GRILLED PORK AND PLUM SALAD

Grilled Pork and Plum Salad image

Provided by Food Network Kitchen

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 19

1 tablespoon Chinese five-spice powder
1 tablespoon packed light brown sugar
Pinch of cayenne pepper
1 large pork tenderloin (about 1 1/4 pounds)
Kosher salt and freshly ground black pepper
3 tablespoons rice vinegar
2 tablespoons honey
1 tablespoon low-sodium soy sauce
1 teaspoon dijon mustard
1 teaspoon grated peeled fresh ginger
1/4 cup plus 2 tablespoons vegetable oil
3 large plums, halved and pitted
1 bunch scallions, trimmed
1/2 small head napa cabbage, chopped (about 5 cups)
4 ounces snow peas, trimmed and chopped (about 1 cup)
1 cup shredded carrots (about 2 carrots)
1 cup bean sprouts, roughly chopped
1 cup chopped fresh mint
1/2 cup chopped roasted salted cashews

Steps:

  • Preheat a grill to medium high. Combine the five-spice powder, brown sugar and cayenne in a small bowl. Butterfly the pork: Slice lengthwise down the center, stopping about ½ inch before cutting all the way through. Open the pork like a book and flatten slightly with your hands. Lay a piece of plastic wrap on top and pound with the flat side of a meat mallet or a skillet until ½ inch thick. Season with salt and black pepper, then rub all over with the five-spice mixture; set aside. (This can be done up to 2 hours ahead; cover and refrigerate.)
  • Make the dressing: Whisk the vinegar, honey, soy sauce, mustard and ginger in a small bowl. Slowly whisk in 1/4 cup vegetable oil until smooth. Refrigerate until ready to serve.
  • Brush the pork with 1 tablespoon vegetable oil. Grill until well marked and just cooked through, about 6 minutes per side. Transfer to a cutting board and let rest at least 5 minutes.
  • Toss the plums and scallions with the remaining 1 tablespoon vegetable oil and season with salt and black pepper. Grill, turning, until lightly charred, about 3 minutes. Transfer to the cutting board.
  • Combine the cabbage, snow peas, carrots, bean sprouts, mint and cashews in a serving bowl. Chop the pork, plums and scallions and add to the bowl along with the dressing; season with salt and black pepper and toss.

QUICK GRILLED PORK WITH LEMON AVOCADO SALAD

Quick Grilled Pork with Lemon Avocado Salad image

This butterflied pork tenderloin is grilled to perfection and then topped with a quick and easy lemon avocado salsa. This dinner is ready in under 30 minutes and is full of flavor!

Provided by Andi Gleeson

Number Of Ingredients 6

Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
1 1/2 ripe avocados (peeled and diced)
1 cup halved or quartered grape tomatoes
1 tablespoon fresh lemon juice
3 green onions (sliced thin)
kosher salt and pepper to taste

Steps:

  • Preheat grill. Slice tenderloin down the middle lengthwise, leaving one long side connected so you can open it up like a butterfly. (Don't stress if you accidentally cut it all the way through. Just grill the two pieces!)
  • Spread a little vegetable oil over the hot grill using tongs with an oil-soaked paper towel. (Towel should not be dripping with oil or it can cause high flames.)
  • Place prepared tenderloin on the hot grill and cook about 5-7 minutes on each side, until the center has reached at least 150 degrees F. Remove cooked meat to cutting board.
  • Gently stir all salad ingredients together. Serve within an hour (before avocado starts to brown).

GRILLED MOJO PORK CHOPS AND AVOCADO SALAD

Grilled Mojo Pork Chops and Avocado Salad image

These bone-in pork chops are extra juicy thanks to a citrusy Cuban mojo marinade. It's typically made with sour oranges, but a combination of oranges and limes gives a similar sweet-and-sour tang. Avocados are the go-to side dish for Cuban meals, and this version of an avocado salad ties the orange and lime from the mojo into the dressing and adds sweet grilled pineapple!

Provided by Gabriela Rodiles

Categories     main-dish

Time 2h40m

Yield 4 servings

Number Of Ingredients 19

1/2 cup fresh orange juice (from about 2 to 3 oranges)
1/4 cup fresh lime juice (from about 2 to 3 limes)
1/4 medium yellow onion, cut in large chunks
6 garlic cloves
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
4 (1-inch-thick) bone-in pork chops (about 3 pounds)
4 spears of pineapple
1 tablespoon vegetable oil
1 orange, zest removed
Zest and juice of 1 lime
4 teaspoons white distilled vinegar
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
4 avocados, halved, pitted, peeled and diced
1/2 red onion, thinly sliced
2 tablespoons vegetable oil

Steps:

  • For the mojo and pork chops: Combine the orange juice, lime juice, onion, garlic, olive oil, oregano, cumin, 2 teaspoons kosher salt and a few grinds pepper in a blender. Blend until smooth and emulsified. Place the pork chops in a gallon-sized resealable plastic bag. Pour the mojo overtop. Refrigerate for at least 2 hours and up to 24 hours.
  • For the avocado salad: Preheat an outdoor grill for medium-high heat, or preheat a griddle or grill pan over medium-high heat until very hot, about 10 minutes. Brush the pineapple spears with the vegetable oil. Grill each side until dark char marks appear, 2 to 3 minutes. Transfer to a cutting board to cool, then dice.
  • Mix the orange zest, lime zest and juice, vinegar, olive oil, 1 1/2 teaspoons kosher salt and several cracks of freshly ground black pepper in a small bowl. Set aside.
  • Using a sharp knife (chef's or paring), slice both ends off the zested orange. Stand the orange on one end and cut away the peel and white pith, following the contour of the fruit. Carefully cut between the membranes to release the orange segments, letting them drop onto the cutting board. Dice the segments and squeeze remaining juice out of the core of the orange into the bowl with the dressing. Add the diced orange segments, diced grilled pineapple, avocado and red onion to a medium bowl. Pour in the dressing and mix to combine. Set aside.
  • When ready to grill the pork chops, remove them from marinade and pat completely dry with a paper towel. Pour the mojo remaining in the bag into a small saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer, stirring occasionally, until the mojo reduces by half and thickens, 8 to 10 minutes.
  • Brush the pork chops with 2 tablespoons vegetable oil and season each side with 1/4 teaspoon kosher salt and a few grinds of black pepper. Place the chops on the grill or grill pan the pineapple cooked on (preheat it again if necessary) and grill over medium-high heat until the pork releases from the pan, about 4 minutes. Flip and cook the other side until an instant-read thermometer inserted in the chops near but not touching bone registers 140 degrees F, 3 to 4 minutes. Let the chops rest for 5 minutes to allow the juices to redistribute.
  • Spoon one quarter of the mojo reduction onto a dinner plate. Top with a pork chop and then spoon avocado salad over the chop. Repeat with remaining pork chops.

GRILLED PORK AND PEACH SALAD

Grilled Pork and Peach Salad image

Summer is perfect for salads and grilling. Summer is also perfect for peaches, and this salad combines all three! Serve as a light entree with a crusty bread.

Provided by Bibi

Categories     Beef and Pork Salads

Time 38m

Yield 4

Number Of Ingredients 17

¾ cup extra-virgin olive oil
¼ cup good-quality balsamic vinegar
1 tablespoon Dijon mustard
2 teaspoons minced fresh ginger root
½ teaspoon minced garlic
¼ teaspoon cayenne pepper, or to taste
½ teaspoon salt, divided, or to taste
¼ teaspoon ground white pepper, or to taste
1 tablespoon vegetable oil, or more as needed
½ teaspoon smoked paprika
½ teaspoon granulated garlic
¼ teaspoon ground black pepper
1 pound pork tenderloin, cut crosswise into 1/2-inch thick slices
3 medium (blank)s fresh peaches - pitted, skinned, and sliced
1 bunch kale, stems removed and discarded
1 cup matchstick-cut carrots
1 cup fresh blueberries

Steps:

  • Combine olive oil, balsamic vinegar, Dijon mustard, minced ginger, minced garlic, cayenne, 1/4 teaspoon salt, and white pepper in a pint-sized jar with a lid. Place the lid on the jar and shake the ingredients until well blended. Taste and adjust seasoning, if desired. Place container in the refrigerator until ready to use.
  • Clean grates of an outdoor grill and preheat to medium-high, about 10 minutes, or as the manufacturer recommends.
  • When grill is ready, grease grates using tongs to hold a paper towel saturated with vegetable oil.
  • While the grill is heating, combine smoked paprika, granulated garlic, 1/4 teaspoon salt, and black pepper in a small bowl.
  • Sprinkle both sides of pork slices with dry spice mixture and allow to stand at room temperature until the grill is ready.
  • Place seasoned pork slices on the grill and do not touch for about 2 minutes. Using tongs, flip the slices and continue to grill until grill marks form and the pork reaches an internal temperature of 145 degrees F (62 degrees C), an additional 2 to 3 minutes. Remove from the grill and set aside.
  • Place peach slices across the grate and grill until grill marks form, 2 to 3 minutes per side. Add to the reserved grilled pork slices.
  • Make a bundle of kale leaves and slice across into 1/8-inch slices. Place sliced kale and carrots in a large mixing bowl. Add grilled pork slices and grilled peaches, and toss with desired amount of dressing (see note).
  • Arrange salad on plates, and sprinkle 1/4 cup blueberries on each plate.

GRILLED GARLIC SHRIMP

Grilled Garlic Shrimp image

These grilled shrimp receive a double dose of garlic flavor - fresh garlic and garlic salt. Try not to marinate longer than 30 minutes, as the acid from the lemon juice will start to break down the delicate shrimp meat and make it mushy. Extra large shrimp come 26 to 30 shrimp per pound.
