GRILLED HAVARTI BURGERS IN PITAS
A simple way to spruce up a cheeseburger...tucked in pita bread with tangy veggies and cheese.

Steps:
- Heat gas or charcoal grill. In shallow bowl, mix tomato, cucumber and vinaigrette. Let stand while preparing patties.
- In medium bowl, combine ground beef, onion, Italian seasoning, garlic-pepper blend and salt; mix well. Shape mixture into 4 oblong patties, about 1/2 inch thick.
- When grill is heated, place patties on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cover grill; cook 11 to 13 minutes or until meat thermometer inserted in center of patties reads 160°F., turning once. During last 1 to 2 minutes of cooking time, place cheese on patties; cook until melted.
- Place cheese-topped patties in pita bread halves. Spoon tomato-cucumber mixture into bread halves with patties.

- For the cucumber sauce, line a fine mesh strainer with two layers of cheesecloth. Place yogurt in strainer over a large bowl. Cover and refrigerate for at least 4 hours or overnight., Drain and discard liquid; set yogurt aside. Place cucumber in a colander over another bowl; sprinkle with salt. Let stand for 15 minutes; discard liquid., In a large bowl, whisk oil and vinegar until blended. Stir in the garlic, reserved yogurt and cucumber; cover and refrigerate until serving., For gyro burgers, in a large bowl, combine the yogurt, garlic, rosemary, lemon-pepper and salt. Crumble meat over mixture and mix well. Shape into four oval patties., Grill, covered, over medium heat for 6-7 minutes on each side or until a thermometer reads 160°. Serve in pita bread with sliced cucumber and cucumber sauce.

- Heat oven to 450°F. Spray 15x10x1-inch pan with cooking spray. Place burgers on one side of pan. Place bell pepper, onion and mushrooms on other side of pan. Spray vegetables with cooking spray for about 3 seconds; sprinkle with seasoned salt.
- Bake 10 minutes. Remove mushrooms from pan. Turn burgers and vegetables; bake 5 to 8 minutes longer or until vegetables are tender and burgers are hot.
- In small bowl, mix topping ingredients. Spread topping on insides of pita bread halves. Fill each pita bread half with lettuce, burger and vegetables.

HORSERADISH BURGERS WITH HAVARTI

- Put the beef in a large mixing bowl. Use a rubber spatula to fold in the horseradish and chives; season with salt and pepper. Hand-form the meat into 8 burgers, cover them, and chill in the fridge while preparing your grill.
- Place a large grill pan on 2 burners over medium-high heat or preheat a gas or charcoal grill and get it very hot. Burgers stick to a cold grill, so it's important that you give it plenty of time to heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel then carefully and quickly wipe the hot grates of the grill; this will create a non-stick grilling surface. Grill the burgers for 8 minutes per side for medium; 7 minutes if you like your meat rare.
- When the burgers are just about cooked, put a couple of slices of cheese on top of each and cover the grill for 1 minute to melt the cheese. Remove the burgers to a clean side plate so you have enough room to toast the buns.
- Rub the grill rack with the same paper towel as before to clean the small charred pieces, then toast the hamburger buns cut-side down for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as bacon, lettuce, sliced tomato, and onion.

PESTO & HAVARTI GRILLED EGGPLANT BURGERS
I'm always trying to come up with new vegetarian ideas for when my fiancee grills at home with the guys. This is one of those ideas, probably my favorite one. The servings will depend on the size of your eggplant. You could also use vegan cheese in place of the havarti to make it a vegan meal!

- Spread the pesto on each eggplant.

GRILLED GYRO BURGERS

- In a medium bowl, combine 1 container of plain yogurt with the envelope of ranch dressing mix. Remove half of the mixture to another bowl. Into one of the bowls, add the remaining container of plain yogurt and diced cucumber; mix well. Cover and refrigerate. Preheat grill and lightly oil grate.
- Mix the ground beef and 1/4 cup onion into the remaining half of the yogurt mixture. Shape into 6 hamburger patties.
- Grill patties on medium heat for 7 minutes each side, turning once.

- Mix first 5 ingredients together in medium bowl. Season yogurt sauce to taste with salt and pepper.
- Mix lamb and next 5 ingredients in large bowl until well blended. Season generously with salt and pepper. Shape mixture into four 3/4-inch-thick patties.

- Heat a large nonstick skillet over medium high heat. Butter 4 bread slices on one side. Place slices, butter-side down, on a clean work surface. Spread 1 tbls. cream cheese(or mayonnaise) on each slice. Now spread 1/2 to 1 tbls. fruit spread in a thin layer on top of cream cheese. Top with Havarti cheese and layer with avocado slices. Cover with remaining bread; butter tops.
- Place 2 sandwiches in the pan and cook for 2 to 3 minutes, until bread is golden brown and cheese has begun to melt. Flip sandwiches over, pressing down slightly with a spatula. Continue cooking until golden brown. Serve immediately. Enjoy!
