Steps:

  • Gather the ingredients.
  • If you'd like to rim the glass , wet it with a quick dip in a shallow dish filled with either liqueur from the recipe. While still holding the glass upside down, roll the rim in a dish of grated chocolate, cocoa powder, or finely crushed graham crackers.
  • In a cocktail shaker filled with ice cubes, pour the cream, white crème de cacao, and green crème de menthe.
  • Shake well .

  • Catch your grasshoppers. The easiest way to obtain grasshoppers is simply to catch them yourself. They are easiest to catch in the morning when it's colder and they are lazier. You can simply grab them off the ground with your hands, if you're fast enough, or use a net to catch them. You can also create some of these more elaborate traps: Dig a hole in the ground and place a Mason jar with some bait, such as oats, apples, or carrots, in it. Either place some soil around the jar or tip it on its side -- the next morning, you should find grasshoppers in the jar. Just place the lid over it and you've caught your grasshoppers! If you want 'em alive, poke some holes in the lid. Take a shoot of green willow that's about three feet long and flick it down lightly on the grasshopper. This should pin it in place.
  • Alternatively, buy your grasshoppers. Depending on where you live, it may be tricky to buy grasshoppers, but not impossible. Try Mexican markets first. Grasshoppers, known as chapulines in Mexico, are a popular dish in Oaxaca.
  • Be sure to cook them. Grasshoppers are delicious and safe to eat, but you have to cook them first. This will keep you safe and will kill any parasites that they might be carrying. Don't attempt to eat them raw or you may suffer health issues.
  • Remove the legs and wings. The legs of grasshoppers aren't edible; although you won't be hurt from eating them, it's best to remove them before you begin to cook them. The same goes for the wings. Some say that freezing the grasshoppers for 10-15 minutes or boiling them for a few minutes makes the legs easier to pop off. This also has the benefit of killing them. Some people also pull the head straight off, which removes the guts (including the stomach). This tends to remove certain kinds of parasites (and could reduce the risk of eating the grasshopper raw, but it's still better to cook it). You can then insert a stick into the cavity and cook it over a fire.
  • Clean your grasshoppers before you eat them. Make sure to run them under cold water until they are clean and free of dirt. You can pat them down with a paper towel and then freeze or boil them, depending on the recipe.

1 (15.25 ounce) package mint-flavored, cream-filled chocolate sandwich cookies (such as Mint Creme Oreo®)
5 tablespoons unsalted butter, melted
¾ teaspoon kosher salt, divided
3 (8 ounce) packages cream cheese, at room temperature
1 ½ cups white sugar
⅔ cup sour cream, at room temperature
¼ cup chocolate liqueur (such as Godiva®)
¼ cup creme de menthe liqueur
3 large eggs, at room temperature
½ (4.6 ounce) package creme de menthe thins (such as Andes®)
1 sprig fresh mint

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line the bottom and sides of a 9-inch springform pan with 4 layers of aluminum foil.
  • Pulse mint sandwich cookies in a food processor until finely chopped. Add butter and 1/4 teaspoon salt, and pulse until incorporated, about 5 times. Press cookie mixture evenly over bottom and halfway up sides of springform pan.
  • Bake in preheated oven until fragrant and starting to turn crispy, 10 to 12 minutes. Remove and set aside to cool while you prepare the cheesecake filling. Decrease oven temperature to 325 degrees F (165 degrees C).
  • Combine cream cheese and sugar in the bowl of an electric stand mixer fitted with the paddle attachment. Beat on medium-high, scraping down sides as necessary, until completely smooth and creamy, 1 to 2 minutes. Add sour cream and beat until combined, about 30 seconds. Add chocolate liqueur, creme de menthe liqueur, and remaining 1/2 teaspoon salt; beat on medium until combined, about 1 minute. Add eggs, 1 at a time, and beat on low until just incorporated. Pour cheesecake mixture into the cooled crust. Place the springform pan into a large roasting pan.
  • Place roasting pan on center rack in the oven. Carefully pour boiling water into the roasting pan to come 1 inch up the sides of the springform pan, making sure you do not get any water into the cheesecake.
  • Bake until filling is set but still slightly jiggly in center, 60 to 65 minutes. Turn oven off, and prop open door. Let cheesecake cool in oven for 1 hour. Remove roasting pan with cheesecake from oven. Remove cheesecake from roasting pan, and set aside to cool completely, about 45 minutes. Cover with plastic wrap and refrigerate at least 4 hours, up to overnight.
  • Run a sharp paring knife around edges of crust to loosen from pan. Remove sides of springform pan. Run knife around bottom of cheesecake to loosen. Gently shimmy, or use large spatulas, to transfer onto a cake stand or serving plate. Chop creme de menthe thins. Top cake with chopped thins and sprig of mint. Slice and serve cold or at room temperature.

The Grasshopper served at Dante, a New York City cocktail bar, is a fairly straightforward affair, calling on the crème de menthe, crème de cacao and cream demanded by the drink's classic formula. To this, Dante adds an extra dose of both mint and chocolate flavor. The mint comes in the form of Branca Menta, the minty cousin to the Italian amaro Fernet Branca. Meanwhile, a slight shower of shaved chocolate on the drink's surface crowns the cocktail. Be sure the crème de menthe brand you end up using is of the green variety, and not the clear. The color of the cocktail, said Linden Pride, an owner of Dante, is "part of its success story; it catches people's attention."
