Lamb Meatballs With Tzatziki Sauce image

Make and enjoy these tasty Greek lamb meatballs served with tzatziki, the traditional sauce made with cucumbers, yogurt, lemon, and mint.

Lamb Meatballs
1 pound ground lamb
3 tablespoons red onion, finely chopped
1 small garlic clove, minced or crushed in a garlic press
1 egg, slightly beaten
2 tablespoons breadcrumbs
1 teaspoon cumin
1 tablespoon mayonnaise
1 cup fresh mint (loosely packed and finely chopped)
3/4 teaspoon kosher salt
2 tablespoons canola oil
1 fresh lemon for squeezing and garnish, cut into quarters
Optional: 1/8 teaspoon cayenne pepper
Tzatziki Sauce
1 large cucumber
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon kosher salt
1 tablespoon fresh mint, finely chopped
1/4 cup fresh dill, finely chopped
2 cups Greek yogurt

Steps:

  • In the bowl with the lamb, add red onion, garlic, egg, bread crumbs, cumin, mayonnaise, fresh mint, and salt. Using your hands, mix thoroughly to distribute the ingredients evenly. With a teaspoon, form the mixture into 24 meatballs. Don't level the meat off or pack the meatballs too tightly.
  • Preheat the broiler.
  • Lightly spread canola oil on a baking sheet using a paper towel. Place the meatballs two inches apart on the baking sheet, and position the baking sheet 4 inches from the heat source.
  • Broil for about 5 minutes, turning once halfway through.
  • Arrange the meatballs on a serving platter, and squeeze fresh lemon juice over the top. Sprinkle the cayenne pepper over the meatballs at the last minute. Serve at once with tzatziki.
  • Place cucumber, olive oil, lemon juice, lemon zest, salt, mint, and dill in a bowl and mix well. Add the Greek yogurt and mix well.
  • Cover with plastic wrap or place in an airtight container, and chill in the refrigerator for at least 2 to 3 hours before serving.

Prep these comforting Greek lamb meatballs with chargrilled veg and potatoes in just five minutes. A guaranteed family favourite, perfect for busy weeknights

2 tbsp olive oil
500g lamb meatballs
300g baby new potatoes, thickly sliced
2 large garlic cloves, crushed
185g chargrilled vegetables, drained if in oil
2 x 400g cans chopped tomatoes with herbs
2 tsp light brown soft sugar
100g black olives
40g feta, crumbled
½ small bunch mint, finely shredded
1 lemon, zested

Steps:

  • Heat 1 tbsp of the oil in a large shallow flameproof casserole or frying pan over a medium heat. Add the meatballs and fry for 5 mins or until golden brown. Set aside on a plate.
  • Heat the remaining oil in the same pan and fry the potatoes over a medium heat for 5 mins, or until they're starting to turn golden brown.
  • Add the garlic to the pan and fry for 1 min. Stir through the chargrilled veg, tomatoes and sugar, as well as the olives. Season. Add the meatballs back to the pan, cover and cook over a medium-low heat for 30-35 mins, stirring occasionally. Remove the lid halfway through, the potatoes should be just cooked through with the liquid slightly reduced.
  • Remove the pan from the heat and serve at the table with the feta, mint and lemon zest scattered over.

1 lb ground lamb
2 -5 cloves garlic, finely chopped
2 -3 tablespoons fresh parsley, finely chopped
2 -4 teaspoons oregano or 2 -4 teaspoons mint leaves
2 -4 teaspoons cinnamon
unrefined sea salt (optional)
fresh lemon juice (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, knead together the lamb, garlic, parsley, oregano or mint, and cinnamon until they are well mixed.
  • Form into 1-inch meatballs and place in a baking dish.
  • Bake for 20 to 30 minutes until done to your liking.
  • Sprinkle with sea salt and lemon juice just before serving.
  • Variation: For Dill Lamb Balls; Substitute 2 tsp dried dill for the oregano or mint and omit the cinnamon.

1 cup grated onion
1 garlic clove, minced
1 cup olive oil
1 cup day old bread, small diced and soaked in milk
1 pound ground beef or lamb
1 egg
1 tablespoon chopped fresh oregano leaves
1 tablespoon ground coriander
1 tablespoon ground cumin
1/2 teaspoon ground cinnamon
Pinch nutmeg
1 lemon, zested
Salt and freshly ground black pepper
Flour, for dredging
12 lemon wedges, for garnish
Mint leaves, for garnish

Steps:

  • In a medium skillet, sweat onion and garlic in 2 tablespoons of olive oil over medium heat until translucent, about 2 minutes. Let cool and set aside.
  • Wring the excess milk out of the soaked bread cubes.
  • Place all ingredients, except flour and garnishes, in a large mixing bowl and combine by hand until fully incorporated. Form into little meatballs (about 1-ounce each).
  • In a large skillet, heat remaining oil over medium heat. Dredge, or roll the meatballs in flour, and fry in the skillet until golden brown, about 5 minutes. Remove from the pan and place on paper towels to drain the excess fat.
  • Place on platter and garnish with lemon wedges and torn mint leaves.

MEDITERRANEAN LAMB BALLS

When we opened the Shop, these Mediterranean balls were our first daily special. We were so busy that we didn't get a chance to change it for three weeks, but nobody really complained because they were so delicious. People still get excited when we bring them back for a day or two. The raisins and walnuts give this ball a subtly sweet and earthy quality that complements the lamb. Make these into mini balls and pass them around at your next party. Just add toothpicks and Spinach-Basil Pesto (page 58) for dip. No sauce required. Or serve them over a bed of Braised Kale with Anchovies and Garlic (page 93) or Creamed Spinach (page 100).

Yield Makes about 2 dozen 1 1/2-inch balls

Number Of Ingredients 10

2 tablespoons olive oil
2 pounds ground lamb
3 large eggs
1 cup dark raisins, chopped
1/2 cup walnut halves, finely chopped
1/2 cup chopped fresh parsley
1/2 cup chopped fresh mint
1/2 cup bread crumbs
2 teaspoons salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450°F. Drizzle the olive oil into a 9 × 13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.
  • Combine the ground lamb, eggs, raisins, walnuts, parsley, mint, bread crumbs, salt, and pepper in a large mixing bowl and mix by hand until thoroughly incorporated.
  • Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.
  • Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
  • Allow the meatballs to cool for 5 minutes in the baking dish before serving.

⅓ cup snipped fresh parsley

1 pinch ground black pepper to taste
1 pound ground lamb
2 tablespoons vegetable oil, or as needed
2 tablespoons butter
2 tablespoons all-purpose flour
¼ teaspoon salt
1 dash ground black pepper
1 cup milk
2 tablespoons lemon juice
1 teaspoon lemon zest

Steps:

  • Beat milk and egg together in a large bowl. Stir in bread crumbs, mint, parsley, onion, dill, garlic, salt, and pepper. Add ground lamb; mix well. Shape into 1-inch meatballs.
  • Heat oil in a large skillet over medium heat. Add meatballs; cook until browned, 1 to 2 minutes per side. Reduce heat and cover; cook until meatballs are no longer pink in the center, 15 to 20 minutes.
  • Meanwhile, melt butter in a saucepan. Blend in flour, salt, and pepper. Add milk; cook and stir until thickened and bubbly, about 5 minutes. Simmer for 2 minutes more. Stir in lemon juice and zest.
  • Drain meatballs and transfer them to a serving dish. Spoon the lemon sauce on top.

1 1/2 lbs boneless lamb, cut into cubes
1/4 cup red wine vinegar
1/4 cup olive oil
1 1/2 tablespoons chopped fresh oregano
4 -5 cloves garlic, minced
1/4 teaspoon cracked black pepper
1 red bell pepper, coarsely chopped
1 red onion, sliced into rings
1 (14 ounce) can artichoke hearts, drained
salt and pepper (to taste)
2 tomatoes, cut into wedges
1/2 cup feta cheese, crumbled
1 -2 tablespoon chopped of fresh mint

Steps:

  • Place lamb in a non-reactive shallow dish.
  • Mix together vinegar, olive oil, oregano, garlic, and pepper; pour over lamb and toss to mix.
  • Allow lamb to marinate in this mixture for 1-3 hours.
  • Place lamb in a large deep skillet and cook over medium heat.
  • Add bell pepper and onion and cook for about 8-10 minutes.
  • Then add the artichoke hearts and tomatoes and season to taste with salt and pepper.
  • Cook for 8-10 minutes more, or until lamb is tender and tomatoes have released their juices and become soft.
  • Garnish with feta cheese and chopped mint before serving.
