CHICKEN SATAY WITH PEANUT SAUCE
Perfectly grilled chicken satay skewers in the most flavorful marinade. Served with THE BEST creamy peanut sauce ever!!!

- To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12-15 minutes. Serve immediately with peanut sauce.

- Soak the bamboo skewers: If using bamboo skewers, soak them in warm water for 30 minutes.
- Marinate the chicken: In a bowl large enough to hold the chicken, stir together the brown sugar, vinegar, lime juice, fish sauce, sriracha, and ginger. Add the chicken strips and toss to coat. Cover and marinate for at least 1 hour, or up to overnight. You can also marinate them in a resealable gallon-sized plastic bag to save space in the fridge, if you prefer.
- Prepare the grill: For charcoal grills: Light one chimney full of coals and when they are covered with ash, spread them out evenly. Allow the grill grates to heat for 5 minutes. With a pair of tongs, dip a folded square of paper towel in oil and generously oil the grates. For a gas grill: Heat the grill on high heat for about 20 minutes. With a pair of tongs, dip a folded square of paper towel in oil and generously oil the grates.

- Put wooden skewers in a shallow dish and cover with water. Let soak for 20 minutes.
- Place chicken strips into a bowl. Combine soy sauce, tomato sauce, peanut oil, garlic, pepper, and cumin in a small bowl; mix to combine. Pour over chicken strips and mix so chicken is well coated on all sides. Marinate for 15 minutes.
- Meanwhile, make the peanut sauce. Add 1 tablespoon oil to a hot skillet over medium-high heat. Add onion and garlic. Cook and stir until onion is soft and translucent, about 4 minutes. Add peanut butter, sugar, soy sauce, and water. Mix well. Cook until sauce has thickened slightly, about 5 minutes. Add lemon juice and remove from heat.
- Preheat an outdoor grill for high heat and lightly oil the grate. Thread each chicken strip onto a skewer.
- Place skewers on the preheated grill and cook for a total of 10 minutes, flipping once halfway through cooking. Serve the satay skewers immediately with the peanut sauce for dipping.

- In small bowl, mix soy sauce, lime juice, honey, sesame oil, gingerroot, pepper flakes and garlic. Cut each chicken tender in half lengthwise. Place in shallow glass or plastic dish. Pour marinade over chicken; turn to coat. Cover; refrigerate 2 hours, stirring occasionally. Meanwhile, soak bamboo skewers in water at least 30 minutes before using to prevent burning.
- Heat gas or charcoal grill. Remove chicken from marinade; discard marinade. Thread 1 chicken strip on each skewer, twisting chicken on skewer to look like a snake. Place skewers on grill over medium heat. Cover grill; cook 6 minutes, turning once, until chicken is no longer pink in center.
- Arrange chicken on platter; sprinkle with green onions. Serve with peanut sauce.

GRILLED CHICKEN THIGHS WITH SPICY PEANUT LIME SAUCE
Steps:
- Preheat a grill to 400 degrees F or a large grill pan over medium heat. Clean and oil the grill grates or grill pan.
- Place the thighs on a rimmed baking sheet and drizzle with 1 to 2 tablespoons of oil until fully coated; liberally season both sides with salt and pepper. Grill the chicken skin-side down, covered, until golden brown and crispy, about 15 minutes (or up to 20 minutes, if using a grill pan). Check on the thighs occasionally to make sure they aren't burning. Flip the chicken and grill, covered, until crispy and cooked through, about 15 minutes longer.
- Meanwhile, make the sauce: Combine the lime zest and juice with the peanut butter, chile paste, honey, tamari and 1/2 teaspoon salt in a small bowl. Whisk together and taste for seasoning. Transfer to a small serving bowl.
- When the chicken is ready, remove it to a platter or a large shallow bowl. Drizzle with some of the sauce then sprinkle with the scallions, cilantro and peanuts. Serve immediately with the remaining sauce on the side.
GRILLED CHICKEN SATAY WITH PEANUT LIME SAUCE
Steps:
- Let's begin with the marinade. In a large bowl mix together coconut milk, curry powder, turmeric, soy sauce, garlic, ginger, soy sauce, and maple syrup. Drop in chopped chicken and allow to marinate for 2 hours or overnight.
- After the chicken is done marinating, remove from the liquid and push chicken chunks onto a wooden skewer that has be soaked in water.
- This is a perfect time to start preheating your BBQ. Turn temperature to medium high heat.
- While bbq is heating up let's make the peanut lime sauce. In a small bowl mix together peanut butter, soy sauce, lime zest, lime juice, fresh ginger, sriracha, fish sauce, and water. Mix until smooth. If mixture is to stiff add in a touch more water.
- Once grill has reach temperature, place chicken onto the hot grill and allow to cook for about 6 minutes per side. Don't be afraid to get some nice colour on the chicken! After the chicken is fully cooked remove from the grill.
- Serve chicken with jasmine rice, fresh cucumbers, chillies, peanut sauce and enjoy!!!

Stir in the peanut butter, hoisin sauce, sriracha, lime juice, and 1/3 cup of the water. Cook, stirring with a whisk, just until the peanut butter melts into the sauce and the sauce is blended. Add more water, one tablespoon at a time, until the sauce is the consistency of heavy cream. Taste and add additional hoisin, Sriracha, or lime juice to taste. Transfer to a bowl to serve, or cool, transfer to an airtight container, and refrigerate for up to a week.
- Prepare the skewers: Thread 1 to 2 slices of the marinated chicken onto each skewer. Set them on a baking sheet.
