This is from a very old Bon Appetit Barbecue magazine. I've made it many times for special occasions - most recently tonight, for New Year's Eve with steak and salad. Can easily be halved for dinner for two.

2 cups whipping cream
1 (5 ounce) package boursin cheese
3 lbs red potatoes, unpeeled, thinly sliced
1 1/2 tablespoons fresh parsley, chopped

Steps:

  • Preheat oven to 400 degrees (200 C). Butter 9x13 inch baking dish with 2-inch high sides.
  • In saucepan, stir cream and Boursin over medium heat till Boursin melts and mixture is smooth (alternatively, heat cream in large bowl in microwave till very hot, then mix in Boursin till blended smooth).
  • Arrange half of sliced potatoes in baking dish in slightly overlapping rows. Generously season with salt and pepper and pour half of cream mixture over.
  • Repeat with remaining potatoes and cream.
  • Bake until top is golden brown and potatoes are tender when pierced with knife, about one hour.
  • Sprinkle with fresh parsley and serve.

3 lbs red potatoes, peeled,thinly sliced

Steps:

  • Preheat oven to 400 degrees.
  • Butter 9x13 baking dish with 2" high sides.
  • Stir cream and boursin in heavy saucepan over medium heat until cheese melts and mixture is smooth.
  • Arrange 1/2 of the potatoes in baking dish, season and pour 1/2 ov the cream mixture over.
  • Repeat Bake until top is golden and potatoes are tender.
  • About 1 hour.

Steps:

  • Preheat oven to 400°. Butter 9x13" baking dish with 2" high sides. Stir Boursin cheese and whipping cream in large heavy sauce pan until cheese melts and mixture is smooth. Arrange half of the potatoes in baking dish in slightly overlapping rows. Generously season potatoes in dish with salt and pepper. Pour half of cheese mixture over. Arrange remaining potatoes in slightly overlapping rows atop potatoes in dish. Generously season with salt and pepper. Pour remaining cheese mixture over potatoes. Bake until top is golden brown and potatoes are tender when pierced with a knife, about 1 hour and 15 minutes. Sprinkle with chopped fresh parsley and serve.

■ 2 cups heavy whipping cream
■ 1 package (5.2 ounces) Boursin cheese with black pepper
■ 2 tablespoons minced shallots
■ 2 garlic cloves, peeled, crushed
■ 2 teaspoons olive oil
■ 2 1/2 to 3 pounds Yukon gold or red-skinned potatoes, peeled and sliced 1⁄3-inch thick
■ Salt and freshly ground black pepper
■ 2 tablespoons minced fresh chives, divided
■ 1/2 cup (2 ounces) shredded Parmesan cheese, optional
■ 2 tablespoons chopped fresh parsley, optional

Steps:

  • Preheat the oven to 400 degrees. In a saucepan, place the cream, Boursin, shallots and garlic and heat over low heat. Cook, stirring, until the Boursin melts and the mixture thickens slightly, about 5 minutes. Meanwhile, brush a 13-by-9-inch baking dish with the olive oil. Arrange half of the potato slices in the dish, overlapping as needed. Season the potatoes with salt and pepper and sprinkle with 1 tablespoon chives. Pour half of the Boursin mixture over the potatoes. Arrange the remaining potato slices on top, season with salt and pepper and scatter remaining 1 tablespoon chives over them. Pour the remaining Boursin mixture over the potatoes. Scatter the Parmesan cheese over the top, if desired. Bake the gratin, uncovered, until it is deeply browned and the potatoes are tender, 45 to 50 minutes. You can serve the gratin at once, garnished with chopped parsley, or let it rest 15 to 20 minutes before serving.
