1 pound (4 cups) dried Radiatore pasta
1 pound cooked seasoned chicken breast, diced into small cubes (about 2 cups)
3 cups small broccoli florets
1/2 cup golden raisins
1/2 cup diced celery
3/4 cup sliced almonds
4 scallions, diced
1 cup mayonnaise
3/4 cup sour cream (or plain Greek yogurt)
2 tablespoons honey
3 teaspoons Dijon mustard
1 1/2 teaspoons kosher salt
1 teaspoon dried Italian seasoning
1/2 teaspoon pepper

Steps:

  • Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse under cold water. Drizzle with a little olive oil to prevent sticking.
  • In an extra large bowl, whisk together all the ingredients for the dressing until combined and smooth. Add in the cooked pasta, chicken, broccoli, raisins, celery, almonds, and scallions; toss to combine and coat.

1/3 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
1/2 tablespoon olive oil
One 8-ounce boneless skinless chicken breast
2 cups bite-sized broccoli florets
8 ounces dried penne
1/2 cup jarred roasted red peppers, drained and chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, basil, parsley, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Heat a grill or grill pan over medium-high heat until hot; brush with the oil. Season the chicken breast with salt and pepper. Grill the chicken, turning once, until well-marked and just cooked through, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
  • Meanwhile, cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Transfer the broccoli to a colander with a slotted spoon and run under cold water to stop the cooking process. Add the broccoli to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the chicken and red peppers to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

3 boneless skinless chicken breasts (1 lb)
1 tablespoon olive oil
1 medium onion, finely chopped (3/4 cup)
3 cups fresh broccoli florets
2 ripe mangoes, seed removed, peeled, and cut up
1 red bell pepper, chopped
1 medium zucchini, quartered lengthwise, then cut crosswise into slices (1 cup)
1 bottle (8 oz) Italian dressing
1/2 teaspoon salt

Steps:

  • Heat gas or charcoal grill. Cook pasta as directed on package; drain. Rinse with cold water to cool; drain well.
  • Meanwhile, place chicken on grill over medium heat. Cover grill; cook 15 to 20 minutes, turning once or twice until juice of chicken is clear when center of thickest part is cut (170°F). Cool slightly. Cut into 3/4-inch cubes.
  • In 8-inch nonstick skillet, heat oil over medium-high heat. Stir in onion; cook uncovered 5 minutes, stirring occasionally.

3/4 cup freshly squeezed lemon juice (4 lemons)
3/4 cup good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh thyme leaves
2 pounds boneless chicken breasts, halved and skin removed
8 cups broccoli florets (4 heads)
1/2 pound farfalle (bow tie) pasta
2 tablespoons unsalted butter
1/4 cup good olive oil
1 teaspoon minced garlic
Zest of 1 lemon
Kosher salt and freshly ground black pepper
1/4 cup freshly squeezed lemon juice
1/4 cup toasted pine nuts
1/4 cup freshly grated Parmesan cheese

Steps:

  • For the chicken, whisk together the lemon juice, olive oil, 2 teaspoons salt, 1 teaspoon pepper, and thyme. Pour over the chicken breasts in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.
  • Heat a charcoal grill and cook the chicken breasts for 10 minutes on each side, until just cooked through. Cool slightly and cut diagonally in 1/2-inch-thick slices.
  • Meanwhile, for the salad, cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
  • In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
  • In a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 1 tablespoon salt, 3/4 teaspoon pepper, and lemon juice and pour this over the broccoli and pasta. Toss well.
  • Add the chicken, pine nuts and Parmesan to the broccoli and pasta and toss well.

(Kraft recommends using 6 oz of their grilled chicken strips but I prefer fresh chicken over packaged - use what you are most comfortable serving). ***Update*** Based on the review I wanted to let you know what I took out of the original recipe - it called for 1/2 c sliced olives. I was thinking if you want a really strong flavor - try a very Zesty Italian Dressing or saute your chicken with garlic and add chopped onions to the final dish. Maybe that would perk it up for those that like things a bit spicier. The original way is a method in which my kids will eat it but I understand how adults may want a bit more zing.***

So much so, in fact, that it can't be removed from the menu, let alone tampered with. But here, the favorite is played with: Charred lemons and anchovies, savory with umami, add sourness and funk. Serve this alongside your protein of choice, or as part of an al fresco spread.

2 small or medium broccoli with stalks (about 1 ½ pounds/700 grams)
7 tablespoons/103 milliliters olive oil, plus more for grilling
1 large fresno chile, thinly sliced at an angle, seeds and all
6 garlic cloves, thinly sliced lengthways
5 to 6 anchovies packed in oil, drained
1 large lemon, cut into 8 thin rounds and seeded, the rest squeezed for 1 teaspoon juice
1 1/2 tablespoons flat-leaf parsley leaves, roughly chopped
Flaky sea salt, for serving

Steps:

  • Bring a large saucepan of well-salted water to a boil over medium-high. Keep a large bowl of ice water next to it. Meanwhile, trim the broccoli so 2 inches/5 centimeters of stalk remain attached. Cut the broccoli in half lengthwise, then cut each half lengthwise again to give you 4 wedges per head.
  • Blanch the broccoli by adding it to the boiling water and cooking for 3½ minutes, until softened. The stalks should retain a nice bite. Use a pair of tongs to remove the wedges and plunge them straight into the ice water to stop them from cooking further. Once completely cool, drain and dry them well, then place in a large bowl.
  • Meanwhile, add 6 tablespoons/89 milliliters of oil, the chiles and garlic to a small frying pan and place it over medium heat. Cook for 7 to 10 minutes, stirring occasionally, until the garlic is golden and the chiles start to become transparent. Use a slotted spoon to transfer the solids to a plate lined with paper towels and set aside to cool and crisp further.
  • Add the anchovies to the pan and place over low heat. Cook gently, stirring occasionally, for 10 minutes, until an anchovy is soft enough to be easily squashed with the back of a spoon. Set aside to cool completely.
  • Place a large, well-greased grill pan over high heat and ventilate your kitchen well. (See Tip for outdoor grilling.) Toss the broccoli gently with 1½ teaspoons olive oil. Once the pan is very hot, grill the broccoli in 2 batches, turning so that all the flat sides have nice grill marks, 6 to 8 minutes per batch. Transfer to a tray to cool down. Grill the lemon rounds for 1½ minutes per side, until nicely charred, then transfer to a chopping board. When cool enough to handle, finely chop the lemon (skin and all) and transfer to a small bowl along with the lemon juice, parsley and remaining 1½ teaspoons olive oil. Mix well and set aside.
  • Once the broccoli has cooled, top with the anchovy oil mixture and toss gently to combine. Arrange on a large serving platter and top evenly with the charred lemon mixture. Lastly, sprinkle over the fried chile and garlic and the flaked salt.

  • In a large resealable plastic bag, combine the first six ingredients. Cut each chicken breast into four strips; add to marinade mixture. Seal bag and turn to coat. Refrigerate for 2-3 hours. , Drain and discard marinade. Grill chicken, uncovered, over medium heat for 4-5 minutes on each side or until no longer pink. Meanwhile, cook fettuccine according to package directions; drain and rinse in cold water. Cut chicken into bite-size pieces; set aside. , In a large bowl, combine the vegetables, olives and fettuccine. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat. Everyone always adores this pasta salad, which is so easy to make & a great variation on the "traditional" pasta salads. Make sure to steam the veggies for the added oomph in taste and texture! Also, you can change it up however you wish, asparagus in place of broccoli, roasted red peppers instead of tomatoes, etc.

1 box(es) pasta of choice (i prefer rotini or shells)
2 bottle(s) italian dressing
1 bunch(es) broccoli, fresh (cleaned & cut in large chunks)
4 - chicken breasts, boneless and skinless
1 can(s) black olives, drained
1 pound(s) block cheddar, monterey jack, or preferred cheese
20 - cherry tomatoes
1 - bag of baby carrots
8 ounce(s) fresh mushrooms
- grated parmesean, italian seasonings, salt & pepper

Steps:

  • Marinate the chicken breasts after trimming of any fat. I put in a plastic bag w/ the Italian dressing either overnight or for several hours. Grill or broil and then let cool & cut into large, bite-sized pieces. When this is done....
  • Cook pasta & drain. Toss w/ some Italian dressing & stir to keep from sticking & season. I like to throw in some basil or parsley, along w/ salt & some of the Italian dressing as I boil the pasta water for added oomph.
  • Saute mushrooms in some of the Italian dressing & sprinkle w/ a little garlic or whatever you might want. Key is to season each ingredient before you add to the pasta salad.
  • Steam the broccoli and carrots in whatever method you prefer. I always do a blanche & throw them in boiling water for a few minutes & then into a bowl of ice water for 1 min. Drain & let cool off. You can cut the carrots in half, if you prefer, which is what I do.
  • Cut the cherry tomatoes in half, and the cheese into bite sized chunks. (I always add the tomatoes & cheese after I have added all other ingredients & refrigerated for awhile. If you want to make salad overnight, you can, but add the tomatoes and cheese next day).
  • Now, begin to add everything in a large bowl, one ingredient at at time & stir. Make sure the black olives are thoroughly drained! It is imperative that all ingredients are cooled off before you begin mixing. After it's mixed, put in fridge and stir about every 1.5 hours or so & add more dressing. Top w/ the parmesean & spices. I like to add parm on top before I serve for a prettier presentation. Don't OVERSALT this recipe. With the Italian dressing & seasoning the ingredients as you cook them, you really don't need to add any more salt when you mix up the pasta salad. Fresh ground pepper on top always is good.

2 lbs thin-sliced chicken cutlets
2 tablespoons lemon juice
1 large red pepper, cored, seeded and diced
1 large green pepper, cored, seeded and diced
1 medium red onion, chopped
2 scallions, trimmed and thinly sliced
2 tablespoons mined fresh dill
1 cup light mayonnaise
1/2 cup red wine vinegar
1/2 cup honey
1 teaspoon prepared mustard
1 teaspoon sugar
1 teaspoon onion powder
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup canola oil

Steps:

  • Cook pasta following directions on box, drain.
  • While pasta is cooking, heat grill or broiler. Sprinkle chicken with lemon juice and grill or broil for about 2 minutes per side or until done. Set aside and let cool.
  • When cool, cut chicken into bite-size pieces and mix with cooled pasta in a large bowl.
  • Add peppers, onion, scallions and dill.
  • In a medium bowl, whisk mayo, vinegar, honey, mustard, sugar, onion powder, parsley flakes, salt and pepper. Gradually whisk in oil.
  • Pour mayo mix over the pasta and chicken, toss. Refrigerate until ready to serve.
  • *You could add spinach, peas, broccoli or whatever veggies you wanted. Be creative!
