GRILLED BRIE AND GRAPES WITH GRILLED BREAD



Grilled Brie and Grapes with Grilled Bread image

Number Of Ingredients 5

Vegetable oil, for brushing
Kosher salt and freshly ground black pepper
1 large baguette, sourdough, ciabatta or Italian loaf
2 bunches purple, red or green grapes (about 1 pound)
Two (8-ounce) wheels of brie (or one 16-ounce wheel)

Steps:

  • Light a grill or preheat a grill pan over medium-high heat. Clean and oil the grill grates or grill pan.
  • Slice the baguette in half lengthwise and brush the cut sides with a little oil. Sprinkle with salt and pepper.
  • Place the grapes with their stems still attached in a medium bowl. Coat the grapes with a little oil. Season with salt and pepper.
  • Brush the brie with a little oil, as well.
  • Once the grill is heated, grill the bread until charred on both sides, 3 to 5 minutes per side. Remove and slice into pieces.
  • Add the grape bunches to the grill and cook, turning every couple of minutes, until some of them begin to burst and they turn golden in color, 8 to 10 minutes. About 5 minutes before the grapes are done, add the brie to the grill.
  • If using two 8-ounce wheels of brie, grill until you see nice grill marks, 1 to 2 minutes per side. If using one 16-ounce wheel of brie, grill until you see nice grill marks, 2 to 3 minutes per side.
  • Remove the grilled grapes and brie and arrange on a board or platter along with the grilled bread.
  • Slather a little of the gooey, grilled brie on a piece of bread and top with a couple of the grilled grapes picked from the stem.

This grilled Brie and pear sandwich is dedicated to National Grilled Cheese Sandwich Day, which happens every April 12, thanks mostly to bored food bloggers and cheese-industry marketing cartels. I'm looking at you, Wisconsin.

2 tablespoons butter, softened
2 thick slices French bread
6 thin slices Brie cheese, or more to taste
12 fresh thyme leaves, or to taste
1 pinch cracked black pepper
6 slices pear (such as Bosc)
salt to taste

Steps:

  • Generously butter one side of each slice of bread.
  • Heat a skillet over medium heat.
  • Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
  • Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
  • Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

2 garlic cloves, minced
1 tablespoon olive oil or 1 tablespoon cooking oil
8 ounces fresh spinach, rinsed and stemmed (6 cups)
8 ounces cold brie cheese, cut into 1/8 inch slices
8 slices firm-textured whole wheat bread
margarine or butter

Steps:

  • In a large skillet cook garlic in hot oil for 30 seconds.
  • Add spinach.
  • Cook over medium heat, tossing till spinach begins to wilt; remove from heat and set aside.
  • Divide the cheese among 4 slices of the bread.
  • Top with spinach-garlic mixture.
  • Cover with remaining bread slices.
  • Lightly butter the outside of each sandwich.
  • In a large skillet cook half of the sandwiches over medium-low heat for 5 to 7 minutes or till golden brown.
  • Turn sandwich and cook for 2 minutes more or till golden brown and cheese melts.
  • Transfer to a warm oven.
  • Repeat with remaining sandwiches.

Fredh field tomatoes and basil with double-cream Brie and tangyt red onion are tucked into grilled tocaccia bread for a perfect starter to a summer party. Slide the warm, savoury bread onto a large platter or wooden cutting board and let guests serve them selves.

1 loaf focaccia bread, sliced in half horizontally
1 tablespoon melted butter
2 tablespoons Dijon mustard
7 ounces double-cream brie cheese, cur inot 1/2 inch pieces
2 cups roma tomatoes, seeded, chopped (about 3)
1/4 cup red onion, finely chopped
1/4 cup fresh basil, finely chopped
1/2 teaspoon fresh ground pepper

Steps:

  • Preheat barbecue to 450°F Brush one side of each bread slice with melted buter and the other side with Dijon Mustard. Place one bread slice mustard side up on center of a sheet of aluminum foil that is twice the length of the bread.
  • In a medium bowl, gently combine the Brie cheese, tomatoes, red onions, basil, and pepper; spread mixture evenly on bread slice.
  • Top with second bread slice, butter side up. Fold foil around bread and seal tightly.
  • Place foil package directly on hot grill. With lid closed, sear for 2 minutes each side. Turn burner under bread to low, leaving other burners at medium-high. With lid closed, grill 2-3 minutes more per side until the bread is toasted and cheese is melting. let stand 5 minutes before opening package. Serve immediately.
  • TIPS: For a richer more gooey sandwich, replace double cream Brie with triple cream Brie cheese.
  • Substitute 1 cup Buffalo Mozzarella and 1 cup Gruyere for the 2 cups Brie cheese. Be sure to pat dry the mozzarella before and after slicing.
