8 tomatillos, husked
3 shallots
2 cloves garlic, peeled
1 (4 ounce) can chopped green chile peppers
¼ cup chopped fresh cilantro
1 fresh jalapeno pepper, seeded
salt to taste

Steps:

  • In a food processor, place tomatillos, shallots, garlic, green chile peppers, cilantro, jalapeno pepper and salt. Using the pulse setting, coarsely chop. Cover and chill in the refrigerator until serving.

This is a green salsa I learned while in Mexico. It is a green salsa with avocado and it is delicious! I always make it when we do carne asada. I am always begged for the recipe. Enjoy!

10 fresh tomatillos, husks removed
2 fresh jalapeno peppers, stems removed
1 bunch fresh cilantro, stems trimmed
3 avocados, peeled and pitted
1 tablespoon garlic powder
salt to taste

Steps:

  • Bring a pot of water to a boil and stir in tomatillos and jalapenos. Boil until tomatillos turn bright green and soft, about 10 minutes.
  • Place cilantro, avocados, cooked tomatillos, and cooked jalapenos into a blender, working in batches if necessary. Blend until smooth, 1 to 2 minutes. Add about 1 tablespoon of tomatillo cooking water, or as needed, if salsa is too thick.
  • Stop the blender, and season the salsa with garlic powder and salt to taste. Blend again briefly to mix in the seasonings. Transfer to a bowl for serving.

2 pounds tomatillos, husked and cut in half
3 green tomatoes, chopped
½ cup olive oil
2 mild chile peppers, chopped
1 shallot, chopped
5 sprigs cilantro, chopped
⅓ cup distilled white vinegar
¼ cup garlic powder to taste
1 teaspoon salt

Steps:

  • Place the tomatillos, tomatoes, oil, chili pepper, shallots, cilantro, vinegar, garlic powder, and salt in a large saucepan over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer for 15 to 20 minutes until the tomatillos have softened. Pour into a blender, and puree until smooth. Chill and serve.

1 avocado, peeled, pitted, and diced
2 tomatoes, diced
1 red bell pepper, diced

4 fresh tomatillos - husked, rinsed, and chopped
1 jalapeno pepper, chopped
3 small garlic cloves
3 avocados - peeled, pitted, and sliced
4 sprigs cilantro
1 teaspoon salt
1 ½ cups sour cream

Steps:

  • Stir tomatoes, tomatillos, jalapeno pepper, and garlic together in a saucepan; bring to a boil, reduce heat to low, and cook at a simmer until the tomatoes and tomatillos soften, 10 to 15 minutes. Remove saucepan from heat and let tomato mixture cool slightly.
  • Pour cooled tomato mixture into a blender pitcher; add avocado slices, cilantro, and salt. Blend the mixture until smooth; transfer to a bowl.

This is a very traditional salsa from the region of Jalisco. It tastes best when the tomatillos are small and tinged with purple. It goes great with any meat or seafood, especially good with carne asada. The yield and number of servings is approximate.

1/2 lb tomatillo
1/2 small garlic clove
2 -3 dried chilies (chiles de arbol)
1/4 cup water
1 1/2 teaspoons salt

Steps:

  • Peel and rinse the tomatillos. Heat a griddle or a small nonstick skillet over low heat. Add the tomatillos and broil, turning often with a spoon, until the skins are blackened and the tomatillos are very soft, do this over low heat so that they don't burn. They wont all be ready at the same time, so remove the ones that are ready before the rest. Set aside.
  • Add the chiles to the griddle, turning the over constantly, until they darken, again being careful not to burn them.
  • Remove the chiles and put them in a blender with the tomatillos, the garlic, the water and the salt. Puree just until no large pieces remain, it should have some texture. Taste before serving and adjust the salt to your taste. If it comes out too hot you can always add more tomatillos.

Although I refused to eat it until about a week ago (it was green and well it creeped me out) I have now seen the light. This stuff is amazing! I love it! The cilantro is just so awesome. So naturally I had to find a recipe and try it out! :) I found this recipe on the Dabble posted by someone named Annie and it is pretty darn close! :) Cook time is chill time.

3 (11 ounce) cans tomatillos
1/2 small white onion
3/4 cup cilantro (or to your taste)
1 tablespoon lime juice
1/4 teaspoon sugar
1 1/2 jalapenos, medium seeded and chopped (can use serrano or a mix of the jalapenos and serrano)
1/4-1/2 teaspoon salt (to your taste)

Steps:

  • Chop onion and pepper into chunks that the food processor can better handle.
  • Place all ingredients in the food processor or blender and pulse to your desired consistency. .
  • Place in bowl and cover with saran wrap, then place in the refrigerator to allow the flavors to blend for at least a half an hour. Just add your favorite tortilla chips or on one of the above-mentioned foods and enjoy.
