Bright and tangy plant-based tacos with mango slaw, guacamole, and baked tofu.

4 fajita-sized flour tortillas
1 teaspoon olive oil
7 ounces baked tofu, storebought, sriracha or teriyaki flavor
2 ounces prepared guacamole (or half a small avocado, seeded and sliced)
1 cup coleslaw mix (about 3 ounces), or shredded cabbage
1/2 cup diced mango, about half a large mango
1/2 cup cilantro leaves, roughly chopped (see note)
A small chunk of red onion (about 1-inch wide), thinly sliced
Half a small jalapeno, seeded and diced (omit if you prefer less spicy heat)
Juice of 1 lime, about 2 to 3 teaspoons
1 teaspoon maple syrup or honey (optional)
Salt and Pepper, to taste

Steps:

  • In a large bowl combine the coleslaw mix, mango, cilantro, red onion, jalapeno, and lime juice. Toss well to combine. Taste and add a little maple syrup or honey and salt and black pepper as desired, set aside.
  • Remove tofu from packaging and slice into 8 equal pieces. Heat the oil in a large skillet over medium-high heat. Add tofu and cook until browned about 3 to 4 minutes on each side.
  • While the tofu is heating, warm the tortillas using one of the methods in the notes section. Once warmed through, place tortillas in a clean towel and cover to keep warm.
  • To assemble the tacos, spread tortillas with guacamole. Layer each one with 2 tofu pieces and 1/4 of the slaw mixture. Serve immediately with extra lime wedges, if desired.

I grew up vegetarian and love Mexican food. As a kid, we used to have bean tacos. Inspired by a family friend, and by my maturing taste buds, I created this recipe to liven up my vegetarian taco experience.This is, of course, just the filling, and you can add whatever toppings to your taco that you want. This recipe tends to match better with red taco sauces than with green ones. Extra filling can be reheated later or eaten cold as a mango tofu salsa. Enjoy!

3 tablespoons coconut oil, or more as needed
1 onion, chopped
1 serrano chile pepper, chopped
2 cloves garlic, finely chopped
2 (14 ounce) packages tofu, cut into chunks
1 bunch fresh cilantro, finely chopped (stems and leaves separated)
¼ (1 ounce) package taco seasoning mix, or more to taste
1 teaspoon ground cumin
1 teaspoon ground coriander
2 mangos, peeled and cut into small chunks
¼ (1 ounce) package taco seasoning mix
1 pinch chili powder, or to taste

Steps:

  • Cover the bottom of a skillet with coconut oil; warm over medium heat. Add onion, serrano pepper, and garlic; cook and stir until onion is lightly browned, about 10 minutes. Add tofu; stir to coat.
  • Stir cilantro stems, 1/4 package taco seasoning, 1 teaspoon cumin, and 1 teaspoon coriander into tofu mixture; cook and stir until fragrant and tofu is cooked through, about 5 minutes. Add mangos and 1/4 package taco seasoning; cook, waiting 3 to 5 minutes before stirring. Add chili powder and salt; stir to coat. Season with more cumin and coriander if desired.
  • Simmer tofu-mango mixture until most of liquid has evaporated, about 10 more minutes. Stir in cilantro leaves 1 minute before serving.

3 tablespoons low sodium soy sauce
¼ cup tomato sauce
2 teaspoons chili powder
2 teaspoons garlic powder
1 teaspoon cumin
½ teaspoon black pepper
1 pinch cayenne
olive oil, for drizzling
4 small corn tortillas
lettuce, shredded
tomato, diced
vegan shredded cheese, or regular
guacamole

Steps:

  • Preheat the oven to 400ºF (200ºC).
  • Use your hands to crumble the tofu into a medium bowl. Add the soy sauce, tomato sauce, chili powder, garlic powder, cumin, pepper, and cayenne and stir until well-combined.
  • Add a drizzle of olive oil to a large baking sheet. Transfer the tofu to the baking sheet, using a spatula to spread it out as much as possible.
  • Bake for 20-25 minutes, stirring halfway through, until golden brown and slightly crispy.
  • Fill the tortillas with the tofu, lettuce, tomato, shredded cheese, and guacamole.

This is a vegan sweet and spicy tofu stir fry that was inspired by a dish I get at my local Thai restaurant. I've been working through this recipe for several years now but finally have created something I love. Ensuring all of the ingredients are thinly cut results in uniform cooking as well as a crunchy and addictive texture. This recipe also works great with chicken if tofu isn't your thing!

1 (8 ounce) can diced pineapple, undrained
½ cup vegetable broth
1 mango - peeled, seeded and diced
1 habanero pepper, stemmed, or more to taste
1 (2 inch) piece fresh ginger, peeled and thinly sliced
4 cloves garlic
3 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon rice vinegar
½ teaspoon ground turmeric
1 (12 ounce) package extra-firm tofu, pressed and cut into thin strips
1 tablespoon cornstarch, or as needed
2 tablespoons vegetable oil
3 stalks celery, cut into very thin strips
2 large carrots, cut into thin strips
2 mangos - peeled, seeded, and cut into thin strips
2 green chile peppers, cut into very thin strips
salt to taste
1 tablespoon chopped fresh cilantro, or to taste
1 tablespoon chopped scallions, or to taste

Steps:

  • Combine pineapple, broth, mango, habanero, ginger, garlic, soy sauce, brown sugar, rice vinegar, and turmeric in a small saucepan. Simmer over medium heat, 10 to 15 minutes.
  • Pour sauce contents carefully into the bowl of a food processor or electric blender and mix until smooth. Set aside.
  • Place tofu in a large mixing bowl and add enough cornstarch to lightly coat all pieces.
  • Heat a wok over high heat. Add vegetable oil to the hot wok; heat until shimmering, about 1 minute. Add tofu and stir-fry until uniformly golden brown, about 5 minutes. Transfer tofu to a plate and set aside.
  • Place celery, carrots, mangos, and green peppers into the wok and stir-fry until they are soft and have a bright color while remaining firm, about 5 minutes. Add tofu back to the pan with sauce and combine well. Taste and add salt as needed. Serve topped with cilantro and scallions.

1 package extra firm tofu, drained and pressed
⅓ cup mayonnaise
⅓ cup mexican crema
1 tablespoon lime juice
½ teaspoon ancho chile powder
½ teaspoon kosher salt
⅓ cup rice wine vinegar
6 ¼ cups canola oil, divided
1 lemon, juiced
1 lemon, zest
¼ cup caper brine
1 nori sheet, roughly chopped
2 teaspoons sugar
½ teaspoon kosher salt, plus more to taste
1 ½ cups all purpose flour, divided
1 ¼ cups dark Mexican lager beer
8 flour tortillas
pico de gallo
red cabbage, finely shredded
lime, wedges

Steps:

  • Set the pressed tofu on a baking sheet and freeze for at least 4 hours, up to overnight. Let thaw completely, then cut into 8 ½-inch-thick strips. (Freezing is optional, but will give the tofu a meatier texture.)
  • Meanwhile, make the crema sauce: In a medium bowl, whisk together the mayonnaise, crema, lime juice, ancho chile powder, and salt. Cover and refrigerate until ready to serve.
  • In a wide, shallow dish, whisk together the rice wine vinegar, ¼ cup canola oil, lemon juice and zest, caper brine, nori, sugar, and salt. Add the tofu to the marinade and turn to coat. Cover and refrigerate for 30-60 minutes, flipping once halfway through.
  • Heat the remaining 6 cups of canola oil in a wide, shallow pan over medium-high heat until the temperature reaches 375°F (190°C).
  • Add ½ cup flour to a medium plate. In a medium bowl, whisk together the remaining cup of flour and the beer until a thick, but pourable, batter (similar to pancake batter) forms.
  • Working in batches of 4-5 strips at a time, remove the tofu from the marinade and dredge in the flour, shaking off any excess, then dip in the beer batter. Transfer to the hot oil and fry for 5-7 minutes, until golden brown on all sides. Transfer to a paper towel-lined plate and immediately sprinkle with salt.
  • Assemble the tacos: Add 1 piece of fried tofu to each tortilla, then top with 2-3 tablespoons of pico de gallo and a handful of shredded cabbage and drizzle with 1-2 tablespoons of the crema sauce. Serve immediately with lime wedges alongside.
