LAHMAJOUN (ARMENIAN "PIZZA") SHORTCUT

An updated take on a classic, labor-intensive recipe using flour tortillas!

1 lb. ground beef, lamb, or combination of both.
1 medium onion (finely chopped)
1 medium red pepper (finely chopped)
1/2 small green pepper (finely chopped)
1/2 bunch parsley ( washed well, finely chopped)
1 15-oz. can diced tomatoes (well-drained)
2 Tbsp. tomato or red pepper paste
1-2 Tbsp. flour
1½ tsp. dried mint
1 clove garlic (minced)
1½ tsp. salt
1 tsp. sweet paprika
1 dash cayenne pepper (or to taste)
2 10-count pkgs. 8-inch flour tortillas

Steps:

  • To save time, process the onion, peppers, and parsley in a food processor, using the metal "S" blade. Squeeze out any excess liquid - this is VERY important! Be careful not to over-process. Vegetables should still be a bit chunky, not pureed.
  • In a large bowl, combine all of the topping ingredients, mixing well.
  • Preheat oven to 400° - 425°F.
  • Thinly spread about 3 Tbsp. of meat topping on the suface of each tortilla, spreading to the edge.
  • Place 2 to 3 tortillas on each baking tray. They should not overlap each other.
  • Bake on the lower rack for about 5 minutes, then on the upper rack, for another 5 minutes, or until the meat topping has browned, and the edges of the tortilla are golden.
  • Continue this procedure until topping and/or tortillas are all used.

2 tablespoons softened butter
4 arabic pita breads (approx 12 diameter)
8 slices tomatoes, thin
1 egg
6 ounces lean ground beef
1 1/4 cups onions, chopped
1 teaspoon cumin
1/4 teaspoon allspice
1/4 teaspoon cinnamon
2 tablespoons olive oil
1/3 teaspoon cayenne pepper
salt and pepper
2 tablespoons parsley, minced

Steps:

  • Saute the beef, onions and spices in the olive oil until browned and cooked through, about 15 minutes.
  • Season to taste.
  • Stir in parsley.
  • Mix the butter together with the egg to make a spread.
  • Spread the 4 pites with this mixture.
  • Distribute the meat mixture evenly amongst the 4 pites and press down well with palm of hand so that it adheres to the pites.
  • Don't make the layer too thick.
  • Preheat oven to 420°F.
  • Bake pites for 5-8 minutes.
  • Remove, top with 2 slices of tomato each and roll each pita up (use a sheet of aluminum foil to wrap around outside).
  • Enjoy!
  • Note. To freeze whole: Cool. Freeze whole between layers of waxed paper or foil. Omit tomatoes. To reheat: place in a single layer and heat at 400 degrees for 8-10 minutes. top with tomatoes and serve. OR Freeze meat mixture in a freezer bag. Thaw in fridge. Proceed with recipe.

3/4 teaspoon dried yeast
1/2 teaspoon sugar
1 1/2 cups lukewarm water
2 1/4 cups flour
1/2 teaspoon salt
Olive oil for bowl and brushing dough
1 tablespoon butter
1 onion, finely chopped
3 cloves garlic, minced
8 ounces ground lamb or chuck
1 tomato, peeled, seeded and chopped
1 jalapeno, seeded and finely chopped
1/2 teaspoon kirmizi biber, or combination sweet paprika and cayenne pepper
1/4 cup finely chopped fresh mint
1/4 cup finely chopped fresh parsley
Salt and freshly ground black pepper
Juice of 1 lemon
2 1/2 cups white Turkish cheese or feta cheese, crumbled
2 eggs, lightly beaten
1/4 cup unsalted butter, softened
1/2 cup finely chopped fresh parsley

Steps:

  • Combine the yeast and sugar with a little of the warm water, and set aside until mixture is frothy. Sift the flour and salt into a large bowl, and make a well in the center. Add the yeast mixture, along with the remaining warm water. Using your hands, work the mixture into a dough, adding more water if necessary. Transfer dough to a lightly floured surface and knead until pliable and springy, about 5 minutes. Place dough in an oiled bowl, turning to coat, cover with a damp cloth and let rise in a warm place until dough doubles in size, about 1 hour.
  • Punch down risen dough and knead on a lightly floured surface. Roll into a log and cut into 2 to 3 equal pieces. Roll each piece into a ball, place on floured surface and let rest 30 minutes under a towel.
  • Preheat oven to 450 degrees F, and preheat baking sheets, tiles, or a baking stone.
  • Prepare the filling: Melt the butter in a skillet, add the onion and saute until softened, 5 to 7 minutes. Add the garlic and saute another minute. Transfer onion mixture to a large bowl, add remaining ingredients, and mix thoroughly with your fingertips. If mixture seems too dry, add a teaspoon of water.
  • Place a ball of dough on a floured surface and roll into a round, flat circle, about 1/8-inch thick. Place the round on the oiled, preheated baking sheets or tiles. Brush the top with olive oil and spread with a thin, even layer of the meat filling, leaving a 1/2-inch border around the edge. Repeat with remaining dough and filling.
  • Bake for 12 to 15 minutes. The dough should still be soft enough to roll up.
  • Squeeze a little lemon juice over each of the hot lahmacuns, and serve immediately either flat or rolled up into cones.
  • For the alternative filling: Mix all the filling ingredients in a bowl and blend thoroughly. Spread a thin layer on each circle of dough. Proceed with recipe, but bake for only 6 to 8 minutes.

2 garlic cloves
1 medium onion, roughly chopped
1 small green pepper, seeded and roughly chopped
1 pound ground lamb (or ground beef)
1 (6-ounce) can tomato paste
1 (14 1/2-ounce) can diced tomatoes
1/4 cup chopped parsley leaves
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
Salt and pepper
Flour tortillas
Lemon wedges, to serve

Steps:

  • Heat the oven to 400 degrees F.
  • Pulse the garlic in a food processor to mince it. Add the onion and pulse to chop, then add the green pepper and pulse to chop. Add the lamb, tomato paste, tomatoes, parsley, cumin, cayenne, and salt and pepper; process until everything is very well chopped. The consistency should be wet and pasty, like hummus. Spread a thin layer of the meat mixture onto flour tortillas all the way to the edge. Bake directly on the oven rack for 8 to 10 minutes, or until the edges are browned and the meat is cooked through. If the tortilla begins to inflate in the oven, pop it with a fork from the top. To serve, squeeze some lemon over the top, fold the pizza into quarters, and eat out of hand.

This Turkish-style pizza is a Turkish flat bread layered with a fresh sauce composed of tomatoes, sweet bell peppers, and minced lamb cooked with a flavorful selection of Mediterranean spices. It is normally garnished with fresh salad and a creamy garlic sauce and or a tangy zesty hot red pepper sauce. It is a really light meal, but filling and flavorful. I find it worth the time to make if I can't get it from my favorite Turkish bakery in my old neighborhood in Amsterdam. For the best flavor, make the topping the night before you make the pizza.

1 teaspoon chopped garlic
1 yellow onion, chopped
3 tablespoons chopped fresh basil
½ cup chopped fresh parsley

½ cup red bell pepper, diced
½ lemon, juiced
4 teaspoons olive oil
4 roma (plum) tomatoes, halved
1 pound lean ground lamb
6 tablespoons double concentrated tomato paste

salt to taste
3 ¼ teaspoons active dry yeast
½ teaspoon white sugar
1 cup warm water (110 degrees F/45 degrees C)
5 cups all-purpose flour
2 teaspoons salt
¼ cup vegetable oil
½ cup water
1 cup plain yogurt
½ teaspoon chopped fresh parsley
¼ teaspoon crushed garlic
salt and ground black pepper to taste
1 cup shredded green cabbage
1 cup shredded red cabbage

Steps:

  • Heat a large skillet over medium-high heat. Combine the garlic, onion, basil, parsley, mint, paprika, cumin, coriander, diced bell peppers, lemon juice, and olive oil in a food processor. Pulse the vegetables until finely chopped. Add the halved tomatoes and process until the mixture is a thick puree.
  • Place the lamb in the preheated skillet and reduce the heat to medium. Add the puree and the tomato paste and mix well. Cook and stir until the lamb is cooked through, 10 to 15 minutes. Stir in cayenne pepper and salt to taste. Transfer the mixture to a shallow baking dish to cool to room temperature. Cover with plastic wrap and refrigerate overnight.
  • Dissolve the yeast and sugar in 1 cup warm water. Combine the flour and salt in a mixing bowl and stir well. Add the vegetable oil and 1/2 cup water to the yeast mixture and pour it over the flour. Use your hands to mix the dough. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Shape the dough into a ball and transfer to an oiled bowl. Cover with a wet towel and let rise in a warm place until doubled in bulk, about 1 hour. Remove the lamb sauce from the refrigerator and allow it to come up to room temperature. Prepare the garlic sauce: combine the yogurt, parsley, crushed garlic, and salt and pepper to taste. Stir well and set aside.
  • Punch the dough down, transfer it to a floured work surface, and cut the dough into 10 portions. Shape each portion into a round. Flatten each round with your hand; use a rolling pin to roll each piece into a 10-inch circle. The dough should be thin, like a crepe. Place the rounds on parchment paper.
  • Preheat an oven to 500 degrees F (260 degrees C).
  • Stir the lamb sauce and then spoon it onto a dough round. Spread it thinly to the edges and press down lightly so it sticks to the dough. Bake pizzas on parchment paper-lined baking sheets on the lowest oven rack until the edges are a light tan color, 8 to 10 minutes.
  • Place on a wire rack to cool. The pizzas can be stored in an airtight container in the refrigerator for three days or in the freezer for three months. To reheat, place the pizzas in a 350 degree F oven (175 degrees C) for 8 minutes.
  • To assemble the lahmacun, drizzle with garlic sauce, top with shredded cabbage, and roll up to eat. See the Cook's Notes for other garnish ideas.

1 package active dry yeast
3 tablespoons white sugar
2 cups warm water
6 cups all-purpose flour
1 ½ teaspoons salt
5 tablespoons shortening
2 pounds ground beef
1 (16 ounce) can whole peeled tomatoes, drained and chopped
2 onions, finely chopped
½ cup chopped fresh parsley
½ cup finely chopped green bell pepper
2 teaspoons salt
1 pinch cayenne pepper
1 pinch ground black pepper

Steps:

  • In a small bowl, mix active dry yeast, 1 tablespoon sugar and 1/2 cup warm water. Allow to stand approximately 5 minutes.
  • In a large bowl, mix flour, salt, 3 tablespoons shortening, remaining sugar, remaining water and the yeast preparation. Knead until smooth. Use the remaining shortening to remove any dough sticking to the sides of the bowl, and to remove dough from fingers. Cover with a towel and place in a warm location until doubled in size, about 2 to 3 hours.
  • In a medium bowl, mix ground beef, tomatoes, onions, parsley, green bell pepper, salt, cayenne pepper and black pepper. Chill in the refrigerator until ready to use.
  • Preheat oven to 450 degrees F (230 degrees C). Lightly flour a large baking sheet.
  • On a lightly floured surface, form dough into 12 balls. Separate each ball in half. Roll halves into balls. Place balls on the prepared baking sheet. Allow to stand approximately 10 minutes.
  • Roll balls into 7 inch diameter circles. Spread approximately 1 1/2 tablespoons meat mixture over each circle. Bake in the preheated oven 15 to 20 minutes, or until beef is no longer pink and dough is lightly browned.

This is an individual size 'pizza' made with a ground meat mixture. After baking you can roll it up and eat it plain, or with a squeeze of lemon. I love it with melted grated jack and chedder cheese,lettuce and tomato taco style! They are delicious! Also, when cool, stack with wax paper in between, bag and freeze. Heat in microwave. Normally my family doubles this recipe and we have a marathon with my Dad manning the oven and my Mom and I preparing the pizzas. The kids love to grab one or two out of the freezer after school. Feel free to adjust seasonings to taste and definitely use the tortillas rather than pita bread!

2 teaspoons light brown sugar
2 teaspoons red wine vinegar
1/2 teaspoon ground cumin
Kosher salt, freshly ground pepper
Meat:
1/2 cup (1 stick) unsalted butter
1 small onion, finely chopped
4 garlic cloves, finely chopped
1/2 pound ground lamb
1/4 pound ground beef
1 teaspoon Aleppo pepper
1 teaspoon ras-el-hanout
1/2 teaspoon ground cumin
Kosher salt, freshly ground pepper
Assembly:
1/2 pound pizza dough, room temperature
Kosher salt, freshly ground black pepper
1 cup fresh flat-leaf parsley leaves

Steps:

  • For tomato sauce:
  • Heat oil in a large skillet over medium-high heat. Add onion, garlic, and serrano chile and cook, stirring often, until beginning to brown, about 4 minutes. Add tomatoes, breaking them up with your hands, piquillo peppers, brown sugar, vinegar, and cumin; season with salt and pepper. Bring to a boil, reduce heat, and simmer, stirring often and mashing with a potato masher (or a spoon), until thickened, 15-20 minutes. Let cool slightly, then purée in a blender until smooth; season with salt and pepper to taste.
  • For meat:
  • Heat butter in a large skillet over medium-high heat until golden brown, about 3 minutes. Add onion and garlic and cook, stirring often, until softened, 5-8 minutes. Add lamb, beef, Aleppo pepper, ras-el-hanout, and cumin; season with salt and pepper. Cook, breaking up with a spoon, until browned, 6-8 minutes. Transfer to a plate and let cool.
  • For assembly:
  • Place a rack in lower third of oven and preheat to 500°F. Cut dough into 4 pieces. Working with 1 piece at a time and keeping remaining pieces covered, gently stretch dough into 12" rounds and transfer to parchment-lined baking sheets. (If dough springs back, let rest 10 minutes, then stretch again, resting as needed, until dough is thin).
  • Spread each round of dough with a layer of tomato sauce; season with salt and pepper and top with a thin layer of meat mixture. Working in batches, cook lahmacun until crusts are browned and crisp, 10-12 minutes.
  • Toss parsley and lemon juice in a small bowl. Top each lahmacun with parsley mixture and drizzle with oil.
  • DO AHEAD: Sauce and meat mixture can be made 1 day ahead. Cover separately and keep chilled.
