1 ½ teaspoons mayonnaise
1 ½ teaspoons half-and-half cream
6 eggs
½ teaspoon dried dill weed
¾ teaspoon garlic powder
1 tablespoon bacon drippings
1 ½ tablespoons red bell pepper, chopped
1 ½ tablespoons finely chopped ham
1 ½ tablespoons finely chopped sweet onion

Steps:

  • Whisk together the mayonnaise and half-and-half in a large bowl until smooth, then whisk in the eggs, dill weed, and garlic powder. Set aside.
  • Heat the bacon drippings in a large skillet over medium heat. Stir in the red bell pepper; cook and stir until the bell pepper begins to soften, about 2 minutes. Stir in the ham and onion. Continue cooking and stirring until the onion is translucent and softened, about 5 minutes more. Pour in the egg mixture. Cook and stir until the eggs are set, about 5 minutes.

1/4 pound sliced smoked salmon
12 eggs
1/2 cup heavy cream
Salt and freshly ground black pepper
2 tablespoons butter
12 to 15 blades of fresh chives, finely chopped

Steps:

  • Reserve 2 slices of salmon for garnish. Chop the remaining salmon into very small pieces.
  • Whisk your eggs and cream together. Add 1/2 of your chopped chives and season eggs with salt and pepper. Preheat a large nonstick skillet over medium heat. Melt butter in the pan and add eggs. Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain wet, stir in chopped salmon. Remove pan from the stove and place on a trivet. Garnish the eggs with remaining salmon and chives and serve right out of the warm pan.
  • Note: If you are serving these eggs with the other recipes provided as a brunch, a platter of store bought fruit filled dainties will complete your elegant brunch. Allow 1 dainty per person but halve dainties so that guests may mix and match varieties.

That plus a touch of creme fraiche. Fifth, do not season with salt until the very end. Follow these rules and you will never have flabby, rubbery scrambled eggs again.

12 large eggs
4 tablespoons creme fraiche
4 tablespoons cold butter, cut into small pieces
Kosher salt and freshly ground black pepper
1/4 cup thinly sliced green onion
2 tablespoons finely chopped fresh chives
1/2 cup crumbled goat cheese
1/4 cup romesco
4 ounces bucheron cheese

Steps:

  • Crack the eggs into a large bowl and whisk until light and frothy and uniform in color. Strain the eggs through a mesh strainer into a bowl. Whisk in the creme fraiche.
  • Heat the butter in a large nonstick pan over medium-low heat until it melts. Add the eggs and gently mix using a heat resistant rubber spatula or a wooden spoon until soft curds form.
  • Remove from the heat (the eggs will still be somewhat wet), season with salt and pepper and let the heat of the pan finish cooking them for another 1 minute. Gently fold in any of the Optional Additions just as the eggs are coming off the heat, if using.

I found this recipe in the Atkins Meal Planner and it's delicious and soooo easy to make. The smoked salmon, the green onions and the dill will give your breakfast a whole new dimension. Enjoy! :)

1/2 teaspoon salt

Steps:

  • In a large bowl, beat eggs, cream. dill and salt.
  • Melt butter in a large skillet over medium heat.
  • Add green onions; cook 8 minutes, until softened.

25 ml double cream
100 g thinely sliced smoked salmon

Steps:

  • Toast the 4 slices of brown bread,spread thinely with butter and cut off the crusts.
  • Cut each bit of buttered toast into four triangles.
  • Break the eggs into the bowl and whisk together with the salt and pepper.
  • Melt the butter in a pan and add the eggs.
  • Stir with a wooden spoon scraping the egg away from the bottom of the pan all the time until the degree of firmness that you like is achieved; i prefer the eggs to be a little runny.
  • Remove the pan from the heat and stir in the double cream.
  • Fold the smoked salmon into the scrambled eggs and serve on the buttered toast.
