HAM AND EGG BREAKFAST CUPS



Ham and Egg Breakfast Cups image

These cunning little ham and cheese cups make for an easy breakfast or a fun brunch treat-you can even prep this recipe, easy as they are, the night before.

Number Of Ingredients 6

6 thin slices of ham
6 tablespoons cheddar cheese (grated)
2 green onions
6 eggs
1 tablespoon milk
Cooking oil spray

Steps:

  • Gather the ingredients.
  • Preheat an oven to 350 F.
  • Spray a muffin pan (6 tins) with cooking oil or grease with butter. Ideally, use a nonstick muffin pan. Line each tin with a piece of ham. Let the center of each piece of ham drop into the bottom of the tin, then press it down and along the edges, letting the ham fold to fit the tin. Put 1 tablespoon of cheese in the bottom of each ham-lined tin. Set aside.
  • Trim the green onions and finely chop the white and light green parts. Discard the dark green tops or reserve for another use. Divide the chopped green onion evenly between the 6 tins.
  • Crack the eggs into a medium bowl. Whisk the eggs until smooth, with no puddles of yolks or strings of whites. Add the milk and whisk to combine.
  • Divide the egg mixture evenly between the 6 tins. Pour the mixture gently into the tins. As you pour, some of the egg mixture may flow in between the tin and the ham-don't worry, that's why you've sprayed the tin with oil!
  • Bake until the egg mixture puffs slightly and is set, about 20 minutes.
  • Let the ham and egg cups sit a few minutes before removing them from the tins. Use a spoon or small spatula to gently remove the ham and egg cups from the tins.
  • Serve immediately (although they aren't bad just warm or even at room temperature). Enjoy!

8 slices thinly sliced deli ham
1 divided into 4 pieces slice sandwich bread
4 eggs
1 cup thawed and squeezed dry frozen spinach
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup white cheddar cheese
4 slices toast
4 slices bacon

Steps:

  • Preheat oven to 400º
  • Lightly coat 4 cups in a muffin tin with cooking spray. Fit two of the ham slices into each cup (ham ends will be above cup edges). Divide bread among cups. In a blender, combine eggs, spinach, salt and pepper and blend. Divide mixture among cups. Sprinkle with cheese. Bake on middle oven rack until egg is cooked. Approximately 15-20 minutes. When warm enough to handle, remove the cups from the muffin tins and serve with a slice of toast and crispy bacon.

1 tablespoon extra-virgin olive oil
1 tablespoon butter
2 large shallots, finely chopped
1 (10-ounce) box frozen chopped spinach, defrosted in microwave and liquids drained
1/3 to 1/2 cup heavy cream, eyeball it
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
8 slices deli ham or prosciutto di Parma
8 eggs

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium skillet over medium heat, heat the extra-virgin olive oil and the butter and sweat the shallots a few minutes. Add the spinach and stir in the cream, season with salt, freshly ground black pepper and a little grated nutmeg. Cook the spinach, stirring occasionally, until the cream has thickened, 5 minutes. Adjust seasoning to your taste.
  • Fold each slice of ham or prosciutto in half and line the nonstick cups with 1 slice of meat each. Spoon a heaping tablespoon of the cooked spinach into each of the cups, then crack an egg into each, making sure it stays whole (hint - if you're worried about breaking the egg yolk, crack the egg into a small bowl first, then pour it into the muffin cup). Season the tops of the eggs with salt and freshly ground black pepper and bake in the oven until set, about 15 minutes. Allow the baked eggs to cool in the muffin cups for a couple of minutes before removing them from the pan. Serve immediately.

1/3 cup diced half-sour pickles, plus 2 tablespoons pickling liquid
1 tablespoon whole-grain dijon mustard
3 tablespoons extra-virgin olive oil, plus more for frying
1/2 cup roughly chopped fresh parsley
2 tablespoons minced fresh chives
2 tablespoons minced fresh tarragon
Kosher salt and freshly ground pepper
1 1/2 cups instant flour (such as Wondra)
1 cup milk
1 ham steak (about 1 pound), cut into 4 equal pieces
2 tablespoons capers, drained

Steps:

  • Place 2 eggs in a saucepan, cover with water and bring to a boil. Cook 8 to 10 minutes. Cool in a bowl of ice water. Peel the eggs, then separate the whites and chop them. Mash the yolks in a bowl, then whisk in 2 tablespoons warm water, the pickling liquid and mustard. Gradually whisk in the olive oil. Add 2 tablespoons parsley, the chives, tarragon, egg whites, pickles, 1/4 teaspoon salt, and pepper to taste.
  • Combine the flour, the remaining 6 tablespoons parsley and a pinch of pepper in a shallow dish. In another dish, beat the remaining egg with the milk. Dip each piece of ham in the flour to coat both sides, then dip in the milk mixture and re-dip in the flour mixture.
  • Heat 1/8 inch of olive oil in a large skillet over medium-high heat until sizzling. Fry the ham in batches until golden, about 4 minutes per side. Transfer to a paper-towel-lined plate. Fry the capers in the skillet until crisp, about 1 minute. Sprinkle the ham steaks with the capers, and serve the egg mixture on the side to spoon on top.

1 leek, white and tender green part only, thinly sliced
1 green onion, thinly sliced
salt and pepper to taste
2 cups beef broth
¼ cup flour
1 cup shredded Gruyere cheese
6 eggs
2 tablespoons heavy cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan.
  • Melt butter in a large skillet over medium-high heat. Stir in the leek, green onion, and salt and pepper; cook until soft and tender. Pour in the beef broth; whisk in the flour. Simmer until mixture becomes creamy and thick.
  • Line each muffin cup with 1 slice of ham to form a cup. Spoon about 1 tablespoon of the leek mixture into the bottom of each ham cup. Top with a heaping tablespoon of cheese. Press the cheese down lightly with a spoon. Beat eggs and cream in a large bowl. Divide egg mixture evenly between the ham cups.

nonstick cooking spray
3 thin slices ham
¼ cup shredded Gruyere cheese
3 large eggs
1 tablespoon milk, or as needed
3 leaves fresh basil, torn
½ teaspoon chopped fresh chives, or to taste
salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 6-cup muffin pan with nonstick spray, making sure the spray coats all sides of the cup.
  • Cut ham in half and place 1 piece in each cup, pressing it down so it forms a basket in the cup. Sprinkle a small amount of Gruyere cheese on the bottom of the ham.
  • Crack eggs into a a measuring cup. Add milk, basil, chives, salt, and pepper. Whisk until combined.

6 hard-boiled large eggs, halved
1/4 cup mayonnaise

CHEESE SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/4 cups milk
Dash salt and paprika
1 cup shredded cheddar cheese
2 tablespoons grated Parmesan cheese

Steps:

  • In a greased 11x7-in. baking dish, layer broccoli and eggs. Combine the mayonnaise, mustard, ham and onions; spread over eggs. In a saucepan, melt butter; add flour. Cook and stir until bubbly. Gradually add milk, salt and paprika; cook and stir until boiling. Cook and stir 2 minutes more. Remove from the heat; stir in cheddar cheese until melted. Pour over casserole.
