NERDMOM'S ARTICHOKE AND GREEN CHILI DIP
Served warm with crackers, bread, veggies or chips, this versatile dip is one I picked up at an office party. Have the recipe ready - people will ask! This is best from the oven, but a microwave at an office or someone else's home for just a few minutes is also excellent.

Steps:
- Pre-heat oven to 375 degrees F. if cooking in the oven. Spray baking dish with cooking spray. If using microwave, use glass cooking dish.
- Chop up artichoke hearts.
- Add cream cheese, sour cream & mayonnaise and mix until smooth (you may mix by hand or with beaters).
- Add green chilies and cheese. Mix again until well blended.
- Place in oven safe dish. Bake at 375 degrees for 35 minutes until bubbly and edges begin to brown or microwave for 8 minutes.
- Serve warm with crackers, bread, veggies or chips.

GREEN BEAN ARTICHOKE CASSEROLE
This is one of those "this might be good" type recipes. I tried it out and have been making it ever since. If you would like you could also add garlic and/or onion power for a little more flavor. Its also yummy as a dip. Recipe is easily doubled or tripled for large groups although I warn you, as you can see, I approximated the measurements.

Steps:
- Combine all ingredients except french fried onions in a casserole dish and mix well.
- (I usually do this with my hands so that the choke hearts get blended in well.) Top with onions and dot with butter.
- Cover and bake in a 400F oven for 15 minutes.
- Uncover and continue to bake for 15-20 minutes longer (or until onions start to brown).

- Preheat oven to 350 degrees.
- Give the drained artichoke hearts a rough chop so that there aren't any real big chunks.
- Mix artichoke hearts, green chiles, cheeses and mayonnaise.
- Spread evenly in a pie plate or an 8 inch square pan.
- Bake for 20 minutes, or until melted and bubbly.
- Serve warm with tortilla chips, slices of french bread (toasted or not), or cut veggies.

This recipe is always a hit at parties. I combined my two favorite recipes--artichoke chili dip and hot spinach dip--into this one recipe.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together the cream cheese and mayonnaise in a bowl until smooth. Stir in the green chiles, Parmesan cheese, artichokes, peppers, and spinach. Spoon the mixture into a baking dish.
