Creamy Cajun Grilled Chicken Pasta image

The perfect pasta recipe! Linguine is tossed with chicken, bell peppers and topped with a creamy alfredo style sauce and filled with delicious cajun seasoning.

1 lb boneless skinless chicken breasts ((shrimp can be substituted))
2 Tbsp olive oil (, divided)
6 tsp cajun seasoning (, divided (recipe in notes below))
12 oz dry linguine or fettuccine pasta
2 Tbsp butter
1 clove garlic (, minced)
3 Tbsp flour
1 1/2 cups milk
1/2 cup heavy cream or half and half
1/3 cup shredded parmesan cheese
1 medium red bell pepper (, sliced into thin strips then strips halved (about 1 1/2 cups))
1 medium yellow bell pepper (, sliced into thin strips then strips halved (about 1 1/2 cups))
1/2 large red onion (, sliced into thin strips)
2 cups sliced button mushrooms ((about 8))
Fresh parsley (, for garnish)

Steps:

  • Heat a grill over medium-high heat. Brush chicken with 1 Tbsp of the olive oil and sprinkle with 2 tsp of the cajun seasoning (I used 2 chicken breasts and this is 1/2 tsp per side). Grill chicken until cooked through, about 8 - 10 minutes, rotating once halfway through grilling until chicken registers 165 degrees on in instant read thermometer in center of chicken. Transfer to a plate, cover with foil and let rest 5 minutes then cut into strips.
  • Boil pasta in salted water according to directions listed on package. Reserve 1/3 cup pasta water before draining.
  • In a medium saucepan melt butter over medium heat. Stir in garlic and flour and cook 1 minute, whisking constantly. While whisking slowly pour in milk and whisk vigorously to smooth lumps. Stir in 1 - 3 tsp cajun seasoning, to taste (season with additional salt as needed). Bring mixture to a boil, stirring constantly, then reduce heat to low, stir in parmesan and cream and cook until cheese has melted. Remove from heat and set aside.
  • Heat remaining 1 Tbsp olive oil in a large skillet over medium-high heat. Once hot, add red and yellow peppers and red onion and saute 2 minutes. Add 1 tsp cajun seasoning and mushrooms and saute 2 minutes longer.
  • Toss drained pasta with sauce mixture, adding reserved pasta water 1 tbsp at at time to thin sauce as desired. Toss in pepper mixture and chicken. Serve warm sprinkled with parsley and additional cajun seasoning to taste.

1/2 cup chopped fresh mushrooms
2 teaspoons butter
3 tablespoons Homemade Cream-Style Soup Mix
2/3 cup water
3 ounces uncooked spaghetti
1/4 teaspoon coarsely ground pepper, divided
1/8 teaspoon seasoned salt
2 boneless skinless chicken breast halves (5 ounces each)
1/2 cup half-and-half cream
1/4 cup white wine or chicken broth
1 tablespoon dried minced onion
2 garlic cloves, minced
1 teaspoon cornstarch
1 teaspoon cold water

Steps:

  • In a small skillet, saute mushrooms in butter until tender. In a microwave-safe bowl, whisk soup mix and water until smooth. Microwave, uncovered, on high for 2 minutes, whisking occasionally. Stir in mushrooms and set aside. , Cook spaghetti according to package directions. Meanwhile, sprinkle 1/8 teaspoon pepper and seasoned salt over both sides of chicken. Grill, covered, over medium heat for 5-7 minutes on each side or until juices run clear. , In a nonstick saucepan, combine the cream, wine or broth, onion, garlic, mushroom mixture and remaining pepper. Bring to a boil, stirring occasionally. Combine cornstarch and cold water until smooth; stir into cream sauce. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain spaghetti; top with chicken and sauce.

Creamy Cajun Chicken Pasta is such a simple and quick recipe, perfect for weeknight dinners. Juicy chicken breast tossed with tender pasta in a creamy cajun garlic sauce, ready in 30 minutes.

8 oz linguine pasta
2 boneless skinless chicken breasts
2 tsp olive oil
2 Tbsp unsalted butter
2 Tbsp cajun seasoning (divided)
3 garlic cloves (minced)
2/3 cup diced tomatoes
1 1/2 cup heavy whipping cream
1/2 cup grated parmesan cheese
2 Tbsp parsley (finely chopped, to serve)

Steps:

  • Bring a large pot of water to a boil and add 1 Tbsp salt. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water then drain, cover, and keep warm.
  • Beat the chicken breasts so that they are even in thickness and season all over with 1½ Tbsp cajun seasoning.
  • In a large non-reactive skillet*, heat 2 tsp oil over medium-high heat. Once hot, add the chicken and sear on both sides. Turn heat down to low and saute until cooked through and 165˚F on a thermometer. Transfer to a cutting board, slice into thin strips, and cover to keep warm.
  • In the same skillet over medium heat, saute the butter and garlic for 30-60 seconds or until the garlic is fragrant. Add the diced tomatoes and saute another 2 minutes.
  • Add in the heavy whipping cream, remaining cajun seasoning, and parmesan cheese, and bring to a simmer. Season to taste if needed.
  • Add the sliced chicken and cooked pasta to the sauce and toss until combined and pasta and chicken are warmed through. Add warm reserved pasta water if desired to thin the sauce. Serve with freshly grated parmesan and chopped parsley.

4 ounces linguine pasta
2 boneless, skinless chicken breast halves, sliced into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter
1 green bell pepper, chopped
½ red bell pepper, chopped

1 green onion, minced
1 ½ cups heavy cream
¼ teaspoon dried basil
¼ teaspoon lemon pepper
¼ teaspoon salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
  • In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
  • In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese.

1 tablespoon olive oil
2 tablespoons butter
1 clove garlic, minced
6 skinless, boneless chicken breast halves
1 (16 ounce) package linguini pasta
1 onion, chopped
1 cube chicken bouillon, crumbled
½ cup water
1 ¼ cups heavy cream
¾ cup milk
4 green onions, sliced diagonally into 1/2 inch pieces
1 cup grated Parmesan cheese

Steps:

  • In a large saute pan, heat oil, butter and garlic over medium heat. Add chicken and cook until juices run clear. Remove chicken from pan let cool and slice diagonally into long strips. Reserve oil in pan.
  • Meanwhile, cook pasta according to directions on package. Drain.
  • Reheat oil in pan, add onion and saute, stirring often, until onion is soft but still white. Add bullion cube and water; bring to a boil and simmer uncovered for approximately 10 minutes. Stir in cream, milk, green onions and Parmesan cheese.
  • Place pasta in a bowl, layer chicken slices in a decorative pattern over pasta, pour sauce over top of chicken and around pasta. Garnish with parsley or any herbs you desire. Serve immediately.

My first Zaar recipe! Yummy, easy main course, only 15 minutesish to make! Add vegetables like fresh diced tomato (has to be fresh, canned will run), zucchini, sundried tomato or fresh broccoli if you like (steam and add toward the end--after milk). I would have done it but my DBF *hates* veggies. One idea would be to roast some Mediterranean type vegetables in the oven at 400 degrees for around 20 minutes with olive oil. Toss them into the dish.

1/2 lb linguine (half package, cooked and drained)
3 tablespoons olive oil
1 minced garlic clove
6 ounces precooked grilled chicken breasts, strips in the package (can be found in lunch meat section of the grocery store)
2 cups milk (add a little extra if needed)
3 tablespoons cornstarch (or flour if you don't have cornstarch but I find cornstarch is much better to work with in this case)
1 1/2 tablespoons basil (crushed works best but regular dried is ok)
3/4 teaspoon crushed red pepper flakes
1/2 teaspoon sugar
1/2 teaspoon salt
1 pinch black pepper
1/2 cup fresh grated parmesan cheese (you can now get it in Kraft's canister form, just make sure it's the shreds, not the powder)

Steps:

  • Cook the linguine and set aside.
  • Put 3 tablespoons of olive oil into a large skillet on medium-high heat.
  • Sweat the garlic in the olive oil for a couple minutes.
  • Add the chicken breast strips, cook until warm throughout.
  • Mix 3 tablespoons of cornstarch into the milk until blended.
  • Add the mixture to the skillet and cook for just a minute.
  • Put the the linguine into the skillet, over the sauce and chicken.
  • Sprinkle the basil, red pepper, sugar, salt, and pepper onto the linguine in the skillet.
  • Mix well, toss with grated parmesan and serve.
