2 boneless skinless chicken breast halves (5 ounces each)
1 tablespoon olive oil
2 tablespoons barbecue sauce
2 pineapple slices
2 kaiser rolls, split
2 lettuce leaves, optional
2 slices provolone cheese

Steps:

  • In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels. Flatten chicken to 3/8-in. thickness; brush both sides with oil. Grill, uncovered, over medium heat for 4 minutes. Turn; brush with barbecue sauce. Grill 3-4 minutes longer or until juices run clear., Meanwhile, place the pineapple and rolls cut side down on grill; cook for 3-4 minutes or until browned, turning the pineapple once. Place lettuce if desired on roll bottoms; top with chicken, cheese, bacon and pineapple. Replace roll tops.

6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup Hawaiian style marinade
6 pineapple rings
6 slices provolone cheese
6 onion rolls, split
6 tablespoons thousand island salad dressing
6 leaves romaine lettuce
6 slices tomato

Steps:

  • Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
  • Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
  • Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
  • To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

2 tablespoons taco sauce
2 teaspoons honey
1/4 cup mayonnaise
4 boneless skinless chicken breast halves
1/2 teaspoon seasoned salt
4 pineapple slices (from 8-oz. can)
4 (1/2-oz.) slices Monterey Jack cheese
4 kaiser rolls, split
4 lettuce leaves

Steps:

  • Heat gas or charcoal grill. In small bowl, combine taco sauce and honey; mix well. To make mayonnaise mixture for rolls, in another small bowl, combine mayonnaise and 2 teaspoons of the taco sauce mixture; blend well. Refrigerate until serving time.
  • Sprinkle chicken breast halves with seasoned salt. Brush chicken with about 1 tablespoon taco sauce mixture.
  • When grill is heated, place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until chicken is fork-tender and juices run clear, turning once or twice and brushing occasionally with taco sauce mixture. Discard any remaining taco sauce mixture.
  • Top each chicken breast half with cheese slice to melt. Place pineapple slices on grill; cook 2 minutes. To toast rolls, place cut side down on grill during last 30 seconds of cooking time.
  • Spread mayonnaise mixture on bottom halves of rolls. Top each with lettuce, cheese-topped chicken, pineapple slice and top half of roll.

  • Place chicken breasts in a 4-quart slow cooker. Combine 1/4 cup barbecue sauce and mustard; pour over chicken. Chili Mayonnaise:
4 - 4 oz boneless, skinless chicken breasts
1 1/2 cups of reduced-sodium teriyaki marinade (nutrition calculated with 1/2 cup)
3 Tbsp chili mayonnaise (see recipe below)
4 pineapple rings, fresh or canned in it's own juice
4 whole grain sandwich thins
1/2 cup light mayo (nutrition calculated with 1/4 cup)
2 tsp lime juice
3 tsp Thai chili sauce
Optional Toppings*:
lettuce
tomato

Steps:

  • 1. Place chicken breasts in a shallow baking pan or dish. You can even place chicken in a Ziploc® storage bag. 2. Generously cover the chicken with the teriyaki marinade with 1 cup of marinade. 3. Place chicken in refrigerator for at least 3 hours or even overnight for additional flavor. 4. Using non-stick cooking spray, lightly coat an indoor or outdoor grill. 5. Cook chicken on grill, turning to cook evenly on both sides. 6. Use remaining ½ cup of marinade on chicken while grilling, but reserve ¼ cup to use with pineapples. 7. After chicken has cooked, remove chicken and set aside. 8. Add pineapple rings to grill and add ¼ cup of marinade to pineapple rings while cooking. Cook for 2-3 minutes until pineapple is heated through. 9. Add sandwich thins to grill and grill both sides until golden brown. 10. To assemble sandwiches stack chicken breast, pineapple rings and Chili Mayonnaise to buns and serve immediately. 1 tablespoon brown sugar
1/4 teaspoon ginger
1 tablespoon soy sauce
1 (8 ounce) can pineapple rings, in own juice, drained, reserving juice
2 whole boneless skinless chicken breasts, halved
4 kaiser rolls
8 spinach leaves, fresh
1 (8 ounce) bottle mustard, sweet & tangy

Steps:

  • MARINADE.In shallow dish or gallon zip-lock bag, combine brown sugar, ginger, soy sauce and reserved pineapple juice: mix well.
  • Place 1 chicken breast half, boned side up between to pieces of plastic wrap or waxed paper.
  • Working from center, gently pound chicken with rolling pin or flat side of meat mallet until about 1/45 inch thick.
  • Repeat with remaining chicken breast.
  • Place chicken breasts in marinade, turning to coat all sides.
  • Cover, refrigerate 45 minutes.
  • Drain chicken, reserving marinade.
  • Grill chicken breast on medium, 8 - 10 minutes or until chicken is fork tender and juices run clear. Turning once and brusing with marinage.
  • Place pineapple rings on grill when turning chicken, cook until thoroughly heated, turning once and brushing with marinade.
  • Cut rolls. On bottom half of each roll. layer spinach leaves, chicken breast half, pineapple ring and top with spinach leaves.
