SPICY CHILI AIOLI



Spicy Chili Aioli image

Originally inspired by a local sushi restaurant, I went through a number of different aioli recipes until I finally found a basic combination of ingredients, all of which have become the foundation for this and a couple of other recipes. We enjoy this on just about everything - crab cakes, fish tacos, sushi, vegetables, you name it... If you enjoy this, please also try my curry and saffron aioli recipes for a different twist... A couple of notes with respect to ingredients. Avoid substitutions where possible - I tried a number of different recipes before I arrived at this one, and some of them weren't so pleasant... Please consider using Hellman's original mayonnaise when making this recipe - avoid using Kraft, Miracle Whip, and sweet mayonnaises at all costs. If you use a low fat mayo, I also recommend Hellman's. Chili garlic oil can be found at just about any asian grocery - the main ingredients are garlic, chili, and oil. It is very thick in appearance and looks like the result of dried chilies, garlic, and oil being pureed in the food processor. This isn't to be confused with Sriracha or chili sauce. 1 cup mayonnaise
1 1/2 tablespoons lemon juice (fresh)
2 -3 garlic cloves, pressed
1 1/2 teaspoons chili garlic oil (not sriracha or chili sauce)
1 pinch cayenne pepper (sprinkled on top to garnish)

Steps:

  • Combine mayonnaise, and lemon juice with a wire whisk, mixing together until uniform.
  • Add pressed garlic and chili paste and continue to mix once again until uniform in texture.
  • Serve aioli in a small ramekin, bowl, or directly on top of food and garnish with a sprinkle of cayenne pepper. Serve cool to slightly below room temperature.

Make this easier version of chili verde using chicken and a tomatillo-based green salsa instead of roasting and pureeing fresh tomatillos. Note that this is a green chili made with chicken and not a chili made with green chicken. Sorry if this disappoints anyone. You can serve it with sour cream, avocado, cilantro, and corn tortillas or corn bread.

3 pounds skinless, boneless chicken thighs
kosher salt to taste
1 (24 fluid ounce) bottle tomatillo-based salsa verde
½ (4 ounce) can chopped roasted green chiles
3 cloves garlic
1 large jalapeno pepper, seeded and sliced
½ cup lightly packed cilantro leaves and stems
1 tablespoon ground cumin
1 teaspoon ground dried chipotle pepper
½ teaspoon freshly ground black pepper
¾ teaspoon dried oregano
1 teaspoon kosher salt, or more to taste
2 (15 ounce) cans white kidney beans, drained and rinsed

Steps:

  • Season chicken thighs with salt on both sides.
  • Transfer 1/2 the chicken to a dry, nonstick skillet over high heat. Cook until browned, about 4 minutes per side. Transfer to a bowl. Brown the rest of the chicken. Let cool to room temperature before cutting.
  • Combine salsa verde, green chilies, garlic, jalapeno, and cilantro in a blender. Blend, starting on low and finishing on high, until sauce is very smooth and bright green.
  • Cut chicken into bite-sized pieces and transfer back into the bowl. Combine chicken pieces, accumulated juices, and the green sauce into a pot. Season with cumin, chipotle pepper, black pepper, oregano, and salt.
  • Rinse out blender with a splash of water and pour into the pot. Mix together and set heat to medium-high. Bring to a simmer; reduce heat to medium-low. Simmer until chicken is tender, depending on size of chicken pieces, about 1 hour. Stir in kidney beans and simmer until thickened, about 15 minutes.

Adapted from a recipe by Michele Humes at Serious Eats. She says, "Use your favorite chili sauce-preferably one with a thicker consistency, such as Sriracha, as a runnier sauce will thin out your aïoli. You can also use cayenne pepper, but the aïoli will be paler in color."

1 large egg yolk
1/2 teaspoon Dijon mustard
2 teaspoons fresh lemon juice
1/2 cup neutral-flavored vegetable oil, such as canola
2 garlic cloves, very finely minced
fine salt
chili sauce or cayenne pepper, to taste

Steps:

  • Whisk together mustard, lemon juice and egg yolk in a bowl.
  • Add oil to yolk mixture a few drops at a time, whisking constantly, until all oil is incorporated and mixture is emulsified.
  • Whisk in garlic and chili sauce (or cayenne pepper) to taste. Season with salt. If aïoli is too thick, whisk in 1 or 2 drops of water; it should be creamy, but much looser in consistency than store-bought mayonnaise.

2 Egg yolks
1 tablespoon lime juice (about a half to one lime)
1 teaspoon garlic (finely minced (about 2-3 cloves))
¼ teaspoon sugar
½ teaspoon salt
2-4 tablespoons roasted green chile (minced)
¾ C Vegetable oil

Steps:

  • Place yolks, lime juice, garlic, sugar, salt, and green chile in food processor. Pulse to combine and emulsify. Alternatively, you can process in a bowl or wide mouth mason jar using an immersion blender.
  • Turn processor or immersion blender on and slowly pour in oil in a slow steady stream. Process until aioli thickens, about a minute. Turn processor off, scrap sides, process again until combined.
  • Serve immediately or store in air tight container in refrigerator until ready to use, up to a week. Makes approximately one cup.

Steps:

  • Place mayonnaise in a medium bowl and then add diced jalapeno peppers. A small dice works well here to maximize flavor.
  • Add chopped cilantro to the jalapeno and mayonnaise.
  • Add lime juice and salt and pepper
  • Stir until well blended.

  • Into the bowl of a food processor, add egg yolk, whole egg (minus shells) mustard and lime juice. Run the food processor for 1-2 minutes to really froth up the egg mixture. The volume will increase.
  • Using the pour spout of your food processor very very slowly pour the olive oil. This should take over a minute to add the oil. This allows the egg mixture and the oil to blend and thicken. If you pour it too fast it will be a much runnier aioli.
  • Once all oil is added, add green chilis, minced garlic, salt and cayenne pepper and blend for 30 seconds. Taste and adjust, salt, cayenne according to taste. Other flavor boosters can be added here too... (tobasco sauce, herbs)

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. For easy cleanup, line a large rimmed baking sheet with foil or parchment paper and place the poblanos, garlic, jalapeño, and onion in the center. Stir and cook, disturbing the pork as little as possible, until the pork is lightly browned on all sides, about 4 minutes. It will not be cooked all the way through. Remove to a plate and set aside. Repeat with the second half of the pork, remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Return all of the pork to the pot.
  • Sprinkle in the cornmeal, then stir to coat. Stir in the diced tomatoes in their juices, tomatillo salsa, 3 cups chicken broth, oregano, cloves, and chopped roasted vegetables.
  • Bring the chili to a simmer over medium-high heat, then reduce heat to medium low, partially cover the pot, and simmer for 20 minutes, stirring occasionally.


ROASTED HATCH CHILE AIOLI - THE DEFINED DISH - RECIPES
