STIR-FRIED GARLIC GREEN BEANS



Stir-Fried Garlic Green Beans image

The green beans should remain crunchy in this dish, which is adapted from Grace Young's recipe in "Stir-Fry to the Sky's Edge."

1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.

10 oz / 300 g green beans ((Note 1a))
7 oz / 220 g pork mince ((Note 1b))
1/2 small onion, finely chopped (about 1/2 cup)
2 tsp finely chopped garlic (2 cloves) ((Note 2))
2 tsp ginger, finely chopped ((Note 2))
2 1/2 tbsp peanut oil (or vegetable or canola)
1 tbsp dark soy sauce (Note 3)
1 tbsp Chinese cooking wine (Note 4 for subs)
1 tsp sugar
1 1/2 tsp + Chilli Garlic Sauce (Note 5)

Steps:

  • Mix Sauce ingredients in a bowl.
  • Trim the tough end of the beans, then chop into 2 - 2.5cm / 4/5 - 1" pieces.
  • Charred Beans: Heat 1 1/2 tbsp oil in a heavy based skillet over high heat (I use cast iron) until smoking. Add beans, spread out to cover base. Leave for 1 minute. Quick stir, spread out, cook for 30 seconds. Stir, then leave for 30 seconds, then repeat once more (so 2 1/2 minutes in total cook time) until beans are charred but tender crisp (not withered and floppy). Remove into bowl.
  • Turn heat down to medium high, add 1 tbsp oil. Add onion, then garlic and ginger. Cook for 1 minute until edges of onion are golden.
  • Turn heat back up to high. Add pork and cook, breaking it up as you go. Cook for 2 minutes until the pork is cooked through, then add Sauce. Cook for 30 seconds, then add beans and stir for another 30 seconds.
  • Serve over rice. Garnish with slices of large red chilli (it's mild), entirely optional. To eat, mix the pork into the rice then eat it with a spoon - forget chopsticks for this one! (For a low carb, low cal option, try Cauliflower Rice)

Steps:

  • Stir-Fry Sauce: Combine the stir-fry sauce ingredients in a small bowl.
  • Set aside.
  • Stir- Fry: In a large skillet or wok.
  • Heat the oil and stir-fry the green beans,until they are barely crisp-tender, about 2 minutes.
  • Add water and continue stir-frying for another 2 minutes, until the beans are crisp-tender and the water has evaporated.
  • Add the sauce and continue stir-frying for 5 or 6 more minutes.
  • Until the beans are tender,BUT, not over cooked.

This is a great recipe for the green bean lover or hater. This is a simple recipe. I did some experimenting in my kitchen. I came up with this recipe. They have a touch of sweetness with some garlic. We love this as a side dish. They are gobbled up in no time. My family no longer hates green beans. They actually love these!

NOTE: YOU MAY WANT TO DOUBLE THE RECIPE. IN MY HOME. 2 OF US EAT ALL OF THE BEANS.
4 c (21 ounces) green beans rinsed and ends trimmed
2-3 Tbsp olive oil, extra virgin
3 cloves pressed or grated garlic
1/2 c divided water
1/4 c low sodium soy sauce
1 Tbsp hoisin sauce regular or gluten free

Steps:

  • 1. Trim ends and rinse green beans.
  • 2. Place 2 TB oil in a nonstick pan or Wok. Let oil heat on high temp. before adding green beans. Add in the green beans. Sir fry for a few minutes. Add in a 1/4 cup of water. Reduce heat to medium. Cover the beans. Check every minute. uncover the green beans and toss with spatula. The beans should about halfway cooked through. If not add a little bit more water.
  • 3. Uncover and let water cook off. When water cooks off. Add in some more oil. Toss beans. Add in the garlic and quickly stirfry until garlic is golden brown. About 2-3 minutes. Not burnt! The beans will take on a little bit of brownness as well. Add in the quarter cup of water, and sauce. Cook tossing the green beans. Cook until liquid reduces to half.
  • 4. Add in some more oil. Toss beans. Add in the garlic Add the hoison sauce. Mix to distribute well. stir fry for A few minutes . All liquid should have cooked off by now. Remove from heat and serve.

3 tablespoons soy sauce
3 tablespoons water
1½ tablespoons dry sherry
½ teaspoon Asian/toasted sesame oil
1¼ teaspoons sugar
½ teaspoon cornstarch
¼ teaspoon red pepper flakes
¼ teaspoon dry mustard
Vegetable oil
1 pound green beans, ends trimmed
7 ounces shiitake mushrooms, stems removed and sliced
3 cloves garlic
1 tablespoon grated fresh ginger

Steps:

  • In a small bowl, whisk the soy sauce, water, dry sherry, sesame oil, sugar, cornstarch, red pepper flakes and mustard together. Set aside.
  • Heat 2 tablespoons oil in a 12-inch nonstick skillet over high heat until very hot and shimmering. Add the beans and cook, stirring frequently, until tender, puckered and browned, about 7-10 minutes (cooking time will depend on the size of the beans). Transfer beans to large plate.
  • Add 1 teaspoon oil to pan. Add shiitake mushrooms and cook, stirring occasionally, for 3-4 minutes until slightly browned. Reduce heat to medium, then add the garlic and ginger and cook, stirring constantly, until fragrant, about 20 seconds. Return the beans to the pan and add the sauce. Toss and cook until the sauce is slightly thickened and the vegetables are evenly coated, about 10 seconds. Transfer to serving dish and serve immediately.
  • Note: This recipe works best with thinner green beans (but not the super thin French haricots verts). If your beans seem really long, thick or a bit tough, cut them in half so they cook evenly (there may be just a few in the bunch that you need to cut). Also, be sure beans are dry, otherwise oil will splatter.

8 ounces ground pork ((225g, can substitute ground chicken or beef))
1 tablespoon Shaoxing wine
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
2 tablespoons water
2 tablespoons ginger ((minced))
1/2 teaspoon sugar
1 teaspoon cornstarch
3 tablespoons oil ((divided))
1 pound green beans ((450g, chopped to ½-inch pieces))
2 tablespoons garlic ((minced))
1/2 red bell pepper ((diced finely))
4 red chilies ((chopped, optional))
1/4 teaspoon sugar
1 teaspoon sesame oil
1 tablespoon light soy sauce
1/4 teaspoon ground white pepper
1/8 teaspoon salt ((a pinch, or to taste))
2 tablespoons water

Steps:

  • Combine the ground meat with all the marinade ingredients. Stir until any standing liquid has been absorbed by the meat. Marinate for 15-20 minutes.
  • Heat 2 tablespoons of oil in a wok over medium heat. Add the chopped green beans. Stir and spread the beans into a single layer. Cook for 30 seconds. Then stir and repeat the spreading step several times until the green beans are slightly charred, wilted, and cooked through. Turn the heat lower if needed to avoid burning. It takes about 5-8 minutes to cook the green beans this way. (To speed up the cooking, add a few drops of water each you stir, to create some steam.) Transfer the cooked green beans to a dish and set aside.
  • Now add 1 tablespoon oil to the wok, with the heat turned up to high. Add the ground meat and brown it. Don't stir too much; give the meat a chance to brown and crisp. Once the meat has browned, reduce the heat to medium.
  • Next, add the garlic, bell pepper and chilies. Stir-fry for 1 minute. Add in the cooked green beans, ¼ teaspoon sugar, 1 teaspoon sesame oil, 1 tablespoon light soy sauce, ¼ teaspoon ground white pepper, a pinch of salt (to taste), and 2 tablespoons water. With the heat all the way up on high, stir-fry for a final 10-15 seconds and serve.
