Steps:

  • Heat oven to 350°F. Spray 4 (7- or 8-oz) individual baking dishes (ramekins) with cooking spray.
  • In large bowl, mix green beans, soup, garlic and pepper flakes. Divide mixture evenly among baking dishes. Top with onions.

1 pound fresh green beans, trimmed and cut into 1 1/2-inch pieces
cooking spray
2 tablespoons unsalted butter
1 cup sliced fresh mushrooms
1 medium shallot, thinly sliced
1 clove garlic, minced
1 tablespoon all-purpose flour
½ cup chicken stock
1 teaspoon low-sodium soy sauce
1 teaspoon Dijon mustard
½ teaspoon dried thyme
½ cup half-and-half
salt and ground black pepper to taste
1 strip crispy cooked bacon, crumbled
½ cup French-fried onions (such as French's®)

Steps:

  • Bring a large pot of lightly-salted water to a rolling boil. Add beans and cook until just tender, about 5 minutes. (The beans will not soften too much more during baking, so if you want them softer, cook to your preference.)
  • Drain beans, run under cold water, and place in a bowl of ice water to stop the cooking. When beans are chilled, drain and set aside.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray the inside of 4 ramekins with cooking spray.
  • Melt butter in a medium skillet over medium heat. Add mushrooms and shallot and cook until they start to brown, 2 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Sprinkle flour over the mushrooms, stirring well to combine. Gradually pour in chicken stock, soy sauce, Dijon, and thyme, stirring constantly; the mixture will be thick at this point. Stir in half-and-half, salt, and pepper until well combined. Reduce heat to low and simmer until flavors have melded and sauce has thickened, 3 to 5 minutes.
  • Stir in green beans and bacon until well combined. Spoon into the prepared ramekins and top with French-fried onions.
  • Bake in the preheated oven for 13 to 15 minutes. Serve immediately.

1/2 cup 125 mL 2% milk
2 tsp 10 mL Dijon mustard
1/2 tsp 3 mL dried sage leaves, crumbled
2 cups 500 mL shredded Cheddar cheese
1 package (79 g) crispy French fried onions
2 packages ( 340 g) refrigerated country biscuit dough

Steps:

  • Heat the oven to 375°F (190°C). Spray 20 muffin-pan cups with cooking spray. Stir the thawed frozen cut green beans, CAMPBELL’S® Condensed 40% Less Salt Cream of Mushroom Soup, 2% milk, Dijon mustard and crumbled dried sage leaves in large bowl. Fold in 1 cup shredded cheddar cheese and 2/3 cup crispy French fried onions.
  • On lightly floured surface, press out or roll each biscuit into a 4-inch circle. Press the biscuit circles into the bottoms and up the sides of the muffin-pan cups. Divide the green bean mixture among the biscuit cups.
  • Bake for 17 to 19 minutes or until the biscuit cups are golden. Stir the remaining shredded cheddar cheese and crispy French fried onions in a small bowl. Sprinkle over the green bean mixture.

1 pound green beans, ends trimmed
1 tablespoon olive oil
8 ounces sliced mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
1/3 cup brandy or cognac
1/3 cup red wine
1/3 cup chicken broth
Fried Onions, recipe follows

Steps:

  • Cook green beans in boiling salted water until tender, about 3 or 4 minutes. Drain well.
  • Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 3 to 4 minutes. Add the garlic and thyme. Season with salt and freshly ground black pepper, to taste. Cook until garlic is fragrant, about 1 minute.
  • Add brandy or cognac, red wine and chicken broth, bring to a boil. Simmer to blend flavors and reduce sauce, about 2 to 3 minutes. Add green beans to mushroom sauce and toss to coat. Place on a large serving dish, season again with salt and pepper, to taste.
  • Top with fried onions before serving.
  • 2 quarts peanut oil, for frying
  • 2 large red onions, thinly sliced and separated into rings
  • 1/2 cup buttermilk
  • 2 cups arborio rice coating, recipe follows
  • Kosher salt
  • Heat peanut oil in a deep fryer or deep pot to 375 degrees F.
  • Put onion rings in a large bowl. Pour buttermilk over onions and toss to coat. Shake off the excess liquid.
  • Dip onions into Arborio rice coating, covering thoroughly
  • Fry the onions in small batches until crispy, about 2 minutes per batch. Scoop out with a slotted spoon and drain on paper towels. Set aside. Season with salt, to taste.
  • 1 cup arborio rice
  • 3 cups all-purpose flour
  • 1 cup semolina
  • 2 tablespoons fine salt
  • 1 teaspoon freshly ground black pepper
  • Grind the rice in a blender or spice grinder to a very fine powder. Put it in a bowl and add the flour, semolina, salt and pepper. Toss until well blended. Store in a sealed container in the freezer for maximum freshness.

1 tablespoon minced fresh flat-leaf parsley
1 cup diced fresh mushrooms

1 cup sour cream
2 (14.5 ounce) cans French-style green beans, drained
1 cup shredded Cheddar cheese
1 cup crushed buttery round crackers
¼ cup melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a skillet over medium heat. Cook and stir the onions, parsley, and mushrooms in the melted butter until the onions are translucent and the mushrooms are giving off their juices, 7 to 10 minutes. Add the flour, salt, pepper, and lemon juice; cook until the flour is slightly browned, 2 to 3 minutes. Stir the sour cream into the mixture. Mix the green beans into the mixture. Pour the green bean mixture into a 9-inch square baking dish. Sprinkle the Cheddar cheese over the mixture. Stir the crackers and melted butter together in a small bowl until evenly mixed; spread evenly over the Cheddar cheese layer.

I LOVE green bean casserole...I HATE leftovers. This recipe can serve as a side dish for two or as a whole meal for one. If you want you can leave out the mushrooms and substitute for cream of celery. However, I really like mushrooms. Some people may also like to sprikle some french's dried onions on top, but once again, it is not my thing.

1 (15 ounce) can green beans (french cut or your preference)
4 ounces white mushrooms (half of the small 8oz pack)
0.5 (10 ounce) can 98% fat-free cream of mushroom soup
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 350*F.
  • Chop mushrooms and stick them in microwave-safe bowl. Cover and cook on high for about two minutes or until mushrooms are done.
  • Add half of the can of soup and stir to combine.
  • Open can of green beans and pour in about half of the liquid from the can. Drain the rest.
  • Add the green beans and ground black pepper and stir well.
  • Put into small casserole dish and place in over for about 35 minutes.
