EASY PIZZA IN A PINCH

- To make the sauce, combine tomato sauce, garlic, 3 teaspoons herbs, paprika, salt and pepper in a sauce pan over medium-high heat.
- When sauce bubbles, reduce to a low simmer and stir. Cover and allow to simmer over very low heat for 15 minutes.
- Crumble Italian sausage in a pan and cook over medium heat until no longer pink, about 15 minutes. Drain over paper towels. Set aside.
- Preheat oven to 400 degrees F.
- Mix olive oil, garlic and 1 teaspoon herb blend in a small bowl.
- Open hot dog buns and arrange on sheet pans covered in foil.
- Separate buns in halves along the folds if you want to make 16 appetizers; leave whole if you want to make 8 pizzas.
- Brush the buns with the olive oil mixture.
- Toast buns in the oven for about 5 minutes, just until edges begin to brown.
- Remove pan from oven and spread each of the buns with the warm tomato sauce.
- Top with browned Italian sausage, pepperoni slices, mozzarella and Parmesan cheeses.
- Return pan to the oven and bake at 400 degrees F for 5 to 10 minutes or until cheeses are bubbling.
- Serve garnished with fresh oregano leaves and crushed red pepper, if desired.

- Preheat oven to 420°F/215°C.
- Spread pizza sauce on crust being sure to leave about 1 inch of outside crust without any sauce.
- Toss shredded mozzarella cheese with oregano and salt.
- Sprinkle shredded mozzarella cheese over sauce.
- Place on a baking sheet or in a cast iron skillet.
- Bake for 12 to 15 minutes or until cheese is fully melted.
- Slice, serve and enjoy!

- Place a small pot over medium heat and add the blueberries, blackberries, raspberries, granulated sugar and lemon zest and juice. Cook until the sugar is dissolved and the berries have released their juices, about 6 minutes.
- Meanwhile make the granola. Place a large nonstick skillet over medium-high heat. Add the oats and almonds and toast until light golden, 2 to 3 minutes. Remove from the skillet and reserve. Reduce the heat to medium, then add the butter to the skillet. Once the butter is melted, add the maple syrup, brown sugar, cinnamon and salt. Bring to a boil and cook for 1 minute, until you have a thin syrup. Add the toasted ingredients back to the skillet. Cook, stirring and tossing the ingredients, for 1 minute. Transfer to a plate and set aside.
- Make a slurry by stirring the cornstarch into 2 tablespoons of water. Stir into the berry mixture and allow to thicken, about 1 minute.
- Portion the berry mixture into 4 serving bowls. Top liberally with the oat and almond mix. Add 1 scoop of ice cream to each and garnish with a little more of the berry mix, a little more granola and some mint, then serve warm.

- Mix yeast and warm water let sit 10 minutes
- Mix flour, salt, and garlic powder
- add flour mixture to proofed yeast mixture
- Knead 10 minutes or until smooth coat with olive oil

- Preheat the oven to 350 degrees F (175 degrees C). Spray two cake pans with nonstick cooking spray.
- Roll out pizza dough on a lightly floured cutting board. Flatten out into a rectangle.
- Brush surface of the pizza dough with as much pizza sauce as you like.
- Cover dough with alternating slices of large pepperoni and mozzarella slices. Dot with small pepperoni slices.
- Starting at the long side, roll up the dough carefully into a jelly roll, making sure the filling stays in and pinch closed along the side. Slice into 1/2-inch rounds and place them inside the cake pans flat. Tuck the ends around as necessary and sprinkle Parmesan cheese over each slice.
- Bake in the preheated oven until golden brown, 15 to 20 minutes.
- Stir together olive oil, parsley, and garlic in a shallow bowl. Brush warm pizza rolls with garlic oil.
