4 ahi tuna steaks (fresh or frozen (thawed if frozen), 4-6 oz each)

Steps:

  • Combine marinade ingredients in a blender. Blend until smooth. Pour over steaks in shallow dish. Allow to marinate at least 5 minutes.

2 tablespoons chopped kalamata or ripe olives
3 tablespoons chopped fresh basil or oregano leaves
1/4 cup olive or vegetable oil
1/2 teaspoon garlic salt
1/4 teaspoon pepper
4 tuna steaks, 1 inch thick (about 2 pounds)

Steps:

  • In medium bowl, gently toss tomato, cheese, olives and 1 tablespoon of the basil. Cover and refrigerate until serving.
  • Spray grill rack with cooking spray. Heat coals or gas grill for direct heat.
  • In small bowl, mix remaining 2 tablespoons basil, the oil, garlic salt and pepper. Brush mixture over tuna.
  • Grill tuna uncovered 4 inches from medium-high heat 5 minutes. Turn carefully; brush with any remaining oil mixture. Grill 10 to 15 minutes longer or until tuna flakes easily with a fork. Serve topped with tomato mixture.

Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

3 tablespoons extra virgin olive oil

½ cup hickory wood chips, soaked

Steps:

  • Place tuna steaks and olive oil in a large resealable plastic bag. Seal, and refrigerate for 1 hour.
  • Preheat the grill for medium heat. When coals are very hot, scatter a handful of hickory or mesquite wood chips over them for flavor.
  • Lightly oil grill grate. Season tuna with salt and pepper, and cook on the preheated grill approximately 6 minutes, turning once. Transfer to a serving platter, and drizzle with freshly squeezed lime juice. Serve immediately.

4 one-inch-thick tuna steaks, (about 4 ounces each)
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, plus more for grill
Zest and juice of 1 lemon
6 anchovy fillets, cut into thirds
1 medium clove garlic, finely chopped
1 tablespoon coarsely chopped fresh oregano
1 tablespoon coarsely chopped fresh basil

Steps:

  • Preheat a ridged stovetop grill pan or outdoor grill. Season tuna with salt and pepper. Brush grill pan or grill with oil. Grill tuna until well browned but still rare, about 2 minutes per side; the flesh will be firm and tight. For medium rare, cook 1 minute more, until the flesh begins to pull apart. For medium, cook 2 minutes more, until the flesh flakes apart.
  • Meanwhile, in a small saucepan, combine lemon zest and juice, anchovies, oil, and garlic. Bring to boil over medium heat, remove from heat, and stir in oregano and basil. Serve immediately with sauce spooned over tuna.

8 ounces small red potatoes, peeled
Coarse salt
4 ounces haricots verts, stems trimmed
12 ounces cherry tomatoes, quartered
3 anchovy fillets, finely chopped
12 Kalamata olives, pitted and thinly sliced
1/4 cup thinly sliced fresh basil
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
Freshly ground pepper
4 small yellowfin tuna steaks (about 2 1/2 pounds total)
Sliced crusty bread, for serving

Steps:

  • Cover potatoes with cold water in a medium saucepan; add salt. Bring to a boil; cook until potatoes are tender, 10 to 12 minutes. Drain, and rinse under cold running water. Cut potatoes into 1/4-inch-thick slices; transfer to a large bowl.
  • Prepare an ice-water bath; set aside. Bring a medium saucepan of water to a boil. Add haricots verts; cook until almost tender, 4 to 5 minutes. Plunge haricots verts into ice-water bath; let cool completely. Drain, and cut haricots verts in half. Add to bowl with potatoes. Add tomatoes, anchovies, olives, basil, oil, and lemon juice; season with salt and pepper. Toss to combine, and set aside.
  • Preheat grill to high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 2 seconds). Season tuna with salt and pepper. Grill tuna, turning once, 3 minutes per side for rare. Transfer to a cutting board; slice tuna against the grain. Grill bread, turning once, until slightly charred. Serve tuna with salad and bread.

If you're in a hurry you can skip marinading them for one hour and just cover them with the sauce and place them directly on the grill. You can cook these steaks on your barbecue or on a George Forman grill, or even on your stovetop. Good tuna should be purchased fresh and cooked so it is still pink in the middle -- just like a steak.

6 tuna steaks
1 lemon, juice of
1/4 cup cilantro, chopped
3 garlic cloves, crushed
3 shallots, minced
2 teaspoons chili powder

  • Combine lemon juice, cilantro, garlic, shallots, chili powder, cumin and salt. Mix well.
  • Place tuna fillets in a large resealable bag.
  • Pour marinade in bag and work it around until the steaks are covered. Refrigerate for 1 hour.
