- To prepare the classic Avgolemono recipe, start by cracking the eggs into a bowl and whisk well.
- Gradually add the lemon juice and whisk again to combine.
- Add a little of the warm stock or soup and whisk quickly, add more and whisk again. The reason for slowly adding the broth is to gradually warm up the eggs so you don't end up with an omelette instead of a sauce!
- Pour gradually the egg mixture back into the pot, whilst constantly stirring and bring just below boiling point. Remove the pan from the stove and serve.
GREEK OLIVE OIL AND LEMON SAUCE
Ladolemono is a Greek sauce that requires no cooking and has few ingredients. It is perfect with seafood, but you can also use it on vegetables or chicken.

- Preheat oven to 400 degrees F (200 degrees C).
- Put potato wedges into a large bowl. Drizzle olive oil and lemon juice over the wedges and toss to coat. Season potatoes with salt, oregano, and black pepper; toss again to coat.

- Combine egg and milk in a large bowl. Stir in bread crums, parsley, onion, garlic, salt, mint, and a dash of pepper. Add ground meat and mix well then shape into 1-inch meatballs. Brown meatballs in the shorteneing. Cover meatballs and cook over low heat for 15-20 minutes. Drain off fat. Transfer meatballs to serving dish.
- While meatballs are cooking make the lemon sauce. by melting the butter in a small saucepan. Blend in the flour , salt, and pepper. Add the milk and cook, stirring, until thick and bubbly. Cook 1-2 minutes longer. Stir in the chooped eggs, lemon peel, and lemon juice.
- Goes very well with a nice white rice.

This is a Greek sauce that is great for grilled or baked chicken or fish (especially salmon). It is simple to make, and is usually served with the meal so that everyone can put as much ladolemono on their fish or chicken as they want.

- Combine ground beef, rice, onion, garlic, parsley, mint, salt, and pepper in a bowl.
- Add egg to mixture and mix well.
- Place flour in a shallow pan.
- With floured hands, shape into walnut-sized balls. Roll meatballs lightly in flour and shake off excess.
- Heat two cups of the chicken broth in a Dutch oven or large pot until boiling.
- Carefully place the meatballs in a layer on the bottom of the pot. Add more chicken broth if needed, just to cover the meatballs.
- Simmer covered, over low heat for 45 minutes.
- Add more broth if less than one cup remains.
- For the Egg-Lemon Sauce:.
- Using a whisk, beat the eggs in a medium bowl until frothy.
- Slowly whisk in the lemon juice.
- Ladle one cup of the pot liquid little by little into egg-lemon mixture to temper the eggs.
- Remove pot from heat and add egg-lemon mixture stirring gently.
- Heat over very low heat until sauce thickens and is heated through.
- Take care not to allow the sauce to boil or the eggs will curdle.

- Place chicken breasts on a flat work surface. Slice each horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book. Place each one between 2 sheets of heavy plastic. Firmly pound chicken with the smooth side of a meat mallet to a 1/4-inch thickness.
- Preheat the oven to 375 degrees F (190 degrees C).
- Season insides of chicken with salt, pepper, and garlic powder. Layer spinach, tomato, onion, and feta cheese over chicken in that order. Roll chicken over the stuffing and tie ends with butcher's twine.
- Mix olive oil, lemon juice, garlic, oregano, rosemary, thyme, salt, and pepper together to make the sauce.
- Heat a cast iron skillet over high heat. Add chicken; cook until browned, about 5 minutes per side. Brush 1/2 of the sauce on top.
- Bake in the preheated oven for 30 minutes. Pour the remaining sauce over chicken. Continue baking until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 10 to 15 minutes more.
- Remove chicken and let rest for 5 minutes. Slice into pinwheels and serve with pan juices.
