GRANOLA BONBONS
Very Good, Easy, No Cook/Bake Candy Recipe. Found it in a 20 yr old Betty Crocker booklet and it is not listed on their web site. It is very sweet and rich, just one curbs the sweet tooth! Plus it doesn't seem like they are pure junk food with the granola in them. You really don't taste or see the granola if mixed really well, it is just a good peanut butter candy. This is 1/2 the original recipe.

Steps:
- Mix first 4 ingredients very well, until everything is fully coated with the peanut butter. Shape into 1 inch balls ( 1/2 inch would be great too!, 1 inch might be too large for some people or little kids ).
- Refrigerate for about 1 hr 15 minutes or until firm.
- Melt the choc chips, I melted them in a glass corning ware with lid on in the microwave. Added about 2 Tbsp of water to them to make it thinner while mixing several times. Took about 3 minutes.
- Dip the granola balls in choc then roll in nuts. Place on wax paper in loosely covered container and refrigerate for at least an hour.

Steps:
- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
- Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
- Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

GRANOLA BITES
These chewy-crunchy, salty-sweet breakfast balls are great for eating on the go because they don't crumble and leave a mess. They take minutes to blend and a few more to roll, but if you make them a friends-and-family cooking project, the process can go even faster. Feel free to experiment here. You can swap out the almonds for cashews, the cherries for other dried fruits, and the sunflower seeds for shelled pumpkin seeds. Just keep the dates and make sure they're Medjool, which are softer and more thin-skinned than other varieties. The dates are the glue that hold the other ingredients together.

Steps:
- Line a work surface or baking sheet with parchment or wax paper.
- Pulse dates, almonds, maple syrup, vanilla and salt in a food processor until the mixture forms big sticky clumps. You want chunks of nuts left. Pulse in cherries, oats and sunflower seeds, scraping the bowl occasionally, until the mixture forms a shaggy mass around the blade.
- Put the coconut in a shallow dish. Use a 1-ounce (1 1/2-tablespoon) cookie scoop or a heaping tablespoon to scoop the mixture into about 24 mounds and place on the parchment paper. Roll the scoops into balls.
- Roll each ball in the coconut to coat completely, then transfer to an airtight container. Sprinkle any leftover coconut over the balls. Refrigerate until ready to eat.
