GRILLED ROMAINE WITH BLUE CHEESE-BACON VINAIGRETTE
Steps:
- Preheat the grill to high heat.
- Heat 1 tablespoon of the olive oil in a saute pan over high heat. Add the onions and bacon and cook until the bacon is crispy. To the same pan add the balsamic vinegar and 1 tablespoon of the olive oil and stir to combine. Remove from heat and set aside.
- Brush the romaine lettuce with the remaining 2 tablespoons of olive oil, place on the grill cut side down, and quickly sear.
- Serve the lettuce, cut side up, and drizzle the balsamic dressing over the lettuce. Sprinkle with blue cheese and garnish with cracked black pepper.
PINEAPPLE BACON BURGERS
Seasoned hamburger and a slice of pineapple are slapped together, and wrapped in bacon. It's that easy, and adds a wonderful flavor to a regular burger! This recipe was one of my grandmother's favorites. We would make these special for her when she would come up to see us.

- Prepare grill for indirect cooking.
- In a large bowl, mix together hamburger meat and barbecue sauce. Season with salt and pepper.
- Shape mixture into 4 large patties. Place a slice of pineapple on top of each. Crisscross 2 bacon strips around each burger, and secure with toothpicks.
- Brush oil on grate. Place burgers on grill over medium low heat. Cook, covered, until the burger is cooked through. Turn often to avoid burning the bacon.

- Heat a grill until medium-hot. Grill pineapple and bacon, turning once, until browned, about 2 minutes. Cut into 1-inch pieces; set aside.
- Generously brush one side of pizza dough with oil; grill, oiled side down, until underside is golden brown and top begins to bubble, 3 to 5 minutes. Quickly brush top with oil; flip crust. Top with a thin layer of cheese and some of the pineapple and bacon. Grill until cheese is just melted, toppings are hot, and crust is cooked through, 3 to 5 minutes more.
- Slide pizza with a large spatula onto a cutting board. Season with salt and pepper. Arrange mint on top. Drizzle with oil. Repeat to make more pizzas.

- Preheat the grill to 375°F (190°C).
- In a large bowl, season the ground beef with salt and pepper. Add the barbecue sauce and mix with your hands until well incorporated.
- Divide the meat into 4 baseball-sized portions. Roll into balls and place on a baking sheet.
- Using a clean, empty soda or beer can, press into the center of a beef ball to form a crater, shaping the beef up around the sides of the can. Smooth out any cracks in the meat. Wrap 2 strips of bacon around the outside, using toothpicks to secure. Remove the can and fill the crater with 1 ounce of diced cheddar. 5. Repeat with the remaining burgers.
- Transfer the burger bowls to the grill over indirect heat and cook for 25-30 minutes for medium doneness, basting with more barbecue sauce every 10-15 minutes.
- While the burgers are cooking, pat the pineapple rounds dry with a paper towel. Spray lightly with nonstick spray. Add to the grill over direct heat and cook for 1-2 minutes per side, until grill marks appear.
- Toast the buns on the grill for 1-2 minutes, until golden brown.
- To assemble, place a piece of lettuce on a bottom bun and top with a burger and a grilled pineapple round. Finish with the top bun.
