My family loves these tasty potatoes. There are never leftovers. Once the potatoes are all tucked in their foil packets, they can wait overnight to be grilled the next day. Great for camping. Check foil packets at 15 and 30 minutes to ensure they are not burning. May require a few more minutes to ensure all is cooked through.

1 cup mayonnaise
¼ cup shredded Parmesan cheese
3 cloves garlic, minced
¼ teaspoon red pepper flakes
½ teaspoon paprika
¼ teaspoon salt
¼ teaspoon ground black pepper
3 large baking potatoes, cut into 1/4-inch slices
1 large sweet onion, sliced
4 12x12-inch squares aluminum foil
cooking spray

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Stir mayonnaise, Parmesan cheese, garlic, red pepper flakes, paprika, salt, and pepper together in a large bowl. Add potatoes and onion; stir to coat completely.
  • Arrange aluminum foil squares on a work surface and spray each with cooking spray. Divide potato mixture between the four squares. Fold aluminum foil over potato mixture and crimp edges together to form a secure pouch.
  • Cook on the preheated grill until potatoes are tender, about 30 minutes.

Grilled red potatoes are tossed with onions, butter, and seasonings. They'll be your new favorite side dish!

3 pounds red potatoes
1 small onion (sliced)
¼ cup butter (cubed, more to taste)
3-4 cloves garlic (sliced)
2 teaspoons fresh rosemary (chopped, or ½ teaspoon dried and slightly crushed)
salt & pepper (to taste)

Steps:

  • Wash potatoes and cut into bite size pieces. Place in a microwave safe bowl and cover tightly with plastic wrap. Microwave for 3-4 minutes or just until fork tender.
  • Preheat grill to medium-high heat.
  • Add seasonings to the potatoes. Toss to coat.
  • Lay out a sheet of heavy duty aluminum foil approximately 2 feet in length. Spray with cooking spray.
  • Add the potatoes, onions & garlic on one half of the foil and top with butter. Fold the other half of the foil over top. Roll the edges of the foil on all sides to create a tight seal.
  • Place the potatoes on the grill and cook 25-30 minutes, turning occasionally. Cook until the potatoes are tender and golden brown.
  • Serve warm with sour cream or desired toppings.

Grilling red potatoes and onions makes them crispy and delicious

Number Of Ingredients 4

1.5 Pound Bag of Red Potatoes
1 Medium Red Onion (Sliced)
1/4 Cup Olive Oil
1 Tablespoon Chopped Fresh Rosemary

Steps:

  • Wash the potatoes thoroughly and pierce each a few times with a fork
  • Place them on a microwave safe plate, cover with a paper towl, and microwave them for 5 minutes. You are trying not to cook them all the way through. They should be just slightly tender to the touch
  • Let them cool for a few minutes and then cut each in half. Place them skin side up on a paper towel.
  • Slice the onion and place in a large mixing bowl
  • Just before grilling, quarter the potatoes and add them to the bowl with the onion. Toss with the oil. Salt and Pepper as needed
  • Transfer to a wire grill basket and cook for 20 minutes over a medium flame. If you have a grill thermometer, keep it between 375 and 425 degrees. Monitor them regularly and stir to prevent over cooking
  • Add the chopped rosemary right before serving

4 large red-skinned potatoes, scrubbed and cut into 1/2-inch rounds
1 red onion, peeled and cut into 1/2-inch rounds
1 sprig rosemary, leaves finely chopped
2 cloves garlic, smashed
Pinch crushed red pepper flakes
Kosher salt
Extra-virgin olive oil

Steps:

  • Preheat the grill and brush with a metal grill brush to loosen any crud and soot. After the grill has been brushed, run an oiled towel over the grill to pick up any loosened crud.
  • In a large bowl, toss the potatoes and onions together with the rosemary, garlic, crushed red pepper, salt, to taste, and a little olive oil. Try to keep the onions together in rounds, they will fall apart while grilling but try and keep them together as long as possible; it just makes things easier.
  • Arrange the potatoes and onions on the preheated grill. Once the potatoes have developed lovely grill marks, rotate them a quarter turn to create a lovely crosshatch pattern, (dont worry about the onions, they fall apart and you wont see the marks). Turn the potatoes over and repeat the process, turn the onions over to cook the other side as well. Cook the potatoes and onions until they are soft all the way through, about 8 to 10 minutes on each side.
  • Remove from the grill and serve hot or at room temperature.
  • Who knew you could grill a potato!

1 teaspoon garlic powder
1 teaspoon kosher salt
3/4 teaspoon smoked paprika
1/2 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill to medium-high heat.
  • In a microwave-safe casserole dish, add the potatoes in a single layer. Cover with a damp paper towel and microwave until tender, 12 to 15 minutes. Let cool for 5 minutes.
  • In a small bowl, combine the garlic powder, salt, smoked paprika and black pepper.
  • Drizzle the olive oil over the potatoes and toss to coat well. Add the spice mixture, rosemary and thyme and toss gently to coat.
  • Add the potatoes to the grill cut-side down and cook until grill marks form, about 4 minutes. Flip and cook for 3 more minutes. Garnish with the parsley.

1 bottle (8 ounces) zesty Italian salad dressing

Steps:

  • Cut each potato into five slices. Place onion between slices and sprinkle with salt and pepper. Reassemble each potato; place on a double layer of heavy-duty foil (about 12 in. square)., Pour 2-4 tablespoons of salad dressing over each potato. Wrap foil around potatoes and seal tightly. 1 lb red potatoes
1 cup margarine (melted) or 1 cup butter (melted)
1 teaspoon seasoning salt
salt and black pepper, to taste

Steps:

  • Preheat grill.
  • Dice up the red potatoes and place on heavy duty foil or a grill pan.
  • Spray foil or pan with Pam or a cooking spray of choice.
  • Add potatoes to foil or pan.
  • Mix together melted butter with seasoning salt and pour over potatoes. Stir gently.
  • Sprinkle salt and black pepper to taste.
  • Close foil sightly and grill until tender.
  • Time depends on how fast your grill cooks. Mine was about a hour on low heat.
  • NOTE: you can add onion and green or red peppers with the diced potatoes. Also you can make this recipe in oven at 350' for 1 hour.
