Number Of Ingredients 7

1 cup heavy whipping cream
1 tablespoon confectioners' sugar
1 cup fruit compote
For the compote
1 pound seasonal fruit (such as blackberries, raspberries, gooseberries, or rhubarb), trimmed
2 1/2 tablespoons granulated sugar
couple of splashes of elderflower or ginger syrup (optional)

Steps:

  • 1 To make the compote, preheat the oven to 350°F.
  • 2 Place the fruit in a large saucepan and sprinkle with the sugar. Add enough water to just cover and bring the mixture to a boil, letting, allowing the sugar to dissolve. Let the mixture simmer for 10-15 minutes, until the fruit has completely softened.
  • 3 Add the syrup, if using (elderflower works very well with gooseberries, and ginger is great with rhubarb). Check the compote for sweetness and add more sugar if you desire. Allow the compote to cool, then chill in the refrigerator for 30 minutes.
  • 4 Whisk the cream and confectioners' sugar together until soft peaks form (it should not be too thick), then fold in the compote. Divide the fool among 6 decorative glasses and serve.

  • Spaghetti Bolognese. Once the de rigueur dinner party dish of the '60s, spaghetti bolognese is making something of a comeback in British food. Although Italian in origin, this dish isn't strictly Italian and takes other names in the peninsula.
  • Stew and Dumplings. This delicious hearty beef stew and dumplings is the backbone of winter food in Britain and Ireland. It requires a long, slow cook, so go ahead and double the amounts to have enough for a couple of meals or to freeze for a different occasion.
  • Fish Pie. Easy to make, and absolutely budget-friendly, this pie goes a long way. Using fish scraps you'll save a ton of money, and the rest of the things you need are just potatoes, butter, seasonings, fish stock, and milk.
  • Shepherd's Pie. Be it a Shepherd's pie, made with ground lamb, or a beef Cottage pie, this is the ultimate comfort food. Creamy mashed potatoes cover a generous layer of meat and mushrooms in a delicious gravy.
  • Toad in the Hole. Although the origin of the name of this dish remains a mystery, what's clear is that this beloved meal is an absolute hit when served for your Sunday roast or weeknight meal.
  • Lancashire Hot Pot. Hotpot is a long, slow-cooked recipe, but unlike many stews, it is still less heavy and suitable for eating all year round. Made with lamb and optional lamb kidneys.
