A tuna salad without actual tuna may seem like a hard sell, and I have to admit that it took me a while to even experiment with this recipe, but once I got on board, it became one of my favourites! The secret ingredient is dulse - a superior source of minerals and trace elements we need daily for optimal health.

2 cups raw sunflower seeds (soaked in water for 2 hours)
3 to 4 celery ribs (diced)
2 scallions (diced)
2 tbsp dulse flakes
¼ cup fresh dill
⅔ cup hemp hearts
¼ cup coconut water or purified water
3 cloves garlic (peeled)
½ cup fresh lemon juice
1 tsp sea salt
2 tbsp stone-ground mustard

Steps:

  • In a food processor, puree the sunflower seeds until they are a slightly chunky pâté. Transfer to a bowl.
  • Mix in the celery, scallions, dulse flakes and dill. Stir well and set aside.
  • Prepare the dressing: In a blender, combine all the dressing ingredients and blend until smooth. Pour the dressing over salad, toss to mix well and serve.

Made with chickpeas (garbanzo beans), this is a wonderful sandwich filling, especially for vegetarians who miss tuna salad. I liked it more oniony so I added a little extra minced onion, but it's still wonderful without it. I enjoyed this the most stuffed in pita bread with slices of ripe plum tomatoes, and also would serve it often on crackers as a snack or appetizer.

2 tablespoons mayonnaise
2 teaspoons spicy brown mustard
1 tablespoon sweet pickle relish
2 green onions, finely chopped
salt and pepper
1 tablespoon finely minced yellow onion (optional)

Steps:

  • In a medium bowl, combine mashed chickpeas, mayonnaise, mustard, relish, chopped green onions, salt, pepper, and yellow onion (if desired).
  • Mix well.

2 stalks celery, diced
1 large dill pickle, diced
1 -2 tablespoon dulse flakes
1 teaspoon dried dill
2 tablespoons mayonnaise

Steps:

  • Drain the garbanzo (chickpeas). Put the beans in a bowl and mash with a potato masher until soft paste-like consistency. Add all other ingredients and mix well.
  • Optional : could add tabasco sauce, dried chili flake or black pepper if you like spicier 'tuna' salad.

2 cups vegetable broth
1 (8 ounce) package tempeh
2 tablespoons soy sauce
2 tablespoons lemon juice
1 clove garlic, minced
1 tablespoon seaweed flakes or granules
½ cup minced red onion
1 cup chopped celery
1 cup chopped dill pickles
¼ cup soy mayonnaise

Steps:

  • Heat the broth to a light boil over medium-high heat. Add the tempeh to the broth, and simmer for 25 minutes. Drain and let cool to room temperature for 15 minutes. Once cooled, grate tempeh into a large bowl.
  • In a small bowl, whisk together the soy sauce, lemon juice, garlic, and seaweed flakes. Pour the seaweed mixture in with the grated tempeh and stir until well mixed. Mix in the red onion, celery, and dill pickles. Toss with the mayonnaise. This salad can be served immediately, but is best when chilled for several hours to allow the flavors to blend.
