Dessert doesn't get much easier than this stovetop treat that's loaded with fresh apricots and berries. Served with a scoop of low-fat ice cream, it seems anything but light.

5 fresh apricots, halved
1/4 cup apricot nectar
2 teaspoons sugar, divided
1/2 cup sliced fresh strawberries
1/2 teaspoon ground cinnamon
2 flour tortillas (8 inches)
Butter-flavored cooking spray
2 cups reduced-fat vanilla ice cream
1/4 cup fresh raspberries

Steps:

  • In a nonstick skillet, cook and stir the apricots, nectar and 1 teaspoon sugar over low heat until apricots are tender, about 5 minutes. Stir in the strawberries; cover and remove from the heat. Combine cinnamon and remaining sugar; set aside. , In another nonstick skillet, cook one tortilla over low heat for 1-2 minutes on each side or until golden and crisp. Spritz one side with butter-flavored spray and sprinkle with half of the cinnamon-sugar. Repeat with remaining tortilla. , Place a tortilla sugared side down; spread with fruit mixture. Top with remaining tortilla, sugared side up; cut into four wedges. Serve each wedge with 1/2 cup of ice cream and 1 tablespoon of raspberries.

2 pounds boneless, skinless chicken thighs
adobo seasoning to taste
12 (10 inch) flour tortillas
1 ½ cups shredded Mexican cheese blend
1 onion, chopped
1 (6 ounce) can sliced black olives, drained
1 (7 ounce) can diced green chilies, drained

Steps:

  • Place the chicken on a plate, and sprinkle with adobo seasoning on both sides. Let it marinate for 15 minutes.
  • Heat grill for medium-high heat.
  • Lightly oil the grill grate. Place chicken on grill, and cook for 10 minutes per side, or until juices run clear. Remove chicken from grill, and cut into bite-size pieces.
  • Place one or two tortillas on the grill, and sprinkle with a thin layer of cheese, chicken, onion, olives, and chiles. Top with another tortilla, and grill until brown and crispy on both sides, about 3 minutes per side. Repeat with remaining ingredients. Cut into wedges to serve.

Vegetable cooking spray
4 large spinach flavor flour wraps, available on dairy aisle of larger markets, 12 inch diameter
3/4 pound brie with herbs, sliced
4 tablespoons chopped fresh chives
2 tablespoons chopped fresh tarragon leaves
Sour cream, optional garnish
Salsa, optional garnish

Steps:

  • Get grill or grill pan hot. Spray 1 side of wraps with cooking spray. Place that side down, char the wraps, as many as will fit on your grill or grill pan at the same time, 30 seconds on the first side. Spray opposite side lightly with vegetable cooking spray and turn. Arrange a layer of sliced brie with herbs across half of each flour wrap. Sprinkle cheese with chives and tarragon fold quesadillas in half, covering cheese. Lightly press down on quesadillas, turn and cook 30 seconds longer. Cut into wedges and serve with sour cream and salsa, if desired.

2 scallions, thinly sliced
Grilled-Tomato Salsa, for serving

Steps:

  • Heat grill to medium. In a small bowl, whisk together oil and vinegar; season with salt and pepper. Brush both sides of mushrooms with oil mixture; starting with stem side up, grill mushrooms until tender when pierced with the tip of a sharp paring knife, 8 to 12 minutes, turning once. Remove from grill; slice 1/2 inch thick.
  • Layer one half of each tortilla with cheese, scallions, mushroom slices, and then more cheese, dividing toppings evenly. 2 Tbsp. sugar
1 tsp. ground cinnamon
4 small bananas
1/2 cup thawed COOL WHIP LITE Whipped Topping

Steps:

  • Heat grill to medium-high heat.
  • Brush margarine onto both sides of tortillas; sprinkle evenly with combined sugar and cinnamon. Stack tortillas on microwaveable plate; cover with paper towel.
  • Peel bananas; cut lengthwise in half. Grill 3 to 4 min. on each side or until warmed and slightly browned. Meanwhile, microwave tortillas on HIGH 30 to 40 sec. or just until warmed.

1 cup red apple, with peel finely diced

Steps:

  • Preheat lightly sprayed electric grill to medium low.
  • Combine cream cheese, brown sugar and vanilla in small bowl until smooth. Divide and spread mixture over 2 tortillas. Sprinkle apple over remaining 2 tortillas. Sprinkle apple with cinnamon. Cover with first 2 tortillas. Slide, apple side down, onto grill. Cook for 1 1/2 to 2 minutes. Carefully turn over. Cook for 1 1/2 to 2 minutes until crispy and browed. Let stand for 1 minute.
