GRASSHOPPER PIE

Steps:
- Throw the cookies and melted butter into a food processor and pulverize. (Or, if you have some aggression or energy to expend, you can crush them in a large resealable plastic bag using a rolling pin!) Set a small handful of crumbs aside to sprinkle over the finished pie. Pour the rest into a pie pan and press into the bottom and up the sides of the pan. Set aside.
- Heat the marshmallow and half-and-half in a saucepan over low heat, stirring constantly. As soon as it's all melted and combined, place the saucepan in a bowl of ice to cool down quickly. (Stirring occasionally will hasten this process.) Once cool, add the creme de menthe and creme de cacao. Taste and add more creme de menthe if needed. Add the green food coloring if using.
- In a mixing bowl, beat the cream until stiff. Pour the cold marshmallow mixture into the whipped cream and fold together gently. Pour the filling into the chocolate crust. Sprinkle over the reserved cookie crumbs.
- Freeze until very firm, about 2 hours. Remove from the freezer 10 minutes or so before you want to slice and serve.
GRASS ROOTS FUDGE PIE
This is a more fudge-y version of a chocolate pie! It has been passed down in my family forever and I have no idea where it came from. Even those who do not like chocolate pie, love this pie. It is foolproof and was the very first thing I ever baked. Always requested on family birthdays and holidays! I serve it with a generous dollop of fresh whipped cream! Also, sometimes I use a pre-made pie crust and sometimes I make my own! NOTE: Yes, this has a lot of calories and fat, you can use margarine instead of butter. Other than that, I would not mess with it too much! I tried it using Splenda and it was less than desirable. UPDATE: 09/16/2009 Per review: I NEVER prebake my pie-crust and it comes out perfectly -- neither have the generations of women who have made this before me. That might be a personal preference, but the recipe is intended to be made with an unbaked pie shell.

- Preheat your oven to 350°F.
- Dust pie crust lightly on both sides with the flour, so that it feels kind of dusty.
- Put pie crust in a pie plate and crimp edges (optional).
- Combine the first five ingredients and whisk together.
- Some cocoa lumps are normal.
- It will be VERY runny and look like chocolate juice.
- Pour mixture into prepared pie plate.
- Bake for 35-45 minutes in preheated oven.
- NOTE: At the end of thirty minutes if it is still liquid in the middle put the pie back in the oven in 3 minute increments. It should be a LITTLE jiggly, NOT LIQUIDY (just a slight wobble, I mean very slight) like jello, in the middle when it is done. Let it cool and it will set up perfectly! Cook time will vary with your oven. My mom's oven takes 30 minutes exactly. Mine takes closer to 45.

TRICIA'S FANTASTIC FUDGE PIE

- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl combine eggs, melted butter or margarine, and sugar. Stir in vanilla extract. Set mixture aside.
- In a separate bowl mix together flour and cocoa powder. Pour egg mixture into flour mixture and stir until thoroughly combined. Fold in chocolate chips if desired. Pour into pastry shell.
- Bake in preheated oven for 30 to 40 minutes. Serve hot.

- Unfold piecrust; fit into 9 inch pie pan. Prebake crust according to package directions. Remove from oven.
- Lower the oven temperature to 325 degrees F (165 degrees C).
- Beat together sugar, flour, cocoa powder, butter or margarine, eggs and vanilla in a medium-size bowl. Spoon into pie shell.
- Bake for 25 to 30 minutes or until set. Allow to cool to room temperature. Serve with whipped topping or a scoop of vanilla ice cream.

THE GREENEST GRASS ON THE BLOCK (LAWN SPRAY)
With spring just around the corner, I thought I would post this. A good friend gave this "recipe" to me. It works wonders for keeping your lawn nice and green. ADD 4 ounces Listerine Mouthwash to the recipe, ZAAR wont allow it as an ingredient, so it isn't listed, but does need to be added.

- Mix all the ingredients together, including 4 ounces Listerine mouthwash, and put into an empty "Miracle Grow" container that attaches to your watering hose.
- Spray your lawn with the mixture once every few weeks.
- The ammonia acts like a fertilizer, the dish soap washes off pollutants, the beer kills the weeds.
- DO NOT use diet soda, it needs the sugar, and the mouthwash kills the bugs.

ERNIE'S FUDGE PIE
This is the ultimate family favorite desert. It is my Aunt Norma's specialty and I remember getting so excited to go to her house for Thanksgiving or Christmas and feast on this pie. I added the melted white chocolate and dark chocolate drizzle to "fancy" up the looks of an otherwise unattractive pie. But once you taste it, you won't care what it looks like. The baking is a little fussy in that the time varies with your oven and knowing when to take it out is tricky. If you bake it too long the filling will cool and harden, if you don't bake it long enough the filling will be soupy. Its done when the top looks dry and the outer portion is set while the center still shakes a little bit like custard. NOTE: The filling is actually a tad underbaked in my photo, the optimal texture is a little more dry, I should have baked it for a few more minutes but nevertheless it tastes MARVELOUS either way!

- Melt butter and chocolate together on low heat or in double boiler.
- Meanwhile, put eggs in mixing bowl and beat until light and pale in color.
- Beat remaining ingredients into eggs, than add slightly cooled chocolate mixture.
- Mix thoroughly and pour into pie shell.
- Bake at 350 for 25-30 minutes or until top appears dry and filling is set but still somewhat soft inside.
- Do not over bake; pie should shake like custard so it will not be too stiff when cool. It really shouldn't take any longer than 30 minutes.
- For white chocolate drizzle, place baking square in small resealable plastic bag; seal bag.
- Heat in microwave oven at MEDIUM (50% power) 1 minute.
- Turn bag over; heat at MEDIUM 1 to 2 minutes or until melted. (Depending on the chocolate you use, sometimes you may need to add a little shortening for a smoother glaze.).
- Knead bag until white chocolate is smooth.
- Cut off very tiny corner of bag; pipe or drizzle white chocolate onto pie.
- For chocolate drizzle, place chocolate chips in small resealable plastic bag; seal bag.
- Heat in microwave oven at HIGH 1 minute.
- Turn bag over; heat at HIGH 1 to 2 minutes or until chocolate is melted.
- Knead bag until chocolate is smooth.
- Cut off tiny corner of bag; pipe or drizzle chocolate onto pie.
- Let pie stand until chocolate drizzles are set.
- Serve at room temperature or slightly warm without the drizzle.
- This is great served plain, or with a topping of vanilla ice cream.
