GRAPEFRUIT MIMOSA WITH ROSEMARY
This delicious mimosa is created using tart grapefruit flavor, a bit of woodsy rosemary simple syrup, and champagne. Our favorite type is Prosecco.

Steps:
- Heat water and sugar in a small saucepan over medium heat until the sugar dissolves - about 5 minutes. Do NOT let the mixture boil.
- Once sugar is dissolved, pour mix into a heat safe container and put rosemary sprigs in. Let steep for one hour.
- Store simple syrup in fridge for up to 10 days.
- Add 1 Tbsp rosemary simple syrup and 1/2 cup grapefruit juice to each glass. Top off with champagne in a one-to-one ratio.
- Garnish with rosemary and enjoy!

- Slice the grapefruits in half, cut a slice from one half, cut it into quarters, and set aside until ready to serve for garnish.
- Juice the grapefruits into a bowl through a mesh strainer to get rid of any seeds. Briefly rub the string of rosemary between your hands to release its oils and aroma and add it to the grapefruit juice. Set aside for 5-10 minutes.
- Prepare 2 flute glasses, fill with the grapefruit juice about halfway up. Finish with the prosecco, garnish with some rosemary and grapefruit (cut about 1 cm into the flesh to slide it on the rim of the glass). Enjoy immediately.

- Make the Mimosa: Combine grapefruit juice, simple syrup, and bitters in a Champagne glass, and stir gently. Top with sparkling wine. Garnish with rosemary sprig and grapefruit wedge, and serve immediately.
