JUST LIKE STEPHENSON'S GREEN RICE
The green rice at Stephenson's Apple Orchard Restaurant is just incredible. I know that there are several green rice recipes on here- but If you are from the K.C. metro area and are looking for a "green rice" recipe -this is probably what you are looking for. The unique greeny- lemony flavor mixed with the slightly creamy texture is deliciously unique- your taste buds will thank you!

Steps:
- Combine the rice, parsley, cheese, green pepper and garlic in a greased casserole dish.
- Blend together the remaining ingredients and add to the rice mixture.
- Bake at 350°F for 45 minutes or until it is like a custard.
- It can be garnished with paprika before baking if you wish.

GREEN RICE /RESTAURANT STYLE
This recipe is from Mexican restaurant in Las Vegas at the Stations. This is so good I always get this in place of the white rice. Try it you will love it too!

Steps:
- Bring rice and vegetable broth to a boil. Reduce heat, cover and simmer for 20 minutes, until liquid is absorbed and rice is tender. Remove from heat let stand 5 minutes.
- Combine in a blender the the avocado pieces, lime juice,lime zest and olive oil. Pulse a few times. Add cilantro and cayenne pepper if using. Blend until smooth, adding a little tequila as needed to make the mixture the consistency of dairy sour cream.
- Stir the rice with a fork to fluff and add the chopped onions and garlic and dash of salt if desired. Stir avocado mixture into the rice and serve warm. If you like serve with a dollop of sour cream and sprinkle with chopped green onion tops.

Steps:
- In a large saucepan, saute onions and parsley in oil and butter for 1 minute or until tender. Add rice; cook over medium heat until rice is coated with oil and translucent, about 3 minutes. Stir in the broth, cayenne and bay leaf. Bring to a boil., Reduce heat; cover tightly and simmer for 18-20 minutes or until liquid is absorbed and rice is tender. Discard bay leaf.

INSTANT POT MEXICAN GREEN RICE RECIPE

- Prepare Ingredients - *Rinse rice until water runs clear. Add chopped cilantro and 1/2 cup chicken stock to blender. Puree and set aside. Dice white onion. De-seed, mince jalapeno. Mince garlic. Set aside.
- Set instant pot to "Regular" saute setting. When pot reads "hot". Add oil and butter. Let butter melt. Add onion, and garlic. Saute stirring often until onions are soft. (2-3 minutes) Add oregano, cumin, minced jalapeno (if using) and continue saute for 1 more minute.
- Add rinsed white rice and saute for 2 more minutes. Switch off Instant Pot's saute setting. Instant Pot will read "off".
- Add cilantro-stock puree, salt, remaining 1 cup chicken stock, 2 tbsp of water and 2 tbsp lime juice. Check **seasoning - salt. Stir to mix well. Pressure cook at high pressure for 4 minutes. Let pressure ****Natural Release. After 15 minutes, open and fluff rice with fork. Add remaining cilantro. Serve warm with side of lime wedges. Enjoy!
