GRILLED LONDON BROIL STEAK

4 cloves garlic (minced)
3 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1 tablespoon dried Italian seasonings
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon crushed red hot red pepper flakes
2 pounds flank or top round steaks (about 4 pieces)
Cooking spray or oil

Steps:

  • Stir together all ingredients except for steak in a large Ziplock bag. Note: you can skip steps 1 and 2, and use steak seasoning if desired.
  • Add steaks and seal, removing air. Marinate in the fridge for at least 1 hour or overnight.
  • Remove steak from the fridge and bring it to room temperature, about 30-45 minutes, before cooking.
  • Preheat a gas grill to medium-high heat, about 500° F. Place steaks on lightly greased grill at a 45° to the grates, close lid, and grill 2-3 minutes until bottoms are seared. Rotate 90° and continue to grill 2-3 minutes to create cross-hatch grill marks.
  • Rotate and repeat for the other side, until internal temp reaches the desired doneness. See recipe notes below for safe cooking temps.
  • Remove from grill and let rest 5-10 minutes. Cut steaks across the grain and serve.

1 beef flank steak (about 3/4 pound)
1 garlic clove, minced
1/2 teaspoon seasoned salt
1/8 teaspoon crushed red pepper flakes
1/4 cup Worcestershire sauce

Steps:

  • With a meat fork, poke holes in both sides of meat. Make a paste with garlic, seasoned salt and red pepper flakes; rub over both sides of meat. Place the steak in a large shallow dish. Add Worcestershire sauce and turn steak. Cover: refrigerate for at least 4 hours, turning once. , Drain and discard marinade. Grill, uncovered, over hot heat or broil 4 in. from the heat for 4-5 minutes on each side or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°). To serve, thinly slice across the grain.

2 lb. London Broil steak (to 2½ lbs.)
2 Tbsp. balsamic vinegar
½ cup soy sauce
2 Tbsp. Worcestershire sauce
2 Tbsp. olive oil
1 Tbsp. lemon juice (freshly squeezed)
1 tsp. garlic powder
2 Tbsp. brown sugar
½ tsp. powdered ginger
¼ tsp. red pepper flakes
salt and pepper (to taste)

Steps:

  • In a bowl, whisk together soy sauce, balsamic vinegar, powdered ginger, Worcestershire sauce, olive oil, fresh lemon juice, garlic powder, brown sugar, and red pepper flakes. This is your marinade.
  • Pour your marinade into a zip-lock bag, then add your London Broil steak. Shake well and refrigerate to marinate for at least 4 hours or overnight.
  • Remove your steak from the bag and set on a cutting board. DO NOT discard the marinade! You'll use it to make a sauce.Sprinkle with salt and pepper to taste on both sides.
  • Add to the grill and grill at 400°F for 5 to 8 minutes on each side.
  • While your steak is on the grill, pour the steak marinade from the bag into a skillet over medium heat. Mix and let it start to simmer and thicken until it forms a sauce.
  • Remove your steak from the grill and let it rest 10-15 minutes. After resting, slice thinly and serve with marinade sauce on top. Enjoy!

How To Cook London Broil (On The Grill) image

Using the techniques and marinade ingredients here, you'll turn out a juicy and tender London broil every time.

1 2 lb London broil
½ tsp Sea Salt
½ tsp Ground Black Pepper
½ cup Horse Soldier Bourbon
¼ cup soy sauce
½ cup olive oil
¼ cup Worchestershire sauce
¼ cup light brown sugar
2 tbsp garlic (finely minced)
2 tbsp balsamic vinegar
1 tsp red pepper flakes
½ cup Horse Soldier Bourbon
½ cup beef tallow

Steps:

  • Step 1: Using a sharp knife, make a series of 1/4" deep slices in a diamond pattern on both sides of the steak. Then season both sides of the steak with the salt and pepper, ensuring it gets into the cuts, and place the steak in a sealable zip top bag. Then, whisk together all ingredients for the marinade. Gently pour the marinade into the bag with the steak, squeeze as much air out of the bag as possible and seal the bag. Place it on a plate and put it in the refrigerator for 4-6 hours.
  • Step 2: Remove the steak from the refrigerator and allow it to come up to room temperature for 1 hour. While the steak is sitting out, light your grill and set up for two zone cooking, establishing the temperature at 225 °F.
  • Step 3: Remove the steak from the marinade and discard any remaining liquid. Place the steak on the grill over indirect heat. Using a reliable leave in thermometer, monitor steak temperature and remove steak from the grill when it reaches 117 °F. While steak is cooking over indirect heat, add the bourbon and beef tallow to a small sauce pan and place over low heat until the tallow has melted into a liquid. Keep warm and set aside.
  • Step 4: Stoke the coals or increase the temperature of a gas grill to high. Establish as hot of a direct heat zone as possible. Then, place the steak back on the grill over direct heat. Glaze the surface of the steak with the bourbon and tallow mixture and flip the steak. Repeat every 20-30 seconds for a total of four minutes per side, or until the internal temperature of the steak reaches 125 °F as indicated by a reliable instant read thermometer.
  • Step 5: Remove the steak from the grill and let rest 3-5 minutes before slicing.

5 large garlic cloves
1 teaspoon salt
1/4 cup dry red wine
1/4 cup balsamic vinegar
1 tablespoon soy sauce
1 teaspoon honey
1 1/2 pounds top-round London broil

Steps:

  • Mince the garlic to a paste with salt and in a blender blend with the salt, red wine, balsamic vinegar, soy sauce and honey.
  • In a heavy-duty sealable plastic bag, combine London broil with marinade. Seal bag, pressing out excess air, and put in a shallow baking dish. Marinate steak, chilled, turning occasionally, at least 4 hours and up to 24.
  • Bring steak to room temperature before grilling. Remove steak from marinade, letting excess drip off, and grill on an oiled rack set 5 to 6 inches over glowing coals, 7 to 9 minutes on each side for medium-rare. Transfer steak to a cutting board and let stand 10 minutes.
  • Holding a knife at a 45-degree angle, cut steak across grain into thin slices and serve with tomatoes.

1/2 cup ketchup
1/3 cup vinegar
1/4 cup oil
3 tablespoons mustard
3 tablespoons soy sauce

3 garlic cloves, minced

Steps:

  • Mix all marinade ingredients together and place in a gallon size zip lock.
  • Score meat on both sides then place into bag with marinade.

  • Grill meat on high heat for 3-5 minutes on each side turning only once.
  • Meat registers 120-125 degrees F.
  • Let sit 10 minutes before cutting very thin slices on the bias.

  • In a medium-size, heavy-bottomed saucepan heat the oil over moderate heat.
  • Add the shallots and saute until soft (about 5 minutes).
  • Add the remaining ingredients EXCEPT THE MEAT; bring to a boil.
  • Remove marinade from heat and let cool.
  • Pour the cooled marinade into a large resealable plastic bag; add the beef. With the bag securely closed turn gently until beef is evenly coated. Refrigerate overnight; turn bag ocassionally.

DRY-RUBBED LONDON BROIL

Here is a cheap beef dinner of uncommon flavor, perfect for serving to a crowd. It calls for the process known as indirect grilling, in which you build a fire on one side of your grill and cook on the other, so that the dry-rubbed meat is never in direct contact with flame. (If you grill the meat directly, the sugar and spices will burn rather than melt into appetizing darkness.) The recipe is forgiving. You might add granulated onion or garlic powder to it, or omit the coriander if you don't have any. Be careful with the paprika as there are so many different varieties afoot: if it's smoked, you'll need less, and if it's fiery you may need less cayenne. (No cayenne? Use red pepper flakes.) Adjust the seasonings to your taste.

  • Uncover the grill, turn the meat over and repeat on the other side for 8 to 10 minutes more, for medium-rare meat. Let the meat sit on a cutting board for 5 minutes or so before slicing.
