A former student gave me this recipe. He made it for lab one day and everyone thought they were awesome. I've made them since and gotten similar reviews.

6 eggs
2 ⅓ cups packed brown sugar
2 cups white sugar
½ tablespoon vanilla extract
4 teaspoons baking soda
1 cup butter
2 ⅔ cups peanut butter
9 cups rolled oats
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • Cream butter and peanut butter together. Add the sugars and stir until well mixed.
  • Add eggs one at a time, then add vanilla.
  • Mix oatmeal and baking soda separately, then stir into batter.
  • Add chocolate chips last.
  • Drop by heaping teaspoons onto cookie sheets. Bake for 12-15 minutes.

These cookies are great just from the oven, but even more amazing you can freeze them after baking and when you thaw them out they will be just as chewy and good as they were when they were fresh. Recipe is easily halved or doubled. Yummy!

1 cup margarine
1 cup butter
2 cups light brown sugar
2 cups white sugar
4 eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
4 cups rolled oats
2 cups semisweet chocolate chips
1 cup candy-coated chocolate pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a very large bowl, cream together the margarine, butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Combine the flour, baking soda, baking powder, salt and rolled oats; stir into the sugar mixture. Mix in chocolate chips and candy-coated chocolate pieces. Drop by tablespoonfuls onto the prepared cookie sheets.
  • Bake for 10 to 11 minutes in the preheated oven, or until the edges are golden. If you like chewy cookies, take them out before they look done.

2 sticks (1/2 pound) salted butter, softened
1 1/2 cups brown sugar, packed
1/2 cup white sugar
2 whole large eggs
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cup oats (either quick or regular)
1 cup chocolate coated candies, such as M&M's
3/4 cup chocolate chips (milk or semisweet)
1/2 cup pecans, chopped
2 1/4 cups rice cereal, such as Rice Krispies
Cold milk, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter with both sugars in a mixing bowl until fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat.
  • Combine the flour, salt, baking powder and baking soda. Add to the mixing bowl and mix until combined. After that, add in the oats, chocolate candies, chocolate chips and pecans in whatever quantity you prefer. Add the cereal at the very end, mixing until just combined. Do not over mix!
  • Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, about 20 to 25 minutes, and then allow to cool on a rack.
  • Serve with glasses of cold milk.

6 marshmallows
6 chocolate or vanilla cupcakes baked in black foil liners
1 can (16 ounces) vanilla frosting
Neon green food coloring
6 small chocolate-coated mints

Steps:

  • Trim a corner from one short end of each marshmallow. Attach the marshmallows, cut side down, on top of the cupcakes with a dot of frosting., Spoon 2 tablespoons of vanilla frosting into a small resealable bag; set aside., Tint the remaining vanilla frosting neon green with the food coloring. Spoon the neon green frosting into a resealable 2-qt. freezer bag. Snip a very small corner (1/8 in.) from bag. Pipe dots of frosting along the outer edge of the cupcake with a pipe-stop-and-pull action to create spikes of frosting. Continue piping all over the cupcakes to completely cover all but the flat side of the marshmallow. Repeat with the remaining cupcakes and frosting., Snip a very small corner (1/16 in.) from the bag with the vanilla frosting. Pipe a dot of vanilla frosting in the center of each marshmallow and attach the chocolate-coated mint. Pipe a small line to add as the sparkle in the eye.

1 cup salted peanuts
2 cups all-purpose flour

Steps:

  • In a large bowl, cream peanut butter, butter and sugars. Add eggs, 1 at a time, beating well after each addition. Add baking soda and vanilla. Add oats, M&M's, butterscotch chips and peanuts; let stand for 10 minutes. Stir in flour (the dough will be crumbly)., Shape by 1/4 cupfuls into balls. Place on greased baking sheets, about 9 cookies on each sheet. Gently flatten cookies. Bake at 325° for 15-18 minutes or until edges are lightly browned. Remove to wire racks.

6 packages (0.71 oz each) Dallies™ gummy eyeballs (36 eyeballs total)

Steps:

  • Heat oven to 375°F. Make regular-size cookies as directed on pouch. Cool completely, about 15 minutes.
  • Meanwhile, divide frosting into 3 bowls, about 3/4 cup each. Stir 1/4 teaspoon gel food color into each bowl of frosting to make 3 different colors.
  • Frost bottoms of 2 cookies using same color; place about 6 mini marshmallows on frosting of one cookie for teeth. Top with second cookie, frosted side down.
  • Spread another color frosting on top of sandwich cookie; attach gummy eyeballs and miniature marshmallow nose. Repeat for remaining cookies.

1 cup butter
1 1/4 cup sugar
1 large egg
2 egg yolks
2 teaspoons vanilla
1 teaspoon baking soda
2.5 cups all purpose flour
1/2 teaspoon cream of tartar
1/2 teaspoon salt
3-4 tubes Gel Food Coloring (favorite Halloween colors)
candy eyeballs, various sizes

Steps:

  • Preheat oven to 350 degrees and line a cookie sheet with parchment paper
  • Start by creaming together the sugar and butter in a large mixing bowl. Add in the egg and egg yolks one at a time and beat into the mixture before adding the next one.
  • Mix in the vanilla and salt
  • In a separate bowl, mix together the flour, baking soda, cream of tartar and then slowly incorporate into your sugar batter.
  • Chill your cookie dough in the refrigerator for 30 minutes. Once chilled, separate batter into three or four batches and add in a dollop of food coloring to each batch.. beat until well mixed.
  • Spoon or scoop into 1 inch balls and place them on your cookie sheet - do no flatten!
  • Bake for 10-12 minutes. Remove from oven and immediately gently press candy eyeballs onto the cookies while they are still warm .. let cookies sit on the cookie sheet for 1 minute before moving the cookies to a wire rack
  • Let cool and enjoy!!

30 -42 dill pickle slices

12 ounces plain M&M's (green ( measurement is apprx.)
1/2 cup butterscotch chips
1 cup rough chopped walnuts

Steps:

  • Mix the ingredients in the order given. This is easy to do by hand and you don't need a mixer.
  • The M&M's, chips, and nuts can vary to your preference and only need a stir by hand to incorporate them. Don't let them get mashed by your mixer.
  • Drop by the spoonful onto a cookie sheet.
  • Bake at 350* for 12-15 minutes.
  • Also, you can do these as bar cookies and they are FABULOUS. Spray 9x13 pan with oil, dump the dough in (I used about 3/4 of the recipe) and mash it to an even consistency. Bake for 35-45 minutes at 350*.
