GRILLED PORK CHOPS WITH SAUTEED APPLES, ONION RINGS AND MUSTARD GREENS

Grilled Pork Chops with Sauteed Apples, Onion Rings and Mustard Greens image

Provided by Next Iron Chef All Star: Elizabeth Falkner

Categories     main-dish

Time 1h15m

Yield 3 servings

Number Of Ingredients 23

3 teaspoons salt
1 teaspoon fennel seeds
1 teaspoon black peppercorns
1 teaspoon pimenton
4 whole cloves
1 teaspoon light brown sugar
3 bone-in center-cut pork chops (10 to 12 ounces each)
Sauteed Apples:
2 tablespoons sugar
1 teaspoon lemon juice
1 Granny Smith apple, cored and sliced into 1/4-inch-thick slices
1 whole star anise
1 tablespoon unsalted butter
2 tablespoons brandy
Salt
2 cups canola oil, for frying
1/2 cup all-purpose flour
1/2 cup cornstarch
1/2 teaspoon salt, plus more as needed
A few grinds of black pepper
1/2 cup buttermilk
1 large yellow onion, sliced into 1/2-inch rings and separated
Mustard greens, for serving

Steps:

  • There are rubs and there are brines. A brine is a slower process where the rub, sugar and salt are diluted to penetrate the protein and break it down so that the meat is juicy, flavorful and tender after cooked. I love brined pork and chicken, but if I am cooking late and didn't think about it the day before, I will have to do a nice rub on the meat, which is just more concentrated and expedited, and that's what I have here. Pork chops go with so many accompaniments but I do love the acidity of apples or an applesauce with pork chops and the bite of mustard greens. You can use mizuna, or arugula if you cannot find mustard greens. Also, you can put a schmear of hot mustard mixed with a little honey or molasses on the plate instead for the kick. I like onion rings, in general. My other favorite accompaniment to pork chops is kimchee tossed with some fresh fruit such as peaches or plums.
  • To cook the pork chops: Grind all the spices together with the sugar and rub all over the pork chops. Set aside for 30 minutes to an hour at room temperature.
  • Preheat the grill on high or heat a cast-iron skillet over medium-high heat on the stovetop and preheat the oven to 375 degrees (Add 1 tablespoon olive oil to the pan if cooking in cast iron).
  • Cook the pork on one side for 4 to 5 minutes on the grill or in cast iron. Flip over and cook for another 4 to 5 minutes on the grill; if cooking in cast iron, flip the chop and transfer to the oven for 4 to 5 minutes. Set aside to rest for 5 minutes.
  • To cook the sauteed apples: In a medium saute pan over medium-high heat, combine the sugar, 1 tablespoon water and a drop of lemon juice. Cook until sugar caramelizes to golden brown. Turn off the heat and add the apple slices and star anise. Return the pan to medium-high heat, stir in the butter and remaining lemon juice. Saute, stirring, for 2 minutes, adding the brandy in the last minute of cooking with a pinch of salt. Simmer briefly to burn off the alcohol and thicken the caramel. Set aside.
  • To cook the onion rings: Bring the canola oil to 360 degrees F in a large pot. Combine the flour, cornstarch, salt and pepper in a bowl. Pour the buttermilk into a shallow dish or bowl. Dip the onion rings in the flour mixture to dredge, shaking off any excess. Dip in the buttermilk to coat, and then back into the flour mixture. Shake off any excess flour. Working in batches, fry the rings until light golden brown, 5 to 7 minutes. Drain on paper towels and sprinkle with salt.
  • Serve the pork chops with the sauteed apples, onion rings and mustard greens.

MOMMA PRITCHETT'S GRILLED PORK CHOPS AND APPLE-PEAR TOPPING

Momma Pritchett's Grilled Pork Chops and Apple-Pear Topping image

Well, I have yet to really eat good BBQ pork chops. I was tired of the three or four different baking methods and I decided to try something a bit different. If you are not into sweet, then this probably isn't the recipe for you. I would suggest squeezing a bit of lime juice over the meat in order to break up the sweetness. I have never paid attention to what type of pork chops I had either, I just grabbed and baked...but apparently it is all in the cut of the meat! I also froze a few heads of romaine lettuce for about an hour, divided it up into 8 portions, and added Parmesan cheese and dressing of choice.... MMMM!

Time 1h45m

Yield 8

Number Of Ingredients 15

1 cup light brown sugar
1 cup soy sauce
1 cup orange juice
½ cup spicy brown mustard
⅓ cup honey
2 tablespoons Worcestershire sauce
2 tablespoons ground black pepper
1 tablespoon ground cumin
8 pork chops, 1/2 to 1 inch thick
1 lime, juiced
½ cup butter
1 tablespoon light brown sugar, or to taste
2 tablespoons ground cinnamon
4 large green apples - peeled, cored, and cut into eighths
4 Bartlett pears - peeled, cored, and cut into eighths

Steps:

  • In a large bowl, mix together 1 cup brown sugar, soy sauce, orange juice, brown mustard, honey, Worcestershire sauce, black pepper, and cumin until thoroughly combined and the sugar has dissolved. Place the pork chops into the marinade, and spoon marinade to cover the chops. Let stand at room temperature for 45 minutes to 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the chops from the marinade, and discard marinade. Shake any excess drops of liquid from the chops, and grill until they are browned, no longer pink inside, and show good grill marks, about 8 minutes per side. Squeeze lime juice over the chops as they grill. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F (63 degrees C).
  • Melt butter in a large skillet over high heat, then stir in 1 tablespoon of brown sugar and cinnamon; bring the mixture to a boil, stirring to dissolve the sugar. Stir in the apple and pear slices, and cook, stirring often, until the fruit is coated with the butter mixture and softened but not mushy, about 5 minutes. Transfer the apple and pear slices to a grilling basket.
  • Grill the fruit on the outdoor grill until the slices are browned, about 5 more minutes. Serve grilled fruit with pork chops.

4 CLOVES GARLIC CRUSHED
6 (12-OUNCE) PORTERHOUSE PORK CHOPS
APPLE WALNUT SLAW
4 GRANNY SMITH APPLES-CORED AND JULIENNED
JUICE OF 1/2 LEMON
1 CUP RED GRAPES-HALVED
1/2 CUP WALNUT PIECES- TOASTED
3 GREEN ONIONS-FINELY CHOPPED
2 TBS. FLAT LEAF PARSLEY-FINELY CHOPPED
SALT AND PEPPER TO TASTE
1/2 CUP CREAMY BLUE CHEESE DRESSING
HOME-MADE COFFEE BBQ SAUCE
1 TBS UNSALTED BUTTER
1 TBS OIL
1 SMALL SWEET ONION-FINELY DICED
2 GARLIC CLOVES-PEELED
2 TBS. ANCHO CHILE POWDER
1 TBS. GROUND CUMIN
1 TBS. GROUND CORIANDER
1 TSP. SMOKED SWEET PAPRIKA
2 TBS. MUSTARD
1/2 CUP KETCHUP
1/2 CUP BROWN SUGAR
1 CUP BREWED COFFEE
1/2 CUP CHICKEN BROTH
1/2 CUP CIDER VINEGAR
2 TBS. WORCHESTERSHIRE SAUCE
KOSHER SALT AND COARSELY GROUND PEPPER

Steps:

  • To make the brine, in a large, deep pot, bring 4 cups of the water to a simmer and add the salt, bay leaves, coriander seeds, black pepper, thyme, and brown sugar. Whisk and simmer for about 1 minute, or until the salt has dissolved. Add the oranges, onion, garlic, and remaining 3 quarts water. Remove from the heat and cool the brine Add the pork chops to the brine and place a plate on top of the chops to keep them submerged. Place the pot in the refrigerator for 6 to 8 hours. While the chops are brining, make the Apple Walnut Slaw ( recipe follows). Remove the chops from the brine, scrape off any of the spices, and pat dry. Discard the brine and place the chops on a plate. Cover them with plastic wrap and refrigerate until you are ready to grill. Toss the apples with the fresh lemon juice so the apples don't turn brown. Mix all of the remaining ingredients together with the apples in a large mixing bowl, adjusting the seasonings to taste. Cover and keep refrigerated until ready to serve. Serve the pork chops with the Apple-Walnut Slaw. In a saucepan, melt butter in oil over medium heat. Add onion and garlic cloves and cook, stirring frequently, until softened, about 10 minutes. Add ancho powder, cumin, coriander and paprika and cook, stirring, for 1 minute. Add ketchup, mustard and brown sugar and cook, stirring, just until sugar is dissolved, about 2 minutes. Stir in coffee, broth, vinegar and Worchestershire sauce. Season with salt and pepper. Simmer over medium-low heat until onions are soft and liquid is reduced by half, approx. 20 minutes. Transfer sauce to a blender and process until smooth. Refrigerate. Prepare your gas or charcoal grill to medium-high heat, and coat the brined chops in the Coffee BBQ Sauce. Grill the pork chops on each side for 3 to 4 minutes, or until the internal temperature registers 170 degrees Fahrenheit. Make sure the chops aren't too close to the coals, as the BBQ sauce can cause a flame to flare. Transfer the pork chops to a plate and allow them to rest for at least 5 minutes. Serve warm.
