Green Chili Egg Casserole is an easy overnight breakfast casserole that is perfect for Christmas morning or any brunch occasion all year long!

12 large eggs
1/2 cup all-purpose flour, (scooped and leveled (70g))
1 teaspoon baking powder
1/2 teaspoon salt
1 pint cottage cheese ((about 2 cups))
3 cups shredded Mexican cheese blend ((or any combination of cheddar, monterey jack, and pepper jack))
6 Tablespoons salted butter, (melted)
8 ounces mild diced green chilies

Steps:

  • Preheat oven to 350 degrees F. Butter a 9x13-inch baking dish.
  • In a large bowl using an electric hand mixer or stand mixer, beat eggs until light.
  • Add flour, baking powder, and salt. Mix well.
  • Add cottage cheese, Mexican cheese blend, butter, and green chilies. Mix until combined. Pour into prepared baking dish. Bake immediately or cover and refrigerate overnight.
  • Bake, uncovered, for 35-40 minutes or until edges on top are browned and center is set and appears firm. Cool 5 minutes before cutting and serving.

This green chile egg casserole is a favorite for brunch or morning pot lucks! It has a great mexican flavors without being spicy, so it is friendly for adults and children alike.

6 oz monterey jack cheese (grated)
8 oz sharp cheddar cheese (grated)
7 oz canned mild chopped green chiles
2 tbsp flour
1/2 cup milk
8 eggs
Salt & pepper to taste

Steps:

  • Preheat the oven to 350˚F.
  • Mix the cheeses and then sprinkle 1 cup of the cheese (about 2/3) in the bottom of a casserole dish. Then dollop the green chiles evenly over the cheese.
  • Place the flour in the bottom of a bowl and use a whisk to slowly mix in a little of the milk to make a paste, then continue to pour the milk in while whisking until it is all smoothly combined. Then add the eggs into the milk, season with salt and pepper, and use the whisk to combine well. Pour the mixture into the casserole dish over the cheese and chiles.
  • Top the casserole with remaining cheese and then bake on the middle rack of the oven for 25-35 minutes or until eggs are set in the middle.
  • Remove from oven and let sit for 5 minutes then serve hot. Enjoy!

1/2 cup frozen corn, thawed
1/4 cup chopped roasted red bell peppers (from 7-oz jar)
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
1 1/2 cups shredded Colby-Monterey Jack cheese (6 oz)
10 eggs
1/2 cup small-curd cottage cheese
1/2 teaspoon dried oregano leaves
1/4 teaspoon garlic powder
4 medium green onions, chopped (1/4 cup)

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In baking dish, layer potatoes, corn, bell peppers, chiles and 1 cup of the shredded cheese.
  • In medium bowl, beat eggs, cottage cheese, oregano and garlic powder with wire whisk until well blended. Slowly pour over potato mixture. Sprinkle with onions and remaining 1/2 cup cheese.
  • Cover with foil; bake 30 minutes. Uncover; bake about 30 minutes longer or until knife inserted in center comes out clean. Let stand 5 to 10 minutes before cutting.

1 (1 lb) package frozen hash brown potatoes (can be patties)
12 -14 eggs
1/2 cup water
4 ounces diced green chilies
1 1/2 cups mild cheddar cheese, shredded
salt and pepper
salsa
tortilla

Steps:

  • Preheat oven to 350º.
  • Lightly spray a 9 x 13 baking dish with cooking spray.
  • Add hash browns to bottom of dish and sprinkle with salt and pepper. (If the hashbrowns are preseasoned, you can skip this step.).
  • (If you are going to add cooked sausage or bacon, place it on top of the potatoes.).
  • Add 1/2 of the cheese and half of the Chiles on top.
  • In a separate bowl mix the eggs, water and the remaining 1/2 of the Chiles with a wire whisk. Pour over the potatoes and top with the rest of the cheese.
  • Bake at 350 degrees for 45 - 55 minutes. Check the center for doneness by inserting a knife.
  • Serve with salsa and tortillas.
  • Another option would be to heat flour tortillas on a skillet and add a spoonful or two to a tortilla and roll it up for a breakfast burrito.

My family demands this casserole every Christmas morning. I've only once dared to try something new, and this was sorely missed! Make this for a brunch and I guarantee you will get recipe requests. This family-favorite is not very healthy, so it only comes out for special occasions.

½ cup butter
1 (16 ounce) package cottage cheese
1 pound shredded Monterey Jack cheese
2 (4 ounce) cans diced green chiles
10 eggs
¼ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Set butter in a 6x10-inch casserole dish; place dish in the preheating oven until butter is melted.
  • Mix cottage cheese, Jack cheese, green chiles, eggs, flour, baking powder, and salt in a large bowl using an electric hand mixer. Pour mixture into the melted butter in the casserole dish.
