8 bacon strips, cut in half
1/2 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
6 green onions, chopped
1 tablespoon garlic powder
1 tablespoon ground cumin
1/2 teaspoon pepper
2 pounds ground sirloin
8 ounces sliced mushrooms
2 baby bok choy, quartered and core removed
8 large eggs
8 potato hamburger buns, toasted

Steps:

  • In a large skillet, cook bacon over medium-low heat until crisp. Remove to paper towels to drain; reserve drippings., Meanwhile in a large bowl, combine teriyaki, hoisin, onions, garlic, cumin and pepper. Add beef, mixing lightly but thoroughly. Shape into eight 1/2-in.-thick patties. Grill burgers, covered, over medium heat until a thermometer reads 160°, 5-7 minutes on each side. Keep warm., In the same skillet, cook mushrooms in 2 tablespoon bacon drippings over medium-high heat until golden, 5-7 minutes. Add bok choy to skillet; cook until tender. Remove and keep warm., In the same skillet, fry eggs in remaining bacon drippings over medium heat until desired doneness. Serve burgers on buns with bacon, bok choy, mushrooms and fried egg.

3 tablespoons oyster sauce
½ teaspoon white sugar
2 teaspoons cornstarch
2 tablespoons peanut oil
1 pound flank steak, thinly sliced
6 green onions, cut into 1/2-inch pieces

Steps:

  • In a small bowl, mix the sherry, oyster sauce, sugar, and cornstarch.
  • Heat the oil in a skillet, and cook the flank steak about 3 minutes. Stir in sherry sauce mixture. Add the green onions, and continue cooking 10 minutes, or until the flank steak is evenly brown and the green onions are tender.

I'm not sure where this recipe came from, but it's been one of my favorites since I was a kid. Now that I'm grown up, I make it for my husband and he loves it, too.

4 potatoes
1 pound lean ground beef
1 onion, chopped
2 (10.75 ounce) cans condensed tomato soup
1 (15 ounce) can green beans, drained
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Peel and quarter potatoes, and introduce into boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside.
  • In a large skillet over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese.
  • Bake in preheated oven 30 minutes, until potatoes are golden.

Hamburger, tomato soup, green beans and mashed potatoes--sounds gross! You will be surprised, this is really good!! This is an old recipe, I remember my mom making it over 30 years ago. There is not much you have to add to make it a meal, maybe some buttered bread.

1 lb lean ground beef
1/2 onion, chopped
1 (10 3/4 ounce) can tomato soup
1 (15 ounce) can green beans
5 large potatoes
milk (to mash potatoes)
2 tablespoons butter
salt
pepper

Steps:

  • Cook potatoes until tender, mash with milk, butter, salt and pepper.
  • While potatoes are cooking, brown ground beef and onions, drain off fat.
  • Drain liquid from green beans.
  • Stir tomato soup and green beans in to ground beef.
  • Season to taste with salt and pepper.
  • Turn beef mixture in to a 1 1/2-quart casserole dish.
  • Spoon mashed potatoes over the top.
  • Bake, uncovered, in a 350°F oven for 30 minutes.
  • (Note: you may want to place a sheet of foil under the casserole dish, this tends to "bubble over").

5 slices bacon, chopped
4 scallions, cleaned and trimmed
Extra-virgin olive oil, for drizzling
1 1/3 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning blend or coarse salt and black pepper
1/2 pound extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or reduced fat mayonnaise
1 teaspoon ground cumin
Salt and pepper
4 crusty Kaiser rolls, split
4 leaves crisp romaine lettuce

Steps:

  • Preheat grill pan over high heat.
  • In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
  • Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.
  • Combine ground beef with Worcestershire and steak seasoning or salt and pepper. Divide meat into 4 equal parts. Combine cheese crumbles and cooked bacon. Take 1/4 of the meat in your hand and make a well in the center of it. Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling. Make sure the fillings are completely covered with meat. When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer burgers to a plate and let them rest 5 minutes before serving.
  • Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste.
  • Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. As you bite into the burgers, you will find a smoky, cheesy surprise at the center.

3 eggs
1 cup milk
2 cups herbed croutons
1 teaspoon Worcestershire sauce
1 tablespoon green onion, chopped
1 1/2 teaspoons salt
3/4 lb lean ground beef
1 tablespoon butter or 1 tablespoon margarine
2 cups green onions, sliced
1 (8 ounce) package cream cheese, softened
2 tablespoons flour
3 -4 drops hot pepper sauce
paprika (to garnish)

Steps:

  • Beat eggs until foamy. Stir in 1/2 cup milk and croutons. Let stand a few minute until most of liquid is absorbed. Add Worcestershire, chopped green onions, 1 teaspoons salt and beef. Mix just until combined.
  • With back of tablespoon, press meat mixture lightly into bottom and around sides of 9-inch pie pan to form a shell.
  • Melt butter in skillet. Add sliced green onions and cook over very low heat, stirring occasionally, until onions are slightly wilted and bight green.
  • Meanwhile, place cream cheese in small mixer bowl and beat until light and fluffy. Add flour, remaining 2 eggs, hot pepper sauce and 1/2 teaspoons salt. Beat well. Gradually add remaining 1/2 cup milk and mix until smooth. Spread green onions evenly over bottom of meat shell. Pour cheese mixture, over onions and sprinkle with paprika.
  • Bake at 350 degrees about 40-50 minutes or until knife inserted near center comes out clean. Let stand a few minutes before cutting into wedges.
