In case you're unfamiliar with Piccata Sauce, let me break it down for you. After you panfry a yummy, lean protein in butter you deglaze the pan with stock (I go with chicken stock) and fresh lemon juice and THEN you throw in delicious, salty, briny capers. This creates an intense pan sauce in literally under a minute.

1 tbsp (salted) butter
1 tbsp extra virgin olive oil
Salt
Pepper
20 Medium scallops (cleaned and patted dry)
The juice of half a lemon
¼ cup sodium-reduced stock (I used chicken)
1 tbsp capers

Steps:

  • A cast-iron skillet is ideal here but any pan will work really. Preheat your pan over medium-high heat and add in the butter and oil. When the fat has melted add the scallops and season lightly.
  • Flip the scallops after 3 minutes (sooner if they're getting too dark), and again lightly season.
  • Cook on the second side for 1 minute (still at medium-high heat).
  • Transfer the scallops to a serving platter.
  • Return the pan to the same heat and add in the lemon juice and stock, gently scrape the pan with a wooden spoon or spatula to release any flavours that may be there (deglazing).
  • After the sauce has reduced by half (after about 30 seconds to a minute), turn the heat off the pan and add in the capers.
  • Taste and adjust seasoning.
  • Pour the sauce over the scallops on the serving platter.
  • Serve immediately.

Buttery and full of capers, this scallop pasta puts a spin on the traditional chicken piccata.

1/4 pound angel hair pasta
1 pound sea scallops (about 10, pat dry)
fresh cracked pepper and kosher salt
1 tablespoon olive oil
3 tablespoons butter (divided)
1 clove garlic (minced)
1/2 cup dry white wine
3 tablespoons nonpareil capers
juice of 1/2 lemon
1 tablespoon chopped fresh parsley

Steps:

  • Bring a large pot of water to a boil.
  • While you're waiting for your pasta water to boil. Season scallops with salt and pepper. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat. Once butter melts, place scallops in pan. Cook, turning once until scallops are browned, about 3 - 4 minutes per side. Transfer to a plate, loosely cover to keep scallops warm. (Note: You may need to do this step in batches, you do not want to over crowd the scallops or they will steam and won't get the color you want.) Reserve pan juices.
  • If you haven't already, begin cooking pasta. Cook according to pasta directions. Drain.
  • While pasta is cooking add garlic to scallop pan, reduce heat to medium, cook 20 seconds or until fragrant. Pour in wine, capers and lemon juice. Scrape up any brown bits from the bottom of the pan. Cook until sauce reduces by 1/3 about 5 minutes. Remove from heat, add remaining 2 tablespoons of butter. Swirl until butter melts. Stir in fresh parsley.
  • Divide pasta evenly among heated pasta bowls. Place 5 scallops on top of the pasta. Pour sauce over the top. Serve.

¼ cup olive oil
¼ cup butter
1 pound uncooked medium shrimp, peeled and deveined
10 baby bella mushrooms, sliced

1 (6 ounce) jar marinated artichoke hearts, chopped, with juice
½ lemon, juiced
3 tablespoons capers with juice
1 splash dry white wine
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Heat olive oil and butter in a saucepan over medium heat. Add shrimp, mushrooms, and garlic; cook and stir until fragrant, 1 to 2 minutes. Add artichokes, lemon juice, capers, and white wine. Cook and stir until shrimp is tender and contents are bubbling, about 10 minutes. Spoon shrimp piccata over individual beds of pasta. Season with salt and pepper.

2 lemons, small
1 lb bay scallops or 1 lb sea scallops
1 tablespoon butter or 1 tablespoon margarine
1/4 cup chicken broth
1/4 cup dry white wine
1/2 teaspoon salt
2 tablespoons parsley, chopped

Steps:

  • Squeeze juice from 1 lemon; set aside. Thinly slice the other lemon for use as garnish.
  • Rinse scallops with running cold water to remove sand from crevices. Pat dry with paper towels. (If using sea scallops, cut each horizontally in half.).
  • In 10-inch skillet over medium heat, in hot butter or margarine, cook scallops, stirring frequently, until opaque. about 5 minutes. With slotted spoon, remove scallops to warm serving platter. To skillet, add chicken broth, wine, salt, 2 Tbl parsley, and reserved lemon juice; over high heat, heat to boiling. Cook until mixture is reduced by half; spoon over scallops. Garnish with lemon slices and additional chopped parsley.

VEAL PICCATA

Extra-virgin olive oil
3 cloves garlic, smashed
8 bottom or top round veal scallops, flattened gently with a meat mallet
Kosher salt
1 cup flour
1/2 cup white wine
1/4 cup capers
1/2 cup chicken stock
1/2 stick butter
2 lemons, juiced
1/4 cup finely chopped fresh Italian parsley

Steps:

  • Preheat the oven to 200 degrees F.
  • Coat a large saute pan with olive oil and toss in the garlic cloves. Bring the pan to a medium-high heat. Cook the garlic until it becomes golden brown and is very aromatic. Remove the garlic and discard. Raise heat to high.
  • Sprinkle the veal scallops with salt. Just before placing the veal scallops in the pan with the hot oil, dredge them in flour. Working in batches, flour the veal that is going directly in the pan; do not flour ahead. When the veal has browned, 2 to 3 minutes per side, remove to a platter and keep warm in the oven.
  • When all the veal has been browned, ditch the oil in the pan. Add the wine and capers and reduce by half. Add in the chicken stock, season with salt, and cook until it has slightly thickened. Swirl in the butter. When the butter has melted and is bubbly, add in the lemon juice. Taste to make sure it is delicious, add the parsley, and spoon over the veal.

1/4 teaspoon kosher salt
1/4 teaspoon fresh ground pepper

2 (6 ounce) boneless, skinless salmon fillets
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 teaspoon all-purpose flour
2 tablespoons clarified butter
2 tablespoons drained capers
¼ cup white wine
1 lemon, zested and juiced
2 tablespoons unsalted butter
1 tablespoon water, or as needed
2 tablespoons chopped fresh Italian parsley

Steps:

  • Season salmon with salt, pepper, and cayenne. Sprinkle flour onto one side of each fillet and pat gently onto the fish.
  • Heat clarified butter in a nonstick skillet over medium-high heat. Add salmon, floured side down, and let sear for 2 ½ minutes. Flip and sear the other side for 2 minutes. Remove to a plate and cover with foil.
  • Add capers to the skillet and press with the back of a fork to gently mash. Pour in wine and lemon juice; add lemon zest. Swirl the pan to combine. Let reduce by half, about 1 minute.
  • Reduce heat to low and add butter; swirl the pan or stir with a spoon or spatula until butter is almost fully melted. Transfer salmon and any accumulated juices from the plate back into the skillet. Allow butter to fully melt while spooning sauce over salmon.
  • Pour in water to thin sauce if needed; continue to spoon sauce over salmon and cook until salmon is fully cooked through and flakes easily with a fork. An instant-read thermometer inserted into the center of the fillets should read about 145 degrees F (63 degrees C). Sprinkle parsley over top.
  • Remove from heat and transfer to a serving plate; spoon pan sauce over salmon.
