CARAMELIZED GRILLED PINEAPPLE WITH BROWN SUGAR CHILI GLAZE

Steps:
- Peel pineapple and cut lengthwise into eight wedges; remove core. Line pineapple in a rimmed baking sheet or 9x13 pan. Set aside. *See Notes on detailed instructions on how to peel pineapple.
- Melt butter in a small saucepan over medium heat. Add brown sugar and stir to dissolve. Carefully stir in orange juice (as it will bubble up), followed by chili powder, salt, pepper and cloves. Increase heat and bring to a simmer until the mixture reduces to about 1/2 cup and thickens into a thin syrupy consistency (it will continue to thicken upon standing so don't thicken too much). Remove from heat and stir in lime juice.
- Let cool a few minutes then pour approximately 2/3 of Glaze over pineapple. Turn to coat. Reserve the remaining Glaze for basting. If your reserved Glaze becomes to thick, stir in a little water and return to heat.
- Grill pineapple over direct medium heat, basting with reserved glaze, turning occasionally, until pieces have golden brown grill marks in places, about 7-10 minutes. Serve with remaining Glaze and additional lime and chili powder if desired.
GRILLED PINK SNAPPER WITH CARAMELIZED PINEAPPLE-GREEN ONION BUTTER AND RELISH
Steps:
- Heat a grill to medium-low heat. Grill the chiles until blistered and softened all over.
- Remove the rind from the pineapple and slice into1-inch-thick rounds. Brush the pineapple slices with canola oil and sprinkle with a little sugar. Grill until caramelized on all sides and just soft, about 10 minutes total. Remove and let cool slightly.
- Roughly chop half of the pineapple slices and 1 of the chiles. Put in a food processor with the butter and process until almost smooth. Add 2 of the green onions and the chile de arbol and pulse just to combine. Taste. If the pineapple isn't very sweet, add some honey and pulse just to combine. Transfer to a bowl, cover and refrigerate until firm and the flavors meld, at least 1 hour and up to 24 hours. Let it warm slightly before grilling the fish.
- Finely dice the remaining pineapple and chile. Put them in a bowl with the remaining green onions, the olive oil, lime juice and some salt and pepper. Toss to combine. Set aside while you grill the fish.
- Increase the heat of the grill to high. Brush the fish with canola oil and sprinkle with salt and pepper. Grill, flesh-side down, until charred and you can move it with a fish spatula without the flesh sticking to the grill, about 3 minutes. Flip, and smear some of the pineapple butter on the flesh side. Grill the second side until charred, about 3 minutes.
- Transfer to a platter, smear on a bit more of the butter mixture, top with the pineapple relish and serve immediately.
GRILLED PINEAPPLE
These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

- Place pineapple in a large resealable plastic bag. Add honey, butter, hot pepper sauce, and salt. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
- Preheat an outdoor grill for high heat, and lightly oil grate.
- Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.

- Thread pineapple onto skewers (if using wooden skewers, soak in water for at least 30 minutes before threading pineapple on). Mix together brown sugar, butter, cinnamon, vanilla, and honey. Place skewered pineapple on a large plate or pan. Using a spoon or a brush, thoroughly glaze each piece of pineapple with the brown sugar mixture.
- Place skewers on a grill, preheated to a medium-high temperature. Cook for 5-10 minutes on each side, or just until the sugar-glaze starts to caramelize.
- Serve warm.

- Lay the pineapple spears on a pan. Sprinkle lightly with cinnamon. Whisk together the butter, brown sugar and cinnamon. (If it seems thick, I always put it in the microwave for a few seconds so that it can easily pour on top of the pineapple.) Spread on top of the pineapple using a cooking brush.
- Grill for about 7-10 minutes or until it is starting to turn golden brown. I always like to brush the excess sauce from the pan back on top of the pineapple before serving.
