GRILLED BOUDIN WITH ONIONS, PEPPERS, AND MUSHROOMS



Grilled Boudin with Onions, Peppers, and Mushrooms image

Once you grill boudin, you'll never boil it again. Grilling gives it a slightly smoky flavor and really brings out the flavor inside. The seasoned veggies are cooked alongside it and done at the exact same time.

2 red bell peppers, cut into 2 inch pieces
1 large red onion, sliced into petals
4 ounces button mushrooms, sliced
1 tablespoon olive oil
1 teaspoon seafood seasoning (such as Old Bay®)
4 links boudin sausage
4 hot dog buns
2 tablespoons spicy brown mustard

Steps:

  • Combine bell peppers, onion, mushrooms, olive oil, and seafood seasoning in a large bowl. Stir until evenly combined. Set aside while you preheat the grill.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place boudin directly on the grate. Place vegetable mixture in a grill basket. Grill for 5 minutes. Turn boudin over, stir the vegetables, and cook until an instant-read thermometer inserted into the sausage reads 160 degrees F (71 degrees C), about 5 minutes more.
  • Place boudin in hot dog buns, top with mustard, and serve with vegetables.

1 cup distilled white vinegar
1/2 cup whole yellow mustard seeds
4 cloves garlic, chopped
2/3 cup whole-grain Dijon mustard
1/4 cup honey
1/4 cup Dijon mustard
2 tablespoons prepared horseradish
2 tablespoons brown sugar
2 teaspoons kosher salt
Pinch cayenne
1 teaspoon vegetable oil
1 pound boudin sausages (about 4 links)
Crackers, for serving

Steps:

  • For the mustard: In a medium saucepan add 1/2 to 1 cup water, the vinegar, mustard seeds and garlic. Bring to a boil and reduce the heat to a simmer. Cook at a simmer for 30 minutes.
  • Remove the saucepan from the heat and, while still hot, mix in the whole-grain mustard, honey, mustard, horseradish, sugar, salt and cayenne. Refrigerate until cool.
  • For the boudin: Heat a grill pan or heavy-bottomed skillet set over high heat. Brush the pan with the oil and add the boudin. Cook, turning occasionally, until crispy and golden, 10 to 12 minutes. Serve with the Creole mustard and some crackers.

1 tablespoon oil
2 tablespoons butter, divided
3 onions, sliced thin
1 teaspoon sugar
4 large hot dogs
3 skinless chicken breasts
1/2 cup ketchup
1 tablespoon mustard
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1/4 teaspoon barbecue dry rub seasonings, your favorite brand
4 hot dog buns

Steps:

  • If using wooden skewers, soak in cold water for 30 minutes.
  • Heat oil and butter together. Sauté onions till very soft--about 15 minutes.
  • Add white sugar and cook another 15 minutes till onions are caramelized; set aside and keep warm.
  • Cut each hot dog into 4 pieces.
  • Cut each chicken breast into 4 strips; roll each strip into a spiral.
  • Thread 3 pieces of chicken alternately with 4 pieces of hot dog onto a skewer.
  • On low heat melt butter, ketchup, mustard, tomato paste, Worcestershire sauce, and seasoning; stir to mix.
  • Brush the kebabs liberally with sauce.
  • Cook on outdoor grill, indoor grill, or broil, about 20 minutes, basting frequently. Remove and baste again with sauce so that they are gooey!
  • Serve in hot dog rolls with caramelized onions on the bottom. Be sure to pull skewer out before munching!
