Easy Oven Baked Squash Chips Recipe - (4.2/5) image

1 green or yellow squash
Salt
Favorite seasonings

Steps:

  • Using either a mandolin or a knife, cut the squash into very thin slices. Spray a cookie sheet (or two) liberally with cooking spray. Arrange the squash slices on the cookie sheets, ensuring that they don't touch (they can be really close to each other, but not touching). Preheat the oven to 200°F. Evenly sprinkle salt over the squash slices. Be careful not to use too much salt because the chips will shrink while cooking, which means they could end up being overly salty. You can always add more salt after they are baked. Sprinkle any additional desired seasonings on the chips. Put the cookie sheets in the preheated oven. Let the squash chips bake for 2-3 hours (check them at 2 hours and see how long they need from there). The longer you bake them, the crunchier they will be. Remove the chips from the oven when done, let cool, and serve with your favorite dips or on their own.

1 1 1/8" 1/4" zucchini, cut into 1/8" - 1/4" slices
1/3 1/3 1/3 cup whole grain breadcrumbs, optional Panko (homemade breadcrumb recipe)
1/4 1/4 1/4 cup finely grated parmesan cheese, reduced fat
1/4 1/4 1/4 teaspoon black pepper
to or sea salt to taste
1/8 1/8 1/8 teaspoon garlic powder
1/8 1/8 1/8 teaspoon cayenne pepper
3 3 3 tablespoons low-fat milk

Steps:

  • Preheat oven to 425 degrees. Combine in a small mixing bowl, breadcrumbs, parmesan cheese, black pepper, salt, garlic powder, and cayenne pepper. Dip zucchini slices into milk and dredge into bread crumbs to coat both sides. Note: It may be necessary to press crumbs onto zucchini slices to ensure the crumbs stick. Arrange zucchini on a non-stick cookie sheet and lightly mist with a non-stick cooking spray. We use Misto Olive Oil Sprayer. Or, place zucchini on a wire rack sprayed with non-stick cooking spray. If using a rack, place rack on a cookie sheet. Bake 15 minutes, turn over and continue baking until golden, approximately 10-15 minutes (being careful not to burn). Allow to cool to room temperature before storing in an airtight container. NOTE: Zucchini Chips will continue to get crispier while cooling. NOTE: For gluten free chips, use gluten-free bread crumbs.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place squash, cut sides down, in a 9x13 baking dish. Pour water into dish around squash halves.
  • Bake in the preheated oven until tender and easily pierced with a fork, about 1 1/2 hours. Carefully remove the skin with a fork; it should be very easy to remove. Top squash halves with butter and season with salt and pepper to taste.

½ cup Italian-seasoned bread crumbs
2 tablespoons grated Parmesan cheese
2 teaspoons fresh oregano

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place zucchini in a bowl. Drizzle olive oil over zucchini and stir to coat; add bread crumbs and toss to coat. Spread coated zucchini onto a baking sheet. Sprinkle Parmesan cheese and oregano over coated zucchini.
  • Bake in the preheated oven until zucchini are tender and cheese is browned, about 15 minutes.
