LEMON GARLIC GRILLED CHICKEN WINGS RECIPE
These lemon garlic wings are a must-try. By first grilling the wings over low, indirect heat the skin and fat render. Then, we move the wings to a hotter, more direct heat until they become golden brown and slightly charred.

Steps:
- Combine garlic, lemon zest, lemon juice, mustard, olive oil, salt, red pepper flakes and black pepper in a large resealable plastic bag. Add chicken wings, seal bag, and turn to coat. Chill at least 1 hour or overnight.
- Prepare grill for indirect heat. Remove wings from marinade and place, skin-side-up on grill. Cover grill and cook until fat has rendered and an instant-read thermometer reads close to 165º F, about 10 minutes.
- Move the wings over direct heat. Grill, turning occasionally, until wings are golden brown and slightly charred, 5 to 10 minutes. Stay close to watch for the occasional flare up. If this happens, move the wings to a slightly cooler part of the grill.
- Make dipping sauce by combining mayonnaise, mustard, lemon juice and hot sauce in a small bowl; season to taste with salt and pepper.
- Dust the grilled wings with grated cheese and serve alongside dipping sauce.
GARLIC AND HERB GRILLED WINGS
Grilled wings are my go-to when I don't want to deal with the hassle of frying. Not only do they get super crispy on the grill, they also get an incredible charred flavor you can't get any other way. I toss them hot off the grill in a bright lemony herb sauce and finish with freshly grated Parmesan cheese.

- Preheat the grill to 400 degrees F. Clean and lightly oil the grill grates.
- Place the chicken wings in a large bowl and drizzle with 1 to 2 tablespoons grapeseed oil and add a large pinch each of salt and pepper. Toss to coat.
- Arrange the wings on the grill, cover and cook for 10 minutes. Flip the wings and grill until cooked through, golden brown and the skin is crispy, 5 to 10 minutes.
- While the wings grill, make the garlic and herb mixture: In a small food processor, combine the lemon zest with the garlic, basil, parsley, dill, olive oil and a pinch each of salt and pepper.
- Process until a chunky paste forms. Pour into another large bowl. Add the wings when they're ready and toss to coat.
- Pile up the wings on a large platter or plate and finish with freshly grated Parmesan. Serve with the lemon wedges on the side for squeezing.
GRILLED CAJUN LEMON PEPPER CHICKEN WINGS
Grilled chicken wings are the quintessential finger food for a summer cookout with family and friends. Just toss the chicken in a flavorful rub, then grill to golden brown perfection. A final toss with Cajun lemon-pepper seasoning adds a kick of spice and acidity.

- Prepare a grill for medium heat.
- Toss the chicken wings, vegetable oil, 2 teaspoons of the Cajun seasoning, 3/4 teaspoon of the garlic powder, 1 teaspoon salt and several grinds of pepper in a large bowl until evenly combined.
- Brush the grill grates lightly with oil. Place the chicken wings on the grill in an even layer and cover with the lid. Cook, flipping occasionally, until well browned and cooked through, 20 to 25 minutes.
- Meanwhile, stir together the parsley, lemon zest and juice, remaining 1 teaspoon Cajun seasoning, remaining 1/2 teaspoon garlic powder, 1/4 teaspoon salt and 1 teaspoon pepper in another large bowl until combined.
- Transfer the wings to the bowl with the Cajun lemon pepper seasoning and toss until evenly coated. Arrange on a large serving platter.
GRILLED LEMON-GARLIC WINGS RECIPE
Steps:
- Gather the ingredients.
- In a large bowl, mix the salt, sugar and water together, stirring until the salt and sugar dissolves.
- Put wings in a 1 gallon resealable bag with the brine and allow to marinate in fridge for about 1 to 1 1/2 hours. Discard brine, rinse the wings briefly with cold water, and pat them dry with paper towels.
- Prepare your grill for indirect cooking , medium heat (350 F to 375 F). Clean and oil the grill grates. Grill the wings on the indirect side of the grill, turning occasionally so they brown evenly, 1 to 1 1/4 hours.
- Gather the ingredients.
- On a cutting board sprinkle a little salt on the minced garlic and mash together to form a paste.
- Heat the oil and garlic together in a small saucepan over low heat until the garlic is fragrant, 1 to 2 minutes. Remove from the heat.
- Whisk the oil and garlic with the lemon juice and thyme in a large, nonreactive baking dish or bowl (glass, ceramic, stainless steel, or enamel-lined) and set aside.
- When wings have about 15 to 20 minutes cooking time left, remove them from grill, toss in the lemon-garlic sauce, and return to grill.
- After another 10 minutes baste the wings with the remaining lemon-garlic sauce.
- When the wings are cooked through, coat them one last time with the lemon-garlic sauce and serve.

- Place the wings in a large bowl and sprinkle all over with sea salt and pepper. In a large measuring cup, whisk together the oil, lemon juice, zest, garlic, salt, and pepper.
