving.

1/2 cup packed light-brown sugar
1/2 cup honey
1 tablespoon pure vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon fine salt
3 cups rolled oats
2 cups coarsely chopped pecans
1 cup sweetened shredded coconut
1 cup mixed dried fruit, such as cranberries or raisins
1 cup chocolate chips (optional)

Steps:

  • Preheat oven to 300 degrees, with racks in upper and lower thirds. Lightly coat two rimmed baking sheets with cooking spray. In a large bowl, combine oil, sugar, honey, vanilla extract, cinnamon, and salt. Add oats and pecans; stir to combine. Divide mixture between sheets. Bake 15 minutes, stirring occasionally. 2 tablespoons butter
3 cups low-fat granola
1 cup georgia pecans, chopped
4 ounces semisweet chocolate, melted (optional)

Steps:

  • Melt butter in medium saucepan over low heat. Add marshmallows, stirring occasionally until melted. Remove from heat and stir in granola and pecans, mixing well.
  • Transfer mixture to lightly buttered 9x5 loaf pan. Press firmly and evenly into pan and set aside to cool.
  • Invert pan to remove block of granola. Cut lengthwisen half, then crosswise into 8 bars. Serve as is, or insert extra long toothpicks as handles and dip in chocolate.
  • Chocolate Dip: Use 4oz semisweet chocolate, melted, to cover all 16 pieces.
