GREEN BEANS WITH APPLE CIDER

- Put the beans in a large microwave safe bowl, loosely cover bowl with plastic food storage wrap and microwave on high 5 minutes. Uncover and stir the beans, then cover and microwave on high 4 to 7 minutes more, until desired doneness, from still-crisp to tender, but with a bite.
- Heat a small skillet over medium low heat. Add a drizzle of extra-virgin olive oil and the onions and cook until beginning to caramelize, about 10 minutes, stirring frequently. Add the cider, raise the heat to medium high and cook until liquid is reduced and syrupy, about 5 minutes.
- Remove the beans from microwave. Season the beans with salt and pepper, to taste, and add to the pan with the onions and cider. Toss evenly to coat the beans and keep warm until ready to serve.

- Bring a large saucepan of water to a boil. Blanch cabbage until just tender, about 2 minutes. Drain and set aside.
- Heat butter in a large straight-sided skillet over medium heat. Add onion and garlic, and cook until they begin to soften, about 3 minutes. Add cabbage, cider vinegar, apple cider, honey, salt, pepper, cloves, and allspice. Toss to coat. Cover, and simmer until very tender, about 40 minutes. While cabbage is cooking, core apples; cut into 3/4-inch pieces. Toss with lemon juice; set aside.
- Add apples and caraway seeds to pan; cook, uncovered, until apples begin to brown slightly, and most of the liquid has evaporated, about 10 minutes. Serve.

- In a large heavy-bottomed saucepan, combine all the ingredients. Heat until the mixture begins to simmer. Decrease to medium low heat and let the mixture steep and reduce (but do not let boil) to 8 cups, about 1 hour. Refrigerate until cold.
- Pour reduced liquid into a shallow pan. Freeze, stirring every 1/2 hour, until hard, about 3 to 4 hours.

RASPBERRY-APPLE CIDER ICED TEA
This raspberry tea includes apple cider vinegar with the mother, which has been proven to have so many health benefits! You can drink this tea warm in the winter or iced in the summer. You may need to work up to the full amount of vinegar and ginger if it's too tart for you. I love the bite the ginger gives, but it can be omitted. What a great way to hydrate!

GREEN APPLE CIDER ICE
This is perfect with poultry or any pork dish. If you want a serving for adults, add a dash of Calvados or some other co-ordinating liquer for good measure.

- In a medium pan, boil the cider, uncovered, over medium heat until reduced to 1 cup, about 20-25 minutes. add the water, sugar, anise seed, and cinnamon.
- Bring to a boil and boil over medium heat for 1 minute, or until sugar dissolves. Remove from heat, cover, and let cool.
- Strain through a double thickness of cheesecloth and set aside.
- Place the prepared apples in a food processor bowl, fitted with a steel blade. add the lemon juice and zest and puree till very smooth.
- Add the 1/2 cup of Calvados or apple jack, salt, food coloring and the reserved cider mixture and blend. Pour the mixture into an ice cream maker and freeze according to manufacture's instructions. Alternately pour into a 10x10 metal baking pan and place in the freezer.
- When ice crystals begin to form 2"all around the edges of the pan, remove and stir till smooth.
- Return the pan to freezer and repeat this process two more times, or until a smooth consistency can be reached.
- Pack into plastic containers and store in the freezer.
- Remove about 10 minutes before to soften the ice slightly.
- Scoop into wine glasses or parfaits. Top with 1 tbls Calvados, garnish with an apple slice.
