1 cup cubed fully cooked ham
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon each onion powder, garlic powder and ground mustard
3 tablespoons shortening
1 teaspoon minced chives
6 tablespoons buttermilk
1 tablespoon butter, melted

Steps:

  • Preheat oven to 450°. In a food processor, process ham until ground; set aside. In a large bowl, combine the flour, baking powder, baking soda, onion powder, garlic powder and mustard. Cut in shortening until mixture is crumbly. Fold in ham and chives. Add buttermilk; stir just until the dough clings together. , Turn onto a lightly floured surface; knead gently 10-12 times. Roll dough to 1/2-in. thickness. Cut with a floured 2-1/2-in. biscuit cutter. Place in a large ungreased cast-iron or other ovenproof skillet. Bake until golden brown, 13-15 minutes. Brush with butter. Serve warm.

Creole Mayonnaise, Chive-Radish Compound Butter, Spicy Orange-Peach Butter, and Pecan Cheese Spread are our newest spreadable recipes that you'll love for these biscuits, but whether jelly, jam, mayo, or mustard, you can't go wrong topping this timeless biscuit recipe. We used a small 2-inch biscuit cutter, so you may want to bake extra for Easter brunch-they tend to disappear very quickly. These biscuits can be cut and frozen up to two weeks in advance. Freeze the dough solid on the baking sheet. Store in a ziplock plastic bag in the freezer. Bake frozen biscuits at 450°F for 12 to 14 minutes.

Steps:

  • Preheat oven to 450°F. Whisk together all-purpose flour, granulated sugar, baking powder, salt, and baking soda in a medium bowl. Cut cold butter pieces into flour mixture with a pastry blender until mixture is crumbly. Make a well in center of mixture. Add whole buttermilk, and stir until mixture comes together in a ball.
  • Scrape dough onto a lightly floured surface, and knead three to four times. Lightly flour top of dough and a rolling pin. Roll dough into a rectangle, and fold dough in half so short ends meet. Repeat the rolling and folding procedures one more time.
  • Roll dough to 1⁄2-inch thickness. Cut with a floured 2-inch round cutter, rerolling scraps once. (You should have 10 biscuits.) Place biscuits 1 inch apart on a baking sheet lined with parchment paper. Bake in preheated oven until golden brown and firm to the touch, about 10 minutes.
  • Brush tops of hot biscuits with melted butter, and serve with sliced ham and choice of Biscuit Spreads.

LAYERED HAM AND CHEESE BISCUITS

2 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
2 tablespoons baking powder
1 tablespoon sugar
1 1/2 teaspoons kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into cubes
1 cup shredded mild Cheddar
1 cup buttermilk, plus more for brushing
2 thin slices black forest ham, roughly chopped (about 2 ounces)

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment.
  • Pulse the flour, baking powder, sugar and salt in a food processor until combined. Add the butter and 1/2 cup of the Cheddar and pulse until the mixture looks like coarse meal with pea-size bits of butter remaining. Add the buttermilk and pulse a few times, until the dough just comes together.
  • Turn the dough out onto a work surface that's lightly dusted with flour, then pat into a 7-by-7-inch square that's about 1 inch thick. Scatter half of the ham and 1/4 cup of the Cheddar on half of the dough, then fold the other half of dough over like a book; gently pinch the edges to seal. Pat the dough out again into a 7-by-7-inch square, scatter the remaining ham and 1/4 cup of cheese on top and fold the dough over like a book. Press once more into a 7-by-7-inch square.
  • Use a sharp chef's knife to cut the dough into 12 even rectangular pieces. Transfer to the prepared baking sheet and brush the tops of each piece with additional buttermilk. Bake until the biscuits are puffed and well browned, 18 to 20 minutes.

1 ½ teaspoons Worcestershire sauce

24 mini sandwich rolls
1 pound thinly sliced cooked deli ham
1 pound thinly sliced Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.

2 cups all-purpose flour, plus additional for sprinkling
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons baking powder
5 tablespoons chilled unsalted butter, cut into small pieces
2 to 3 tablespoons butter, at room temperature
1 cup buttermilk
12 thick slices Virginia ham or smoked ham, each about 2 1/2 inches round or square

Steps:

  • Preheat oven to 350 degrees. In a large mixing bowl, combine 2 cups flour, baking soda, salt and baking powder. Mix well. Add the butter and buttermilk, and knead lightly by hand to make a cohesive dough.
  • Sprinkle a work surface with flour, and turn the dough onto it. Knead with the heel of the hand about six times; do not overhandle. Roll out into a flat circle about 3/4-inch thick. Use a Champagne flute or biscuit cutter to press into 12 circles about 2 to 2 1/2 inches in diameter. If desired, reroll the scraps of dough to make into biscuits.
  • Arrange the biscuits on a cookie sheet, and bake until lightly browned, 12 to 14 minutes. Remove from heat and cool slightly. To serve, split the biscuits in half and butter each cut side. Insert a slice of ham between the halves, and close. If desired, reheat in the oven for 2 to 3 minutes. Serve warm.

1 ham, bone in
1 pint orange marmalade
1 (12-ounce) can coca cola classic
2 cups self-rising flour (summer wheat flour is best)
1/4 cup vegetable shortening
2/3 to 1 cup milk

Steps:

  • Preheat oven to 375 degrees. Pour orange marmalade into a bowl and add about 1/2 of the coke. Let it set while you prepare the ham. Remove visible fat from ham and crisscross cut the ham. Place in a 9 by 13-inch baking pan and pour the marmalade/coke mixture over the ham. Place in the oven uncovered and bake for 20 minutes. This allows the marmalade to set or crisp on the ham. After 20 minutes cover the ham with foil and bake for an additional 30 to 45 minutes. Baste with the pan drippings every 15 minutes. If there are not enough pan drippings, mix up some more marmalade mixture to baste on the ham. Uncover the ham for the last 20 to 30 minutes and baste every 7 or 8 minutes. Allow the marmalade mixture to brown until dark brown in color. Remove from oven. Put ham onto a platter to cool before cutting. Total cook time is about 1 hour 5 minutes to1 hour 35 minutes. Use the left-over ham in red beans the next day.
  • Mix flour and shortening together in bowl until the shortening is well blended into the flour. Make a "well" or hole in the center of the flour/shortening mixture. Add a portion of the milk to the well. Use a fork or your fingers and work from the center of the bowl to the outside of the bowl and blend the milk into the mixture. Add more milk as needed. The dough will be slightly sticky. To make the biscuits coat your hands with flour and pinch off enough dough for 1 biscuit, about 2 tablespoons. Roll and knead the biscuit in your hands just until it looses its stickiness. Place in a cast iron skillet. Continue to make the rest of the dough in this manner. After all biscuits are made put a little water on finger tips and gently rub the tops of each biscuit, this removes any bumps on the top of the biscuits. Bake in a preheated 450 degree oven until golden brown, about 15 minutes.

GREAT BREAKFAST or lunch item! These biscuits may be considered "a southern thing", but they sure are popular! I have carried a plate full to a home where relatives were gathering for a funeral and they got smacked up real quick. I would carry them plain without the dijon mustard because of people's preferences. Great for a man's lunchbox. Very filling and satisfying flavor!

Slowly add milk and stir until all milk has been added and mixture is thick and combined. Using a cookie scoop or a large spoon, scoop out approximately 2-3 Tablespoon mounds onto prepared baking sheet. Bake for 8-10 minutes or until cooked through and edges are just beginning to turn golden. Remove from oven. If doing the topping, combine melted butter and garlic powder. Spoon over biscuits while hot. Allow to cool on racks for 3 - 5 minutes. Enjoy!

⅓ cup cold butter

1 cup buttermilk, or more as needed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine flour, baking powder, salt, baking soda, and garlic powder in a bowl. Whisk to combine.
  • Dice the cold butter up into chunks, and cut it into the dry mixture with your fingers, a fork, or a pastry cutter, until the mixture resembles coarse sand, and butter is well blended in. 1 pound (about 4 cups) unbleached all-purpose flour, plus a little extra for dusting
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon pure salt
3 ounces (about 1/2 cup) chilled lard
1/2 ounce fresh compressed yeast
1 1/4 cups buttermilk at room temperature

Steps:

  • Sift the dry ingredients together into a warmed mixing bowl. Cut the lard into the flour mixture with a pastry blender or 2 knives until it is evenly distributed. In a separate bowl, stir the yeast into the buttermilk until it is well blended, pour the liquid into the flour mixture, and stir until blended.
  • Turn the dough out onto a floured surface and work lightly until the mixture is smooth and evenly textured. Roll out to about 1/2-inch thick, then cut 1-inch biscuits with a clean, floured metal biscuit cutter. Place the biscuits on an ungreased sheet pan, cover with a dish towel, and allow to rise for a while. In the meantime, preheat the oven to 400°F. When the biscuits have risen by about a fourth, bake them for about 15 minutes or until the tops are lightly browned.

freshly grated horseradish to taste
20 pieces thinly sliced baked ham (about 1/2 pound)
SILVER DOLLAR SIZED BISCUITS
2 cups all-purpose flour
1 tablespoon baking flour
1 teaspoon salt
1 tablespoon sugar
1/4 cup lard
1/2 to 3/4 cup milk

Steps:

  • Preheat oven to 400°F.
  • In a bowl whisk together flour, baking powder, salt and sugar and with a fork or pastry blender blend in lard until mixture resembles course meal. Add milk, a little at a time, stirring until dough just pulls away from side of bowl.
  • Roll out dough 1/2 inch thick on a lightly floured surface. Cut out biscuits with a 1 1/2-inch round cutter and transfer to an ungreased baking sheet. Reroll scraps and cut out more biscuits in same manner.
  • Bake biscuits in middle of oven until pale golden, 10 to 15 minutes. Makes 20 silver dollar-size biscuits.
  • Split biscuits in half and spread lightly with mustard and horseradish. Put ham between biscuit halves.
