1 stick unsalted butter, softened, plus more for the baking dish
4 cups blackberries
4 cups blueberries
1/2 cup maple syrup
1/3 cup instant tapioca
1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1/3 cup packed light brown sugar
1/2 teaspoon freshly grated nutmeg
Pinch of salt
2/3 cup blanched hazelnuts
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9-inch-square baking dish.
  • Toss the blackberries and blueberries in a large bowl with the maple syrup and tapioca. Transfer to the prepared baking dish.
  • Combine the flour, granulated sugar, brown sugar, nutmeg and salt in a food processor and pulse to combine. Add the hazelnuts, butter and vanilla; pulse until the nuts are roughly chopped. Sprinkle the topping over the berries, pinching it with your fingers to make small clumps.
  • Bake until the filling is bubbling and the topping is golden brown, about 1 hour. Let cool slightly before serving.

1/2 cup (1 stick) unsalted butter, room temperature, cut into 1" pieces, plus 6 Tbsp. unsalted butter, melted, plus more for pan
2 1/2 cups all-purpose flour, divided, plus more for pan
1 3/4 cups skin-on hazelnuts
3 Tbsp. dark brown sugar
1 1/2 cups plus 3 Tbsp. granulated sugar
1 tsp. kosher salt, divided
1 tsp. finely grated lemon zest
2 large eggs
1 Tbsp. vanilla extract
2 1/4 tsp. baking powder
1 cup plain, full-fat yogurt (not Greek)
1 1/2 lb. seedless grapes, such as Thomcord or Red Globe (or a mix), divided

Steps:

  • Preheat oven to 350°F. Butter a 13x9" pan. Lightly dust pan with flour, tapping out excess. Toast hazelnuts on a rimmed baking sheet, tossing once, until golden brown, 10-12 minutes. Bundle nuts in a kitchen towel and rub vigorously to remove skins. Spread out and let cool.
  • Transfer 1 cup hazelnuts to a medium bowl (reserve remaining hazelnuts for the cake). Add brown sugar, 1/2 cup flour, 3 Tbsp. granulated sugar, and 1/4 tsp. salt and mix to combine. Using a fork, mix in 6 Tbsp. melted butter until well combined; set streusel aside.
  • Pulse reserved 3/4 cup hazelnuts and remaining 1 1/2 cups granulated sugar in a food processor until nuts are finely ground. Add lemon zest and remaining 1/2 cup room-temperature butter and pulse until combined, about 1 minute. Add eggs one at a time, scraping down sides of bowl as necessary. Add vanilla and pulse just to combine.
  • Whisk baking powder and remaining 2 cups flour and 3/4 tsp. salt in a medium bowl. Pulse in half of dry ingredients to combine, then pulse in yogurt. Pulse in remaining dry ingredients until just combined.
  • Transfer batter to prepared pan; smooth top. Sprinkle with three-quarters of the grapes. Top with streusel, then sprinkle with remaining grapes. Bake cake on a rimmed baking sheet until a tester inserted into the center comes out with moist crumbs attached, 50-60 minutes. Transfer cake to a wire rack and let cool.

25g butter
3 pears , cored and halved
500g rhubarb , cut into chunks
2 tbsp soft light brown sugar
½ tsp ground cinnamon
¼ tsp ground cloves
vanilla ice cream or double cream , to serve
50g roasted hazelnut
50g cold butter , diced
85g self-raising flour
1 tsp ground cinnamon
50g demerara sugar

Steps:

  • Melt the butter in a pan, then add the pears, rhubarb, sugar, cinnamon and cloves, and cook over a low heat for 10-12 mins or until just tender. Divide the rhubarb between 4 ovenproof dishes (or use 1 large dish) and set aside.
  • Heat oven to 200C/180C fan/gas 6. To make the crumble topping, tip all the ingredients into a food processor and pulse to crumbs. Sprinkle the topping over the fruit filling, then bake for 30 mins or until golden brown on top. Serve with vanilla ice cream or double cream.

1/6 cup Balsamic vinegar
1/4 cup mayonnaise
1/4 cup sour cream
1 tsp. Dijon mustard
1/4 tsp. freshly ground pepper
3 cups red seedless California grapes
1/4 cup green onions, chopped
1/4 cup fresh basil, chopped
1/2 cup hazelnuts, toasted, coarsely chopped
2 cups baby spinach
Salt as needed

Steps:

  • Cook tortellini in salted water to al dente state; drain well. Toss cooked tortellini with vinegar; cool to room temperature.
  • Combine mayonnaise, sour cream, mustard and pepper; mix well. Combine all ingredients and mix well.
  • Let stand 1 hour in refrigerator. Toss lightly with spinach leaves and serve.

2 1/2 lbs mixed soft summer fruit (raspberries, loganberries, strawberries, raspberries, blackberries, blueberries, redcurrants, grapes)
honey or brown sugar
3 ounces toasted hazelnuts
3 ounces whole wheat breadcrumbs

Steps:

  • Put the fruits in a pan or microwave dish with about 1 inch water in the bottom and cook gently for 10- 15 minutes (4- 6 minutes in microwave), or until the fruits are soft without being totally mushy.
  • Sweeten to taste with honey or brown sugar (Saxons would have used honey); how much you need will depend on what fruits you have used.
  • Drain the excess juice and save to serve with the pudding.
  • Chop the hazelnuts in a processor or liquidiser until they are almost (but not quite) as fine as the breadcrumbs, and then mix the two together.
  • Spoon the fruit into an ovenproof dish and cover with a thick layer of hazelnuts and crumbs.
  • Bake in a moderate oven 350F for 20 - 30 minutes or until the top is slightly crunchy and browned.
  • Serve with lots of cream or plain yogurt and the warmed fruit juices.

2 cups cauliflower florets, sliced
1 1/2 cups celery root, peeled and sliced
3 tablespoons olive oil

1 medium onion, diced
3 tablespoons tomato paste
2 cups chicken broth
1/2 cup mild cheddar cheese, shredded
2/3 cup quick oats

Steps:

  • Preheat oven to 400 F,.
  • Meanwhile toss sweet potatoes, carrots, cauliflower and celery root with 1 tbsp olive oil, thyme,salt and pepper.
  • Place on a large parchment paper-lined baking sheet.
  • Roast until vegetables are tender and golden, about 25 minutes.
  • Heat 1 tsp oil in a saucepan over medium heat.
  • Add onions and cook until softened, about 3 minutes.
  • Stir in tomato paste and cook, stirring for one minute.

  • Remove from heat and whisk in cheese until it melts.

I tweaked the Magnolia Bakery's recipe for Apple Tart with Hazelnut Brown Sugar topping, to come up with this simple and quick crumble. It is absolutely delicious. I received so many complements that I'm thinking of making it my signature dessert! =) Notes: I use either a 9 or 10 inch round pie dish for this recipe, but you can also use individual ramekins - just remember to shorten the baking time as ramekins are smaller and won't take as long to cook in the oven. Also note that measuring cups are required for this recipe!

5 -6 small tart green apples, cored, peeled & thinly sliced (ie. equals approx 4 cups of thinly sliced apples)
1/3 cup caster sugar
1 tablespoon plain white flour
1 teaspoon vanilla extract
3/4 cup plain white flour
1/2 cup firmly packed brown sugar (I prefer dark brown sugar but light is fine too)
6 tablespoons unsalted butter, softened and cut into small pieces
1/2 cup coarsely chopped hazelnuts (I put them in a freezer bag and smash them with a rolling pin)

Steps:

  • Pre heat your oven to 320 degrees fahrenheit or 160 degrees celsius.
  • First, make the filling by placing all the ingredients in a large bowl and tossing gently with your fingers until the apple slices are evenly coated. Set aside for 10 to 15 minutes.
  • Now make the topping by mixing the flour and brown sugar in a bowl. Add in the butter and rub in with your fingers until the mixture resembles coarse breadcrumbs.
  • Next, add the hazelnuts to the topping mixture and, using your hands, toss until all the ingredients are well combined. Set aside.
  • Very lightly grease the pie dish with butter. (I like to use a nice glass baking dish). Transfer the apple mixture evenly into the dish. Using your fingers, sprinkle the brown sugar topping evenly over the apples.
  • Place the dish on a baking sheet and bake for approximately 45 minutes, until the top is lightly golden. When ready, take it out of the oven and let it cool for about an hour.
