VEGAN MATCHA ALMOND THUMBPRINT COOKIES



Vegan Matcha Almond Thumbprint Cookies image

Gloss the tops of these egg- and dairy-free almond cookies with an earthy-sweet green tea frosting.

Number Of Ingredients 15

Cookies:
1 1/2 teaspoons Ener-G Egg Replacer
2 tablespoons water, lukewarm
3/4 cup almond paste
1/2 cup agave nectar
5 tablespoons Earth Balance
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/4 cups flour
1/4 teaspoon salt
Frosting:
1 tablespoon matcha powder
2 tablespoons Silk vanilla creamer
1/2 cup Earth Balance vegan butter, at room temperature
3 cups powdered sugar, sifted

Steps:

  • Preheat the oven to 325°F. Lightly grease a cookie sheet and set aside. In a small bowl, stir together the egg replacer and water and set aside. Using an electric mixer, beat the almond paste, agave nectar, and Earth Balance until creamy. Add the extracts and the egg replacer mixture and continue beating. Stir in the flour and salt to create a soft dough.
  • Using a teaspoon, create small balls of cookie dough and drop them on the prepared cookie sheet, leaving plenty of room between cookies. Push your thumb down into each cookie to create an imprint. Bake for 15 minutes, until the edges begin to harden. Transfer the cookies to a wire rack and allow them to cool.
  • For the frosting, mix the matcha powder with the creamer in a small bowl to create a paste. In a medium bowl, beat the Earth Balance briefly and scrape the bowl. Add the powdered sugar and matcha paste, and beat again until smooth. Once the cookies have cooled, use a teaspoon to scoop some matcha frosting into each thumbprint.

2 cups all-purpose flour, plus more for dusting
2 tablespoons finely ground green tea leaves (from about 8 tea bags)
1 tablespoon matcha
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1/2 cup plus 2 tablespoons confectioners' sugar

Steps:

  • Whisk together flour, tea, matcha, and salt in a small bowl. Cream together butter and sugar in a mixer bowl on medium until pale and fluffy, about 3 minutes. On low, slowly mix in flour mixture until just combined.
  • Divide dough in half. Transfer each half to a piece of parchment paper; shape into logs 1 1/4 inches in diameter. Roll each log in parchment, pressing a ruler along edge of parchment at each turn to narrow log and force out air. Freeze 1 hour.
  • Preheat oven to 350 degrees. Unwrap frozen logs and slice 1/4 inch thick. Place an inch apart on parchment-lined baking sheets. Bake until edges turn golden, 13 to 15 minutes. Let cool on baking sheets on wire racks.

2 teaspoons baking powder
2 tablespoons green tea powder (matcha)
½ cup nonfat milk

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • Beat the butter, vegetable oil butter spread, sweetener, and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add the room-temperature egg whites one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in the vanilla and almond extracts with the last egg. Combine cake flour, baking powder, and green tea powder in a small bowl. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Pour the batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

2 elmstock green tea bags (do not use low quality green tea)
1 1/2 cups almond flour (If unavailable substitute with all purpose flour or whole wheat flour and 1 teaspoon almond essence)
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup raw sugar or 2/3 cup honey
1/3 cup canola oil
3 tablespoons butter or 3 tablespoons earth balance natural shortening
1 large egg
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Combine flour, baking powder and salt and contents of the two Elmstock green tea bags in a bowl
  • In a mixing bowl blend butter, oil, sugar or honey well by hand or with an electric mixer
  • Add egg and vanilla and beat until smooth.
  • Add the flour mixture gradually until al ingredients are well blended
  • Store covered in the refrigerator for an hour.
  • Grease baking sheet.
  • Drop one tablespoon mounds two inches apart on baking sheet
  • Press an almond sliver in center of mound (optional).
  • Bake for 15 minutes until light golden brown.
  • Cool and serve.

2 egg whites, at room temperature

⅓ cup chopped dark chocolate
6 tablespoons butter, at room temperature
⅔ cup powdered sugar

Steps:

  • Line 2 baking sheets with parchment paper. Don't use waxed paper.
  • Mix powdered sugar, matcha powder, and food coloring in a medium bowl. Sift mixture into another bowl and set aside.
  • Beat egg whites and salt in a glass, metal, or ceramic bowl using an electric mixer until medium peaks form. Sprinkle in white sugar and beat until stiff peaks form. Mix in the matcha sugar until just combined; no color ribbons should remain.
  • Scoop some batter into a piping bag fitted with a medium round tip. Pipe out 1-inch cookies about 1 inch apart onto the prepared baking sheets. Let sit until dry, 1 to 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake cookies in the preheated oven until set, 5 to 10 minutes, watching that they do not brown too much.
